This is a meal that my mother used to make a lot for us kids when we were growing up. You can find the dried beef in the grocery store with the pre-packaged lunch meats. It goes a long way on a cold day!

Steps:
- Melt butter in a medium saucepan. Blend in flour, salt and pepper. Stir in milk. cook over medium heat until mixture boils and thickens, stirring constantly. Reduce the heat.
- Tear beef into shreds and add to cream sauce. Heat through.
- Serve over toast.

- Melt butter in a cast-iron skillet over medium heat until bubbling. Stir in flour, and then add whole milk, whisking until flour is completely incorporated. Stir constantly until the sauce has thickened.
- Add pepper and strips of dried beef to sauce mixture, stirring until pepper is incorporated and beef is evenly coated. Spoon over Texas toast or biscuit halves; serve warm and top with additional ground pepper, if desired.
CHOPPED STEAK, MUSHROOM SAUCE

- Preheat the oven to 400 degrees F.
- In a bowl, blend the ground beef, onions, garlic, salt and pepper and mix well.
- Next, by hand, portion the meat into 8 to 9 round patties, ensuring they are not more than 1/4-inch tall. Next, heat a large saucepan with the oil over medium-high heat. Add the seasoned patties, allowing to cook on each side until browned, 3 to 4 minutes. After browning both sides, finish in the oven for 4 to 5 minutes for medium-well. Remove from the oven.
- After baking, remove the patties from the pan and hold on the counter; this will allow the meat to rest. Then, return the pan to medium-high heat for 2 minutes. After the pan is hot again, carefully add the brandy and allow the liquor to cook off. Then add the stock, mushrooms, herbs and nutmeg and cook for 3 to 4 minutes, allowing the sauce to reduce to 1 cup volume. After reducing the sauce, remove the pan from the heat and whisk in the butter to finish the sauce. Serve with the chopped steak.

Steps:
- Cut the dried beef into thin strips.
- Place strips in a small bowl and cover with warm water.
- Soak the strips for 30 minutes, drain, discard the water.
- Place a skillet over Medium heat on your stove top.
- Add butter, let melt.
- Add the flour, stirring it in quickly until combined with butter.
- Add the milk, stirring quickly until fully combined and it starts to thicken.
- Add the Worcestershire sauce if desired.
- Add the black pepper.
- Add the strips of dried beef, stir until fully coated.
- Let simmer for about 2 minutes.
- Spoon over toast or biscuits.
- Enjoy!

- In a large skillet, heat 2 tablespoons butter and oil over medium-high heat; cook steaks to desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°), 5-6 minutes per side. EASIEST CREAMED CHIPPED BEEF
A great alternative to traditional SOS. Lower in fat too! This is a recipie my mother used back in the 1960's using cream of mushroom soup instead of white sauce.

- You may want to rinse the beef in cold water to reduce saltiness and dry in a paper towel.
- Shred the beef into small pieces and cook over medium heat for 3 minutes in butter.
- Add mushroom soup, milk and white pepper.
- Simmer for 3-4 minutes and serve over toast.
GRILLED PEPPERED BEEF TENDERLOIN WITH A MOREL MUSHROOM CABERNET SAUCE AND WHIPPED YUKON GOLD POTATOES

- For the beef: Roll the fillet in salt and pepper. Massage meat with olive oil. Grill to desired degree of doneness.
- For the mushroom sauce: In a skillet with oil, saute mushrooms until tender. Add garlic and allow to brown lightly. Deglaze skillet with cabernet and reduce by 3/4. Add veal stock and reduce by half. Add thyme and finish with butter. Season with salt and pepper. Keep warm until ready to serve.
- For the potatoes: Place potatoes in a stockpot with lukewarm water to cover, and bring to a boil. Reduce to a simmer and skim the foam off the top. Cook until tender.
- In a saucepot, heat cream and butter while potatoes are cooking. Drain water from potatoes and put through a sieve, add butter and cream, and season with salt and pepper. Whip vigorously. Serve fillets with mushroom sauce and whipped potatoes.

- Preheat oven to 425 degrees F (220 degrees C). Remove and chop mushroom stems.
- In a saucepan over medium heat, combine ground beef, onion, and garlic. Cook until beef is no longer pink; drain. Mix in chopped mushroom stems, 1 tablespoon butter, bread crumbs, salt, and pepper. Cook, stirring frequently, for 5 minutes. Remove from heat, and stir in cream.

- Saute onions gently in melted butter till golden, then add mushrooms and cook till tender.
- Soak dried beef, rinse and cut into strips.
- Add to sauteed vegetables, stirring frequently. Add flour and milk and cook util thickened.
- Stir in sherry and serve over toast tips, English muffins, or as I do over homemade buttermilk biscuits. Serve hot with sweet or dill pickles. If you find that your chipped beef is too thick or not thick enough, you will need to adjust the amount of milk or add more flour. Enjoy!

Combine soup with milk and stir until smooth and thoroughly blended. Stir soup mixture and Worcestershire into beef. Season with pepper. Simmer for 10 minutes, stirring occasionally. Sprinkle with toasted almonds. Serve on toast.
