ENGLISH ROAST CHICKEN

1 (5 to 6 pound) free-range chicken (including neck and giblets, for gravy)
1 tablespoon butter
1/2 lemon sliced
Stuffing, recipe follows
6 slices streaky smoked bacon
Salt and freshly ground pepper
2 tablespoons sunflower oil
1 medium onion peeled
Chicken neck and giblets
1 bay leaf
1 small onion
1 carrot, cut into pieces
8 peppercorns
2 tablespoons all-purpose flour
Splash white wine, if desired
Roast Potatoes, recipe follows
Serving suggestion: gravy, stuffing and roast potatoes
1 -ounce butter
1 small onion finely chopped
1 tablespoon fresh sage finely chopped
1 small bunch parsley, leaves finely chopped
2 ounces fresh bread crumbs
1 egg, beaten
1/2 lemon, juiced
Lemon rind, grated
Salt and freshly ground black pepper
12 potatoes, peeled
Flour, for coating
2 tablespoons sunflower oil, for roasting

Steps:

  • Position an oven rack in the middle of the oven and preheat to 425 degrees F.
  • To prepare the chicken, lift the skin gently with a knife and insert some small pieces of butter and slices of lemon under the breast.
  • Make a ball of the stuffing and place in the cavity. Tie the chicken together with a string. Lay 6 pieces of streaky smoked bacon over the chicken. Season with salt and freshly ground pepper. Rub salt and butter into the skin. Heat oil in roasting pan and put the chicken and the onion into it. Cook for 1 hour and 30 minutes. Baste the chicken thoroughly every 20 minutes. After 1 hour and 10 minutes remove the crispy bacon slices and place them on a dish for serving. Return the chicken to the oven for another 20 minutes.
  • While the Chicken is cooking, start the gravy:
  • To make stock, combine the giblets with a bay leaf and an onion in a saucepan. Cover with water and bring to a boil. Add carrot and peppercorns. When the chicken is cooked, transfer it to a plate and keep warm. Put the roasting tin on heat and drain off fat with a spoon. Add 2 tablespoons of flour to the juice. Keep stirring. When the juice is brown add the stock. Sieve the gravy to remove any lumps. Add a splash of white wine if desired.
  • In a medium saucepan melt the butter and sweat the onions until translucent. Combine the chopped herbs, breadcrumbs, beaten egg, lemon juice and zest in a medium-mixing bowl. Add onions and mix thoroughly.
  • Preheat oven to 425 degrees F.
  • Parboil the potatoes. Coat them in flour. Put in a roasting tin with very hot sunflower oil. Roast for 30 minutes.

Kosher salt
Freshly ground black pepper
1 large bunch fresh thyme, plus 20 sprigs
1 lemon, halved
1 head garlic, cut in half crosswise
2 tablespoons (1/4 stick) butter, melted
1 large yellow onion, thickly sliced
4 carrots cut into 2-inch chunks
1 bulb of fennel, tops removed, and cut into wedges
Olive oil

Steps:

  • Preheat the oven to 425 degrees F.
  • Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pin feathers and pat the outside dry. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.
  • Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.

150ml stock

  • Heat oven to 190C/170C fan/gas 5. Put all the ingredients into a large, wide ovenproof dish. Mix everything together with your hands and season.
  • Bake for 45 mins, stirring the onions after 20 mins, until the chicken is golden and the onions tender. Serve with rice.

This is a recipe I got from a very small "mom and pop" restaurant in a small town in Spain when I was stationed there in the USAF. It was near Madrid and the owner was so gracious and friendly that everyone loved going there. For those who have been there and are wondering, it is from Kiko's.

1 whole chicken, cut up
3 tablespoons olive oil
1 (8 ounce) can tomato sauce
1/3 cup red wine vinegar
1/3 cup medium sherry (spanish if you can find it)
1/2 onion, cut in chunks
5 cloves garlic, crushed
1 tablespoon dried parsley
6 bay leaves
1/8 cup butter

Steps:

  • Cover the bottom of a 10 X 18 X 2 1/2 inch oval clay cooking pan (or a comparable glass or ceramic pan) with the olive oil.
  • Place cut up chicken in pan skin side up.
  • Place a bay leaf and chunk of onion under each piece.
  • Dot chicken with butter pieces.
  • Mix together tomato sauce, wine vinegar, sherry and crushed garlic.
  • Pour mixture over chicken and sprinkle parsley on chicken.
  • Bake uncovered at 250 degrees for 4 t0 5 hours.
  • Baste frequently.

¼ cup butter, softened
4 cloves garlic, chopped
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh rosemary
1 lemon, zested and halved
1 teaspoon salt, divided
1 teaspoon ground black pepper, divided
1 whole chicken
1 tablespoon olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix butter, garlic, thyme, rosemary, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper together in a bowl.
  • Loosen skin on chicken breast; rub butter mixture between skin and breast meat. Press on the skin to distribute evenly. Rub oil, remaining 1/2 teaspoon salt, and 1/2 teaspoon pepper all over; place lemon halves inside cavity. Set in a baking pan.
  • Roast in the preheated oven, basting after 30 minutes, until chicken is no longer pink, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Let rest before carving, about 15 minutes.

1 bunch thyme
1 lemon, quartered
1 head garlic, halved
2 tablespoons melted butter

Steps:

  • Preheat oven to 425 degrees.
  • After removing giblets (discard or save for another recipe), salt and pepper inside of chicken.
  • Stuff the cavity with thyme, lemon quarters and garlic halves.
  • Brush the outside of the chicken with melted butter.
  • Salt and pepper outside of chicken.
  • Tie the legs together with string (good idea to soak string in water prior so it won't burn in the oven) and tuck the wings under the body.
  • Cook in oven for 1 1/2 hours or until done.

6 medium onions, cut in half
1/4 cup butter or 1/4 cup margarine, melted
1 large onion, minced

  • Prepare Oat Stuffing: Melt butter in med.

1 (3 lb) broiler-fryer chickens
12 small whole shallots (can substitute 2 sliced large onions)
2 1/2 lbs russet potatoes
2 tablespoons unsalted butter
2 cups chicken stock, made from the boiled giblets
salt and pepper, to taste
3 tablespoons chopped parsley (to garnish) (optional)

Steps:

  • Cut chicken into serving pieces.
  • Slice potatoes in medium thick rounds.
  • Melt 1 heaped tablespoons.
  • of butter in a skillet or saucepan.
  • Brown chicken joints lightly on both sides and then remove them.
  • Grease an ovenproof casserole dish and put in layers as follows: sliced potatoes, whole shallots or sliced onions (all well-seasoned), chicken.
  • Dot each layer with little knobs of butter.
  • Repeat layers until all ingredients are used, ending with a layer of potatoes.
  • Pour stock over the potatoes, shallots and chicken.
  • Cover with buttered greaseproof paper, then with lid.
  • Cook in oven at 275F/135C for about 2½ hours.
  • Add a little hot stock or water after about an hour or so, if liquid dries up too much.
  • Sprinkle generously with chopped parsley 5 minutes before serving.
