CHOCOLATE BANANA MUFFINS
I bake something almost every day-either in the morning before everyone's awake or in the evening. I whip up these tender muffins in no time and serve them with jam for breakfast or ice cream and chocolate syrup for dessert. -Stephanie Kienzle, North Miami Beach, Florida

Steps:
- Preheat oven to 350°. Cream butter and sugars. Beat in eggs, bananas and vanilla. In another bowl, combine flour and baking soda; add to creamed mixture just until combined. Stir in walnuts and chocolate chips. Fill greased or paper-lined muffin cups two-thirds full. , Bake until a toothpick comes out clean, 20-25 minutes. Cool 5 minutes before removing from pans to wire racks.

- Preheat oven to 350°. Whisk together the first 6 ingredients. In a separate bowl, whisk bananas, oil and egg until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips., Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm.

Steps:
- Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. In a separate bowl, whisk together banana, sugar, egg, butter, and milk. Stir wet ingredients into dry ingredients then stir in chocolate chips.
- Divide batter evenly between prepared cups, adding a scant 1/4 cup to each. Bake until tops spring back when lightly touched, about 20 minutes. Cool in pans 5 minutes, then remove to wire rack to cool completely.
CHOCOLATE CHIP AND WALNUT BANANA BREAD MUFFINS
These muffins are so moist and delicious there are never any leftovers. I am a person that does not like an overabundance of banana flavour so these were just right. You can also make this into a banana loaf as well. Adapted from a recipe I found on the Food Network.

Steps:
- Sift the flour, baking soda and salt into a bowl. Set aside.
- Whisk the eggs and the vanilla together. Set aside.
- Preheat oven to 350°F.
- Cream together the butter and sugar until light and fluffy (I use a Kitchen Aid stand mixer for this).
- Gradually pour the egg mixture into the butter while mixing until incorporated.
- Add the bananas and stir until incorporated.
- Mix in the flour mixture until just incorporated with a spatula.
- Pour in the walnuts and chocolate chips and gently fold into mixture.
- Place mixture in a paper-line muffin tray and bake for about 20 minutes or until a toothpick comes out clean. (All tray sizes and ovens are different so keep an eye on them).
BANANA BREAD MUFFINS
I had some over ripe Bananas & wanted to make Banana bread, but couldn't find my loaf pans. I modefied this Banana Bread recipe, & ended up with the most fantastic Banana Muffins! My Husband (who's very picky), & son (just as picky), went nuts over these. Very good. The best part, is not having to slice up a loaf. Just peal off the cupcake papers & eat!

- Preheat oven to 350°F.
- Line Cupcake tin with papers & spray with vanilla pam (pam for baking).
- In Large bowl, combine flour soda & salt.
- In a separate bowl, cream together Butter & Sugar.
- Stir in Eggs & mashed Bananas until well blended.
- Stir Banana mixture into flour mixture (I used an electric mixer on low).
- Fill muffin tins with generous amount of Banana batter (I fill almost to the top).
- Bake 20 min or untill toothpic comes out clean.

We updated banana bread by adding baking cocoa to Betty Crocker Banana Nut Premium muffin and quick bread mix. Bake in muffin cups and you have individual-size chocolaty banana bread-no need to share!

- Mine are usually done at 18 minutes, but my oven cooks quickly.
