CHERRY COCONUT BARS
Cherry Coconut Bars are the perfect dessert bars with a buttery graham cracker crust, and coconut, vanilla, almond extract, and maraschino cherry topping.

Steps:
- Preheat oven to 325 degrees and spray a 9x13 baking dish with baking spray.
- To a large mixing bowl add the butter, graham cracker crumbs, and brown sugar.
- Stir until well combined, then add in the flour, baking powder, and salt until just combined.
- Press mixture into the bottom of the baking dish.
- To the mixing bowl add the coconut, condensed milk, vanilla, and almond extract and mix well.
- Chop the maraschino cherries and pat dry with paper towels.
- Mix gently into coconut topping and spread mixture over graham cracker crust.
- Bake for 30-40 minutes until slightly browned.
- Cool completely then refrigerate for at least 3 hours before serving.

- In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a lightly greased 13x9-in. baking pan. Bake at 350° for 10-12 minutes or until lightly browned. Cool on wire rack. , For filling, in a small bowl, combine the eggs, sugar and vanilla. Combine flour, baking powder and salt; add to the egg mixture and mix well. Stir in walnuts, cherries and coconut. Spread over crust. Bake for 20-25 minutes or until firm. Cool on a wire rack. Cut into bars.

- Preheat oven to 350F (325F for glass dish).
- Place butter in a 13 x 9-inch baking dish and place in oven. Let butter melt in oven while it's preheating.
- Sprinkle graham cracker crumbs over the melted butter.
- Drizzle sweetened condensed milk evenly over the crumbs.
- Sprinkle remaining ingredients on top, alternating (nuts, coconut, chocolate chips, cherries - repeat), making sure to distribute evenly.
- Press down firmly with fork.
- Bake 20-25 minutes or until lightly browned. Let cool completely before cutting into bars.
- Store in an airtight ontainer

- Line a 9x13-inch baking pan with a piece of parchment paper that is large enough to go up all sides of the pan.
- Combine oats, rice cereal, coconut, almonds, and cherries in a large mixing bowl and set aside.
- Combine honey, peanut butter, brown sugar, coconut oil, vanilla extract, and salt in a small saucepan. Heat over medium heat until brown sugar is melted; continue to simmer for 1 minute more. Pour heated mixture into the dry ingredients and stir to fully combine. Stir in chocolate chips.

- Bring the verjuice to a simmer in a small saucepan over medium heat. Remove from the heat and add the dried cherries. Cover and leave for 10-15 minutes to plump up. Stir in the honey and coconut oil, then return the pan to low heat and warm gently, stirring until smooth.
- Line a 25cm × 20cm baking tray with baking paper. Transfer cherry mixture to a food processor, add the coconut and blitz until it comes together in a ball. Transfer mixture to the prepared tray, pressing firmly to ensure it binds. Place in the freezer for 1-2 hours. When firm, remove from the freezer and cut into 12 bars, about 10 cm × 4 cm.
- Melt chocolate: bring a saucepan of water to the boil, then remove from the heat and set a heatproof bowl on top. Place the chocolate in the bowl and leave to stand, stirring occasionally, until melted. Brush the melted chocolate over the top of the bars, coating them evenly.

- Preheat oven to 375 degrees. Lightly splash a 15-by-10-inch rimmed baking sheet evenly with water, then line with parchment paper.
- In a large bowl, stir together cookie crumbs, sugar, and butter until combined. Evenly press onto bottom and up sides of prepared baking sheet. Bake, rotating halfway through, until firm, about 10 minutes. Transfer to a wire rack; cool, about 20 minutes.
- Sprinkle cooled crust evenly with pecans and chocolate. Pour condensed milk over the top, spreading to cover completely (do not let it drip over the edges). Sprinkle with coconut.

- Preheat oven to 350°. In a large bowl, beat sugar, eggs and vanilla until blended. Beat in melted butter.
