UNSTUFFED PEPPER CASSEROLE
Unstuffed Pepper Casserole with lean ground beef, bell peppers, farro, and cheese--easy enough for a weeknight family dinner!

Steps:
- Preheat oven to 350. Spray 9x13-inch baking dish with cooking spray.
- Brown meat with peppers and garlic in a large skillet, then drain off excess grease. Return meat mixture to skillet and stir in tomato sauce, tomatoes, beef broth, seasoning, farro, and ½ cup of shredded ¾ cup shredded cheese.
- Spoon mixture into prepared dish and top with remaining cheese. Bake about 30 minutes.

- Heat oven to 350ºF.
- Brown meat with peppers and onions in large skillet; drain. Stir in rice, salsa and 1/2 cup cheese.
- Spoon into 2-qt. casserole sprayed with cooking spray; top with remaining cheese.
- Bake 25 min. or until heated through.

MEXICAN UNSTUFFED BELL PEPPERS
This is easily made vegetarian or vegan by substituting Morningstar Farms Veggie Crumbles for the beef & using soy cheese. Feel free to edit the spices to your own taste. Sometimes a dash of red pepper is nice. ;) I made this up & Mom wants it on paper for her Cardiac Rehab Cookbook & Wilderness Advanced Life Support course menu. Her ya go, Mom!!

Steps:
- Preheat oven to 350°F.
- Saute onion & garlic in oil over medium heat until softened.
- Boil rice in salted water until just soft. Drain.
- Halve peppers & remove seeds. Place in 9x13" baking dish, insides up.
- In a large bowl, combine well the cooked ground beef (or defrosted soy crumbles), sauteed onions & garlic, cooked rice, rinsed & drained black beans, undrained can of diced tomatoes, oregano, salt, cumin, pepper & jalapenos, if using.
- Pour 'filling' mixture over peppers, top with cheese & bake until hot & bubbly, about 30 minutes.
- Enjoy!

UNSTUFFED GREEN PEPPER CASSEROLE
Found this on About.com under Southern foods. I changed the peppers from being stuffed to lining the casserole dish. Sort of a Lazy Stuffed Peppers. I changed the recipe from stuffed pappers to unstuffed. I love the filling for stuffed peppers and the taste the peppers give the filling but not too keen on chomping on the peppers themselves.

- NOTE:.
- You can use any combo of the following to suit your tastes = sauce, paste and diced(undrained) tomatoes,.
- Cut tops off peppers; remove seeds and membranes, and cut each pepper into 4 to 8 pieces.
- Cook peppers in simmering water to cover for 5 minutes.
- Brown ground beef and onions; pour off excess grease.
- Add seasonings, rice, and corn(if used) and tomato sauce.
- Heat until hot and bubbly.
- Lay the pepper pieces across the bottom of the casserole dish and pile filling on top.
- Place cut off tops on top of filling.
- Add strips of raw bacon on top of that and pour tomato(combo) sauce over.
- Bake stuffed peppers at 350° for 30 minutes.

- Core green peppers.
- Immerse in boiling water for 3 minutes.
- Chop into bite size pieces.
- Fry ground beef and onion.
- Drain.
- Stir in all ingredients except peppers and cheese.
- Return to boiling.
- Simmer 15 minutes.
- Add cooked pepper pieces and cheese.
- Place in a casserole dish sprayed with Pam.
- Cover and bake at 375 degreees for 20 minutes.
