3/4 pound shrimp, peeled, deveined, and coarsely chopped
1/2 teaspoon kosher salt
1 tbsp fish sauce
1/2 tbsp Tapioca starch or corn starch
2 tbsps canola oil
1 tbsp Lard
1 garlic clove, minced
1 pound Chinese chives, cut into 1-inch pieces
1 cup diced, peeled, cooked water chestnut
1/2 cup dried shrimp
1/2 cup chopped green onions white and light green parts only
1/2 teaspoon ground white pepper
2 cups wheat starch
1 cup Tapioca starch
1 1/2 tbsps potato starch
1/2 tbsp sugar
3/4 teaspoon kosher salt
1/2 tbsp canola oil
2 cups boiling water
1/4 cup Sriracha sauce
1/4 cup light soy sauce
1 tbsp canola oil

Steps:

  • For the filling: In a large bowl, combine fresh shrimp, salt, fish sauce, tapioca starch. Set aside. Stir-fry the chives in half of the oil and half of the lard with garlic and water chestnuts until the chives are soft. Place chives on the center of a large piece of cheesecloth, wrap up the cloth, and squeeze the mixture until there is no liquid. Set aside.
  • In a small bowl soak the dried shrimp in warm water to cover for about 20 minutes. Drain, discard the liquid, and coarsely chop the shrimp. In a skillet or sauté pan over medium-high heat, warm the canola oil and remaining lard until shimmering. Add the dried shrimp and stir until the shrimp turns brown. Remove and set aside. In the same skillet add the fresh shrimp, pepper and green onions and saute until cooked through, 2-3 minutes. Remove from heat and combine shrimp-both fresh and dried-and chives.
  • For the dough: In the bowl of a stand mixer fitted with a paddle attachment, combine the starches, bread flour, sugar, salt, and oil. Mix on high speed, slowly adding the hot water until a sticky dough forms, about 5 minutes. Turn the dough out onto your work surface and divide into 10 pieces. Using a small rolling pin, roll out the ball into circles about 1/8 inch thick and 4-5 inches in diameter. Holding the dough in your palm, add about 2-3 tablespoons of the filling in the middle of each circle and pinch the ends together. Lightly pat down to flatten the cake. Repeat with the remaining dough and filling.
  • Set up a steamer and steam the chive cakes until the dough is translucent, about 7-10 minutes.
  • Remove the dumplings from the steamer and set aside to cool. Just before serving, coat the bottom of the skillet with oil and pan fry the chive cakes until browned on both sides.
  • Serve with both hot Sriracha and soy sauce for dipping.

1 lb yukon gold potatoes, unpeeled
1 head garlic, separated into cloves, unpeeled
2 Tbsp butter
3/4 c grated parmesan cheese
1 egg
3/4 c chopped chives
2 Tbsp vegetable oil for frying
salt & pepper to taste

Steps:

  • 1. Add potatoes & garlic to cold water.
  • 2. Bring to a boil, reduce heat to medium & simmer for 20-30 minutes or until tender.
  • 3. Drain well. Skin potatoes and coarsely grate. Slip garlic out of its skin.
  • 4. Discard skin and fold garlic into potatoes along with butter, cheese, egg and chives.
  • 5. Form mixture into 4 cakes about 1 inch thick. Heat oil in non-stick skillet.
  • 6. Fry cakes about 3 minutes a side or until crust forms and are heated through.

Sour Cream and Chive Potato Pancakes image

Yummy pancakes which can be served for breakfast, brunch, as a snack or as a side-dish. Although the recipe specifies sebago potatoes, you can also use russet burbank or spunta potatoes. All of these are potatoes that are varieties which are good for baking. This recipe has been adapted from a recipe in the Australian Women's Weekly's 'Potatoes: over 100 exciting ways to cook the humble spud', recently reprinted by popular demand. It is essential to squeeze as much moisture as possible from the potatoes in step one before adding the potatoes to the other ingredients. Please feel free to vary the herbs according to your taste preferences.

Number Of Ingredients 13

900 g sebago potatoes, peeled (just under 32oz)
1 medium brown onions (150g) or 1 yellow onion, finely chopped (just under 5oz)
2 -3 garlic cloves, finely chopped
1/4 cup fresh chives, finely chopped
1 teaspoon dried rosemary, to taste
1 teaspoon dried sage, to taste
sea salt, to taste
fresh ground pepper, to taste
2 eggs, separated
2 tablespoons plain flour
1/2 cup sour cream, low fat is fine (120g)
2/3 cup vegetable oil (160ml)
80 g butter (just under 3oz)

Steps:

  • Grate the potatoes coarsely; squeeze the excess moisture from the potatoes; combine the potato in a large bowl with the onion, garlic, chives, rosemary, sage, salt and pepper to taste, egg yolks flour and sour cream.
  • Beat the egg whites in a small bowl with an electric mixer until firm peaks o the potato mixture.
  • Heat 2 tablespoons of the oil with 20g of the butter in a non-stick pan; cook heaped tablespoons of the potato mixture, uncovered, until browned on both sides; drain the pancakes on absorbent kitchen paper and cover to keep warm; repeat with the same amounts of the remaining oil, butter and potato mixture.
  • Notes: One Australian measuring cup holds approximately 250ml (8 fluid ounces), one Australian tablespoon holds 20ml and one Australian teaspoon holds 5ml. North America, New Zealand and the United Kingdom use a 15ml tablespoon. In this recipe, the addition of the rosemary and sage is really best guided by taste. I never measure herbs.

two 1/2-pound russet (baking) potatoes
6 large shallots, sliced (about 1 cup)
2 garlic cloves, sliced
1 cup fine dry bread crumbs
a 3 1/2-ounce log of soft mild goat cheese such as Montrachet, at room temperature
1/4 cup minced fresh chives or scallion greens
1/2 stick (1/4 cup) unsalted butter

Steps:

  • In a saucepan combine the potatoes, peeled and cut into 1-inch pieces, the shallots, and the garlic with enough cold water to cover the mixture by 1 inch and simmer the mixture for 10 to 15 minutes, or until the potatoes are tender. Drain the potato mixture, return it to the pan, and steam it over moderate heat, shaking the pan, for 30 seconds, or until any excess liquid is evaporated. Force the potato mixture through a ricer or the medium disk of a food mill into a bowl and stir in 1/2 cup of the bread crumbs, the goat cheese, the chives or scallions, and salt and pepper to taste. Form 1/2-cup measures of the mixture into four 3/4-inch-thick cakes, transferring the potato cakes as they are formed to a plate covered with the remaining 1/2 cup bread crumbs, and coat the potato cakes with the crumbs.
  • In a large heavy skillet heat the butter over moderately high heat until the foam subsides and in it sauté the potato cakes, turning them once, for 5 minutes on each side, or until they are crusty and golden brown.

CRISP POTATO CAKES SMOKED SALMON AND CHIVES



Crisp Potato Cakes Smoked Salmon and Chives image

6 large baked potatoes
2 bunches of chives
2 tablespoons of sour cream
2 tablespoons of olive oil
12 slices of smoked salmon
13 eggs
2 ounces of milk
2 ounces of butter
Olive oil for sauteeing

Steps:

  • Once potatoes have cooled, remove skin. With a box grater, grate potatoes into a mixing bowl. Add olive oil, sour cream and one bunch of chives minced. Finish with one egg, mix very well. Season with salt and pepper. Form by hand 4 large potato cakes. In a medium saute pan, heat olive oil approximately 2 ounces at a time to a slight smoke. Fry 2 potato cakes at a time. Lower heat and allow to crisp approximately 3 minutes per side. Once both sides are crisp and all 4 cakes are made, drain on a paper towel and reserve in a warm place. Crack twelve eggs and wisk with a fork. Add 2 ounces milk. Season with salt and pepper. In the same teflon pan add 2 ounces of butter and over medium heat slowly stir in cracked eggs and begin to scramble.
  • Once eggs are finished fold in a julienne of smoked salmon and a handful of minced chives. For presentation place one warm potato cake in the middle of each plate. Then carefully spoon scrambled egg mixture on top and garnish with chives

6 tablespoons unsalted butter
1/2 cup thinly sliced fresh chives
Salt and pepper

Steps:

  • Place potatoes in a large pot, cover with salted water by at least 3 inches and bring to a boil. Cover and cook potatoes until fork tender, about 30 minutes.
  • Drain potatoes. Return pot to stove over medium-high heat and add butter. When butter foams, add drained potatoes and stir to coat. Smash each potato just to break the skin and cook until golden brown. Stir in chives, season with salt and freshly ground black pepper and serve.

2 lbs yukon gold potatoes, peeled
salt
4 ounces goat cheese, crumbled (such as Montrachet)
3 tablespoons snipped fresh chives
2 tablespoons butter, melted (or margarine)
2 tablespoons sour cream
3/4 teaspoon salt
1/4 teaspoon fresh ground pepper
6 teaspoons olive oil, divided

Steps:

  • Line a 9-inch square pan with plastic wrap, allowing a 6-inch overhang of wrap over two sides of the pan.
  • Bring potatoes, 1 tablespoon salt and cold water to a boil in stockpot. Cook potatoes 30 to 35 minutes, until tender; drain.
  • Coarsely mash half the potatoes in a bowl. Dice the other half and add to the mashed potatoes.
  • Fold in cheese, chives, butter, sour cream, salt and pepper. Spread potato mixture into pan; fold overhang of plastic wrap to cover top.
  • Refrigerate 3 hours, until firm.
  • Unmold chilled potatoes onto a cutting board; peel off plastic wrap. Spray a 2 1/2-inch oval or round cookie cutter with vegetable cooking spray. Cut out 8 ovals of potato mixture. Press scraps together to form a 3/4-inch thick disk; cut out 4 more ovals. Repeat, making a total of 16 cakes.
  • Heat 2 teaspoons oil in 12-inch nonstick skillet over medium-high heat. Cook one third of the potato cakes, 3 minutes per side, until deep golden. Repeat process 2 more times; cool. Transfer cakes to a jelly-roll pan. (Can be made ahead. Wrap jelly-roll pan and refrigerate up to 24 hours).
  • Heat oven to 375 degrees F. Bake potatoes (unwrapped if refrigerated overnight) 18 to 20 minutes, until heated through.
  • NOTE: Prep time does not include chilling.
  • Makes 16 potato cakes.

1 cup uncooked Arborio rice
1/2 cup Greek yogurt
2 extra-large eggs
3 tablespoons minced fresh chives
1 1/2 cups grated Italian fontina cheese (5 ounces)
1/2 teaspoon freshly ground black pepper
3/4 cup panko (Japanese dried bread flakes)
Good olive oil

Steps:

  • Bring a large (4-quart) pot of water to a boil over medium-low heat and add 1/2 tablespoon salt and the Arborio rice. Cook, stirring occasionally, for 20 minutes. The grains of rice will be quite soft. Drain the rice in a sieve and run under cold water until cool. Drain well.
  • Meanwhile, whisk together the yogurt, eggs, chives, fontina, 1 1/4 teaspoons of salt, and the pepper in a medium bowl. Add the cooled rice and mix well. Cover with plastic wrap and refrigerate for 2 hours or overnight, until firm.
  • When ready to cook, preheat the oven to 250 degrees F.
  • Spread the panko in a shallow dish. Heat 3 tablespoons of olive oil in a large skillet over medium-low heat. Form balls of the rice mixture using a standard (2 1/4-inch) ice-cream scoop or a large spoon. Pat the balls into patties 3 inches in diameter and 3/4-inch thick. Place 4 to 6 patties in the panko, turning once to coat. Place the patties in the hot oil and cook, turning once, for about 3 minutes on each side until the risotto cakes are crisp and nicely browned. Place on a sheet pan lined with parchment paper and keep warm in the oven for up to 30 minutes. Continue cooking in batches, adding oil as necessary, until all the cakes are fried. Arrange on a serving platter and serve hot.

This has been adapted from a British cookbook called "Favourite Harvest Recipes - Traditional Seasonal Fare" and is slightly different to other potato cake recipes in that it includes baking powder. I have since added the garlic, spring onions and cheese to the original recipe to pep it up a notch, so here is the original recipe with my additions added in :) ZWT REGION: England.

1 lb potato, peeled (450g)
1 ounce butter (30g)
1/2 teaspoon salt
1 egg
4 ounces self raising flour (115g)
1 teaspoon baking powder
4 ounces cheese, grated (115g)
1 -2 whole garlic clove
1 small onion
2 spring onions, finely chopped (finely chopped) or 2 tablespoons chives (finely chopped)

Steps:

  • Boil the potatoes until half cooked then add the onion and garlic into the pot. Mash together once potatoes are fully cooked.
  • Stir in the rest of the ingredients to make a soft dough. It should not be sticky.
  • Roll out onto a floured board until it is 1/2 inch thick (1.25 cm) and cut into round or triangle shapes. Cook 5-7 minutes on each side in a heavy based fry pan until golden brown. Serve immediately with plenty of butter.

3 pounds Yukon Gold potatoes
1 cup diced onion
8 tablespoons butter, softened, divided
1 teaspoon salt

¼ cup fresh chives, chopped
¾ cup bread crumbs
1 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F. Peel potatoes (if desired) and place in large sauce pot and cover with cold water by 1 inch. Bring to a boil and reduce to simmer, cooking for 30-35 minutes or until potatoes are tender-soft.
  • Meanwhile, in skillet over medium-high heat, melt 2 tablespoons butter and cook onion for 10-12 minutes or until soft and translucent. Drain potatoes thoroughly and place in large bowl with remaining butter, salt and pepper. With mixer or potato masher, blend potatoes and butter until mixed while retaining a slightly chunky texture. Fold in cooked onion, eggs, ham and chives.
  • Line baking sheet with parchment or lightly grease. In ring mold or biscuit cutter, sprinkle bottom interior with bread crumbs and fill mold with potato mixture until top is slightly rounded, topping again with bread crumbs. Remove ring and repeat with remaining potato mixture, spacing cakes about 1 inch apart. Bake for 20-30 minutes or until tops are golden brown and beginning to crisp. Top with Parmesan cheese and serve hot.

  • Put the potatoes in a saucepan and cover with cold water. Bring to a boil and add a generous pinch of salt. Cook until just fork tender. Drain.
  • Mash the potatoes, skins and all, until they are roughly broken up. Drizzle in 1 tablespoon of the olive oil and a grate or two of nutmeg if using. Mash the oil into the potatoes until they come together. Add a teaspoon more oil if the potatoes look dry. Fold in the chives with a spatula until well blended.
  • Heat a cast iron or non-stick skillet over a medium high heat. When hot, brush with the remaining olive oil (about 2 teaspoons). Add a little of the potato. If it sizzles the oil is hot enough to cook the cake.
  • Tip all the mash into the skillet and form into a rough flat round. Pull the edges away from the side of the pan. Turn the heat down to medium and cook for about 5-8 minutes. Turn with a metal spatula and brown the other side. If it breaks, it doesn’t matter. Just form the potato back into a cake. Cook another 8-10 minutes. Loosen the sides and turn onto a plate. Serve.
