- Line baking sheet with waxed paper. Mix sugar and cinnamon in medium bowl. Toss 1/4 of apple slices with cinnamon-sugar mixture to coat. Heat 1 tablespoon oil with 1 teaspoon chipotle chilies in heavy medium skillet over medium-high heat. Add coated apple slices. Cook until coating caramelizes and apple slices are heated through, turning often, about 4 minutes. Transfer apple slices to prepared sheet. Using paper towels, wipe skillet clean. Repeat with remaining apple slices, cinnamon-sugar mixture, oil and chipotle chilies in batches, wiping skillet clean between each batch. Serve warm or at room temperature. .
ROAST PORK LOIN WITH APPLES

- Preheat the oven to 400 degrees F.
- In a large ovenproof skillet heat the vegetable oil over high heat. Season the pork loin all over generously with salt and pepper. Sear the meat until golden brown on all sides, about 2 to 3 minutes per side. Transfer the meat to a plate and set it aside.
- Add the onion, carrot, celery, garlic, herb sprigs, and 2 tablespoons of the butter to the skillet. Stir until the vegetables are browned, about 8 minutes. Stir in the sliced apples, then push the mixture to the sides and set the pork loin in the middle of the skillet along with any collected juices on the plate. Transfer the skillet to the oven and roast the loin until an instant-read thermometer inserted into the center of the meat registers 140 to 150 degrees F, about 30 to 35 minutes. (See Cook's Note.)
- Transfer the pork a cutting board and cover it loosely with foil while you make the sauce. Arrange the apples and vegetables on a serving platter and set aside. Remove and discard the herb sprigs. Return the skillet to a high heat and add the vinegar scraping the bottom with a wooden spoon to loosen up any browned bits. Reduce by half then add the cider and reduce by about half again. Pull the skillet from the heat and whisk in the mustard, and the remaining 2 tablespoons of cold butter. Adjust the seasoning with salt and pepper, to taste.
- Remove the strings from the roast and slice into 1/2-inch thick pieces and arrange over the apple mixture. Drizzle some sauce over meat and serve the rest on the side.
- Cook's Note: Pork cooked this way will be slightly pink. If desired, cook the pork to 160 degrees F, but be aware that this lean cut will not be as moist at the higher temperature.

ROAST PORK WITH PORT JUS AND CHIPOTLE-GLAZED APPLES

- Mix first 4 ingredients and 1/2 cup brown sugar in small bowl. Rub spice mixture over pork. Place in large glass baking dish. Cover and refrigerate overnight.
- Preheat oven to 375°F. Transfer pork to large roasting pan. Reserve juices in glass dish. Roast pork until thermometer inserted into center registers 155°F., about 1 hour 45 minutes, basting with reserved juices from glass dish every 30 minutes.
- Meanwhile, combine Port, shallots and remaining 1 tablespoon brown sugar in heavy medium saucepan. Boil until syrupy, about 25 minutes. Add both stocks and thyme. Boil until reduced to 1 1/4 cups, about 30 minutes. Strain sauce. Return to saucepan. Mix any pan drippings from pork into sauce (do not scrape roasting pan). Add butter; whisk until melted. Season with salt and pepper.
- Cut pork into 1/4-inch-thick slices. Divide among 6 plates. Spoon Chipotle-glazed Apples alongside, dividing equally. Spoon sauce over and around pork.
ROAST PORK WITH CHIPOTLE-GLAZED APPLES
I did my best to pattern this recipe after a delicious dish that I had at a hotel in Puerto Vallarta, Mexico. The chef was very secretive but the waiter was more than willing to whisper a lot of tips in my ear! (It was he that got the big tip!) I always brine pork (all cuts) before I prepare it but that is a personal choice. If you want to brine, there is a good basic brine recipe on this site. If you brine, start this recipe 2 days before serving. The process to brine and marinade only takes a few minutes each, so this is not as time consumming as it may seem. Remember to rinse the pork well after taking it out of the brine.

- Brine pork. Rinse. (optional).
- MARINADE:.
- Mix first 4 ingredients and 1/2 cup of brown sugar in a small bowl.

- Pre-heat oven to 375 degrees. Transfer roast to roasting pan. Reserve juices in the glass dish.
- Roast the pork until the internal temp reaches 155 degrees; about 1 hour and 45 minutes. Baste with pan juices every 30 minutes. Don't overcook.
- Let pork rest at least 10 minutes before slicing.
- Meanwhile: Make the CHIPOTLE-GLAZED APPLES.
- Line baking sheet with waxed paper.
- Mix sugar and cinnamon in med. bowl.
- Mix 1/4 apple slices with cinnamon-sugar mixture to coat.
- Heat 1 T. oil with 1 T. chipotle chilies in a heavy skillet over med-high heat.

- Transfer to baking sheet and repeat with remaining apples using 1 T. oil and 1 T. chipotles in remaining batches.

- Now for the PORT JUS:.
- Combine Port, shallots and remaining 1 T. brown sugar in a heavy saucepan.
- Boil until syrupy, about 25 minutes.
- Add both stocks and thyme.
- Boil until reduced to 1 1/4 cups, about 30- 45 minutes.
- Strain sauce in fine-mesh strainer.
- Return to saucepan.
- Mix any pan drippings from the pork roast into the sauce (don't scrape the bottom of the roasting pan).
- Add butter, whisk until melted.
- Season with salt and pepper.
- SERVING THE PLATE:.
- Cut pork into 1/4" slices.
- Divide among 6 plates.
- Spoon Chipotle-Apples alongside the pork.
- Spoon sauce over and around pork slices.

MAPLE-CHIPOTLE PORK CHOPS

- Bring the chicken broth, vinegar, maple syrup, chipotles in adobo, chili powder, tomato sauce, garlic, a generous pinch of salt and a few grinds of pepper to a simmer in a medium saucepan over medium heat. Reduce heat to medium-low and gently simmer until thick, stirring occasionally, about 25 minutes. Reserve 1/2 cup of the sauce for serving.
- While the sauce simmers, adjust an oven rack about 4-inches below the heat source and preheat the broiler to high.
- Put a broiler pan or foil-lined baking sheet under the broiler to preheat for 5 minutes. Sprinkle the pork chops with salt and pepper, put on the preheated pan and brush with the some of the sauce. Broil the chops, brushing with more sauce, 2 to 3 more times, until cooked through and slightly charred, about 8 minutes (do not flip). Serve the pork chops with potato salad or mashed potatoes, wilted spinach and the extra sauce on the side.
SPICE RUBBED PORK TENDERLOIN WITH BOURBON-CHIPOTLE SAUCE
Steps:
- Preheat the oven to 400 degrees F.
- Combine the paprika, sugar, salt, cumin, mustard powder, black pepper and cayenne pepper in a bowl.
- Heat a large cast-iron pan over medium-high heat, and lightly coat with canola oil. Dredge the pork tenderloin in the rub, tapping off any excess, before searing on all sides, about 3 minutes per side. Place the pan into the oven and cook to medium doneness, 8 to 10 minutes. Promptly remove from the oven and let rest at least 15 minutes.
- Serve with the Bourbon-Chipotle Sauce.
- Heat the olive oil in a medium saucepan over medium-high heat. Cook the onions until soft, and then pour in 2 cups of the bourbon and cook until reduced to a few tablespoons. Stir in the chicken stock, apple juice, brown sugar, peppercorns and chipotle, and cook until reduced by half.
- Strain through a fine mesh strainer, and then return to the pan and cook until it becomes the consistency of a sauce. Add the remaining 2 tablespoons bourbon and cook 2 minutes. Season with salt.

- Place pork roast in baking dish.
- In a separate bowl, assemble the remaining ingredients, stir well.
- Pour marinade over roast, cover and place in the refrigerator for at least 1 hour.
- In a preheated oven, cook at 500 degrees for 10 minutes, then reduce heat to 300 degrees.

- THE NIGHT BEFORE -- OR A FEW DAYS AHEAD --
- Mix kosher salt with dry rub (if your dry rub already has salt in it, omit this step).
- Rub roast generously on all sides with rub mixture.
- Tightly wrap seasoned roast in plastic wrap and refrigerate overnight or for 24-48 hours.
- The morning that you plan to cook --
- Let roast stand at room temperature for about 20 minutes.
- COOKING THE ROAST.
- Use apple wood chips or Adler wood chips that have been soaked in water for approx 20 minutes to provide a good smoke for the roast.
- Smoke on indirect heat for approx one hour.
- Remove roast from grill/smoker and wrap in double wrap in foil fat side up and place in dish or roasting pan at least 3 inches deep.
- Continue cooking roast in a 225-240 degree oven for 7 to 9 hours or until bone pulls out with ease.
- Open the foil and drain most but not all of the juice.
- Remove the top layer of fat from the roast.
- Using large forks, break the roast apart (similar to shredding).
- Pour chipotle sauce over roast and work sauce into meat ( be sure to leave a nice layer of sauce on top).
- Increase oven to 300 degrees.
- Keeping foil rolled back, return glazed roast to oven and allow roast to caramelize -- 30-45 minutes.
- Remove roast from oven and serve.
