3 lbs salmon fillets
1 tablespoon olive oil
2 teaspoons Chinese five spice powder
1 tablespoon brown sugar
1 teaspoon lime zest
1/2 lime, juice of
1/2 teaspoon garlic powder
1 teaspoon crushed red pepper flakes (optional)
salt and pepper
1 tablespoon sesame oil
2 cups sliced shiitake mushrooms
2 teaspoons peeled grated fresh gingerroot
4 cups sliced bok choy, steamed

Steps:

  • Preheat oven to 375 degrees. Coat fillets with olive oil and place skin-side down in large baking dish. Sprinkle fillets with five-spice powder, sugar, lime peel, lime juice, garlic powder, red pepper flakes, and salt and pepper.
  • Bake, uncovered, 15 minutes or until fish flakes easily with a fork.
  • Meanwhile, heat sesame oil in large nonstick skillet. Add mushrooms and ginger; cook and stir until mushrooms are soft. Stir in bok choy and cook until heated through. Serve salmon over mushroom-bok choy mixture.

DH and I really enjoyed this different way of preparing salmon. From Keiko O Aoki's "Easy and Healthy Japanese Food for the American Kitchen." It should be noted that DH and I skinned the salmon filets and it turned out great, but I am posting the recipe as it appears in the book. Also, make sure to use low sodium soy sauce. Even with this, I found the dish to be a little salty and might skip the teaspoon of salt next time to see how it turns out.

4 salmon fillets, with skin
fresh cilantro, for garnish
1/4 cup flour
1 teaspoon salt
2 tablespoons vegetable oil
2 tablespoons soy sauce
1 1/2 tablespoons rice vinegar
1 1/2 teaspoons sugar
1 1/2 teaspoons sesame oil
2 sprigs green onions, finely chopped
1 inch fresh ginger, finely minced
1 garlic clove, finely minced

Steps:

  • In a bowl, mix all the sauce ingredients.
  • Cut salmon into bite-size pieces and sprinkle with 1 tsp salt and let sit for 5 minutes. Remove any excess moisture from the fish by patting with paper towels. Lightly coat the fish with flour, shaking off excess flour.
  • Heat vegetable oil in a frying pan. Over medium heat, fry both sides of the fish for 2-3 mins on each side until the salmon skin becomes crispy.
  • Pour off excess oil from frying pan. Add the sauce and fold the sauce over until the fish is evenly coated.
  • Serve, garnishing with cilantro.

Gravlax, or Scandinavian-style cold-cured salmon, is easy to make with this recipe. It's delicious on crackers or with cream cheese on a bagel.

2 salmon fillets (2 to 3 pounds each, skin on)
1/4 cup aquavit (or vodka)
1/3 cup fine sea salt
1/3 cup sugar
1 tablespoon black pepper
Optional: 1/4 cup chopped dill

Steps:

  • Gather the ingredients.
  • Rinse the salmon fillets and pat them dry thoroughly.
  • Use tweezers or pliers to pull out any pin bones, if necessary.
  • Drizzle the aquavit or vodka evenly over the flesh of each fillet.
  • In a small bowl, combine the salt, sugar, and pepper.
  • Divide the mixture into 3 even piles within the bowl.
  • Divide one of the thirds of curing mix in half and place on a rimmed baking sheet or baking pan in the shape of one of the fillets.
  • Lay a fillet skin-side down on the mixture. Spread a third of the curing mixture on the flesh of that fillet.
  • Spread the remaining third of the curing mixture on the flesh side of the other fillet. Sprinkle the dill, if using, over both fillets.
  • Lay the second fillet flesh to flesh on the first fillet. Sprinkle the remaining curing mixture over the skin of the top fillet.
  • Cover the fillets and baking sheet or pan with foil or plastic wrap. Place a cutting board or second baking sheet on top of the covered fish and top it with something heavy (cans, pots, or pans) to weigh the fish down. Place it all in the fridge and let chill for about 12 hours or overnight.
  • Remove from the fridge, unwrap, and discard the accumulated liquid in the pan. Turn over the fillets so the bottom one is on top.
  • Cover the pan, weigh down the fish again, and return to the refrigerator. Let chill another 12 hours.
  • The fish is now cured and ready to serve, but it will continue to benefit from another 12 to 24 hours of being weighed down and chilled, so feel free to repeat these steps a second time around.
  • When ready to eat, pat dry, and thinly slice the gravlax against the grain using a very sharp knife.
  • Serve and enjoy.

3 -3 1/2 lbs fresh side salmon (skin left on, bones removed with tweezers or needle-nosed pliers)
2 1/2 tablespoons sugar
2 1/2 tablespoons roasted szechwan salt and pepper
1 dash black pepper
1/4 cup fresh ginger, very finely julienned
1/2 cup fresh cilantro, coarsely chopped (leaves and stems)

Steps:

  • Place the salmon fillet, skin side down, on a rimmed baking sheet(if aluminum, line with plastic wrap) or large flat platter.
  • Combine the sugar, pepper-salt, and black pepper, and sprinkle evenly over the fish.
  • Scatter the ginger julienne and cilantro evenly on top.
  • Cover with plastic wrap.
  • Place another baking sheet over the salmon. weight it down with a 3-5 pound weight.
  • Refrigerate for at least 24 hours, or for better flavor, up to 3 days.
  • Every 8-10 hours, drain off any liquid that collects in the bottom of the pan.
  • To serve, discard the ginger and cilantro.
  • Slice the gravlax very thinly on the diagonal with a long and thin bladed sharp knife.

DANISH GRAVLAKS (LOX) CURED SALMON

This is traditionally part of any Danish Smorgaasbord., Also wonderful for any recipe calling for Lox - appetizers etc. The wine and cognac cures the raw salmon. This cannot be compared to smoked salmon the process is very different nor do I recommend grilling it. It is ready after curing sliced very thinly. It is wonderfull on a bagel with cream cheese, chopped sweet onion , capers and served with scrambled eggs.

1 1/2 lbs filet red salmon, boned, skin on
1/4 cup sugar
1/4 cup coarse salt
1 teaspoon cracked white pepper
8 sprigs dill (enough to lightly cover the filet)
1/4 cup cognac
1/4 cup dry white wine

Steps:

  • Combine the sugar, salt sprinkle on to the flesh side of the salmon.
  • Cover loosely with fresh dill sprigs, press spices and dill into salmon.
  • In a glass or ceramic shallow dish, just large enough to hold the salmon mix the cognac& wine.
  • Place the salmon skin side up into the dish.
  • Cover the dish loosely with plastic wrap and place a board the size to the salmon on top, weight it with apprx a 2-3 lb weight, tighten the plastic wrap Place in fridge and allow to marinate for 3-4 days.
  • Transfer salmon to a cutting board and cut the salmon horizontally into thin slices.

GRAVLAX (SWEDISH SUGAR AND SALT CURED SALMON)

2 lbs center cut salmon fillets (approximately 1 pound each, with skin left on)
2/3 cup sugar
1/3 cup coarse salt
15 coarsely crushed white peppercorns
1 bunch dill
mustard dill sauce (Mustard Dill Sauce II)

Steps:

  • Remove any small bones from the fillets with a pair of tweezers or needle-nosed pliers.
  • Mix the sugar, salt and pepper in a bowl.
  • Cover the bottom of a baking dish with 1/3 the dill and rub half of the sugar-salt mixture into the first fillet, on both sides, and lay it skin side down on top of the dill.
  • Cover with 1/3 of dill.
  • Prepare the other salmon fillet in the same way, and cover with the remaining fillet, skin side up, with the remaining dill on top.
  • Cover in plastic wrap, place a cutting board with some heavy weights on top and marinate in the refrigerator for 24 hours.
  • Remove from plastic wrap and discard accumulated juices.
  • Rewrap and refrigerate another 24- 48 hours.
  • Scrape off the marinade and slice paper thin.
  • Serve with Mustard Dill Sauce (Recipe #68168).

3 cups water
1/2 lb salmon fillet, bones removed, rinsed, drained, patted dry, and cut into 2 (4-ounce)
1 1/2 inches length gingerroot, very thinly sliced
2 tablespoons chinese rice wine (Shao Hsing) or 2 tablespoons mirin (Shao Hsing)
2 tablespoons Thai fish sauce (nam pla)
2 tablespoons peanut oil (2-3)
1 garlic clove
2 green onions, top 2 inches removed, remaining portion julienned
2 sprigs cilantro, for garnish

Steps:

  • To steam in a wok, cross two chopsticks in an X, then cut a groove in the lower chopstick so that the top one fits snugly.
  • Set the chopsticks in the wok and add water to 1 inch below the level of the chopsticks.
  • Place lid on wok and turn heat to high.
  • Place the salmon, skin side down, on a glass pie plate or rimmed glass plate slightly smaller than the diameter of the wok.
  • Cover with ginger slices.
  • Pour rice wine and fish sauce over fish.
  • When the water is boiling, remove the lid from the wok and position the plate containing the salmon and seasonings on top of the chopsticks.
  • Replace the lid and cook 7 to 8 minutes, or until the salmon just turns opaque and begins to flake.
  • Two to three minutes before the salmon is done steaming, heat the peanut oil in a small skillet over high heat.
  • When the oil is very hot, add the garlic and cook until browned.
  • Discard the garlic, but do not turn off the heat until you use the oil; it must be very hot to sear the fish properly.
  • When the salmon is cooked, transfer to a warm plate.
  • Place green onion strips on top of the fish and immediately pour hot oil over the fish and onions.
  • Garnish with cilantro sprigs and serve immediately.
  • Serves 2 as an entree, 4 as an appetizer.

1 teaspoon oil
4 (6-ounce) salmon fillets, cut about 1 inch wide, blotted on paper towels
Salt and freshly ground black pepper
4 tablespoons Chinese barbecue sauce
6 slices lean bacon, cut crosswise in half
Thinly sliced scallions, including most of green part, to garnish

Steps:

  • 1. Turn on the broiler. Position the rack about 4 inches from the heat.
  • 2. Heat the oil in a large non-stick, oven-proof skillet over medium-high heat. Add the salmon, flesh-side down, and sauté until lightly browned, about 1 minute. Turn, season the fish with salt and pepper to taste, spread the barbecue sauce over the flesh side, and drape three half-slices of bacon diagonally over the top of each fillet.
  • 3. Transfer the fish to the broiler and cook until the bacon is crisp and the salmon is just cooked through, about 10 minutes for 1-inch-thick salmon fillets. Remove, sprinkle with scallions, and serve.

A quick way to liven up salmon fillets, with stir-fried veg and the classic trio of garlic, chilli and ginger

4 skinless salmon fillets , 150g/4oz each
3 tbsp oyster sauce
2 tbsp teriyaki sauce
1 tbsp honey
1 tbsp oil (a mix of vegetable and sesame)
1 tbsp finely grated fresh root ginger
1 garlic clove , finely sliced
1 red chilli , deseeded amd finely sliced
500g mixed green vegetables - we used bok choi, sugar snaps and broccoli

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Place the salmon on a baking tray. Mix together the oyster sauce, teriyaki and honey, then brush a little over the fish. Roast for 8-10 mins until glazed and just cooked through. Set aside.
  • Heat the oil in a wok, then fry the ginger, garlic and chilli for 1 min. Stir-fry the broccoli or any larger, harder veg for 3 mins, then add the leafy veg and cook for 1-2 mins more. Stir in the rest of the sticky sauce, heat through and serve with the fish.

I've developed this recipe to be used with my bamboo steamer. Use your favorite oriental sauce or try my favorite bottled sauce, Iron Chef's Orange- Ginger Sauce. Or try the sauce used in Recipe #376279 Since my steamer has two baskets, I cook the fish in the bottom basket, and veggies in the top. Serve over rice; makes for a great one pot dinner! Time indicated does not include marinading time! NOTE: Cooking Sherry or Gin can be substituted for the rice wine.

3 tablespoons soy sauce
3 tablespoons chinese rice wine

  • Combine the marinade ingredients in a shallow nonmetalic baking dish or ziplock bag,.
  • Add the salmon strips and turn gently to coat.
  • Refrigerate for a minimum of 30 minutes or up to 6 hours, turning often.

  • Remove salmon from marinade and place in a casserole dish that will fit inside your bamboo steamer. (I use a disposible aluminum cake pan that has been slightly modified to allow steam to filter around the sides.).
  • Generously brush salmon with your favorite oriental sauce; sprinkle grated ginger on top.
  • Cover with bamboo lid and place over boiling water to steam.
  • Steam for 10-12 minutes; or until fish flakes with a fork.
  • Serve over rice with lemon/lime wedge.

  • Place a frying pan (we used a cast-iron skillet), over medium-high heat. Spread two tablespoons of oil evenly in the pan. Place the salmon in the pan skin-side down. Cook the salmon on each side for 4-7 minutes, depending on the thickness of the piece. These somewhat thicker fillets took closer to 7 minutes on each side. Don’t fuss with the salmon while it cooks.
  • As a little cheat, look at the side of your filet. There should be no appearance of rawness in the middle. As the cooked salmon converges in the center of the cross-section of your filet as you sear each side, you’ll be able to get a decent sense of when your salmon is cooked.
  • While the salmon is cooking, in a small bowl, mix together the water, soy sauce, sugar, sesame oil, and salt. Set aside.
  • Transfer the cooked filets to a plate. In the same pan you seared the salmon in, add 2 tablespoons of oil, and lightly fry the ginger until crisp. Add the scallions and cook until wilted, followed by the prepared soy sauce mixture. Bring the sauce to a boil, and turn off the heat.
