FRIED CHICKEN WINGS, CHINESE TAKEOUT-STYLE

Fried Chicken Wings, Chinese Takeout-Style image

Chinese take-out fried chicken wings are the same as regular old fried chicken, right? Wrong. This fried chicken wings recipe is a special family recipe.

Provided by Bill

Categories     Chinese takeout

Time 2h20m

Number Of Ingredients 13

10 whole chicken wings ((washed and pat dry))
1/8 teaspoon black pepper
1/4 teaspoon white pepper
1/4 teaspoon garlic powder
1 1/2 teaspoons salt
1/2 teaspoon sugar
1 tablespoon soy sauce
1 tablespoon Shaoxing wine
1 teaspoon sesame oil
1 egg
1 tablespoon cornstarch
2 tablespoons all purpose flour
oil ((for frying))

Steps:

  • Combine chicken wings, black pepper, white pepper, garlic powder, salt, sugar, soy sauce, Shaoxing wine, sesame oil and egg in a large mixing bowl. Mix everything until the wings are well-coated. Next, add the cornstarch and all purpose flour and mix again until the wings are coated.
  • Let the wings marinate for 2 hours at room temperature or in the refrigerator overnight for best results. (If you refrigerate the wings, be sure to let them come to room temperature again before cooking).
  • After marinating, if it looks like there is liquid in the bowl, be sure to mix them thoroughly again. The wings should be well coated with a thin batter-like coating. If it still looks too watery, add a bit more cornstarch and flour.
  • Fill a medium pot about 2/3 of the way up with oil, and heat it to 325 degrees F.
  • Fry the wings in small batches for 5 minutes and remove to a sheet pan lined with paper towels. After all of the wings are fried, return them in batches to the oil and fry again for 3 minutes.
  • Drain on paper towels or a cooling rack, and serve with hot sauce!

CHINESE STYLE DEEP FRIED CHICKEN WINGS

Chinese Style Deep Fried Chicken Wings image

These Chinese style deep fried chicken wings use a special ingredient called "fermented bean curd" to enhanced it's flavor. Fermented bean curd is also known as "tofu cheese". I know a lot of Western people are scared about tofu so tofu cheese probably sounds horrendous but for a lot of Eastern people it's like a delight from heaven.

Provided by Timothy H.

Categories     Chicken

Time 40m

Yield 2-3 serving(s)

Number Of Ingredients 11

15 chicken wings
1/2 cup light soy sauce
2 chunks tofu cheese
1/2 teaspoon sesame oil
1 tablespoon rice wine
1 spring onion, chop finely
2 garlic cloves, chop finely
2 pieces ginger, chop finely
1 teaspoon salt
1 tablespoon sugar
some black pepper

Steps:

  • Mix all the marination ingredients in a big bowl evenly and add the chicken wings. Use your hand to gently massage the chicken wings with the marination to ensure the marinade covers the chicken wings evenly. If you have any excess marination on the chicken be sure to gently brush this off with your hand.
  • Marinade the chicken wings for 1 hour at least.
  • Heat up the oil to around 180 degrees. Deep fry the chicken wings until they have turned a light golden brown color.

SPICY FRIED CHICKEN WINGS: CHINESE TAKEOUT STYLE

Spicy Fried Chicken Wings: Chinese Takeout Style image

If you like takeout-style fried chicken wings and spicy fried chicken sounds even more appealing, then you'll love these Chinese takeout style Spicy Fried Chicken Wings!

Provided by Bill

Categories     Chicken and Poultry

Time 8h35m

Number Of Ingredients 13

10 whole chicken wings ((rinsed and pat dry with paper towel))
½ teaspoon paprika
1½ tablespoons dried red chili flakes
1 teaspoon ground white pepper
1 teaspoon freshly ground Sichuan peppercorns
1½ teaspoons ground cumin
1¼ teaspoons salt
¼ teaspoon sugar
1 tablespoon Shaoxing wine
1 small egg white ((beaten))
1 tablespoon cornstarch
2 tablespoons flour
4 to 6 cups oil ((for frying))

Steps:

  • Put your chicken wings in a large bowl. In a small bowl, combine the paprika, 1 1/2 tablespoons of dried red chili flakes, white pepper, ground Sichuan peppercorns, cumin, salt, and sugar and mix thoroughly.
  • To the chicken wings, add half of the spice mixture and the Shaoxing wine, and mix thoroughly with your hands until the chicken wings are evenly coated. Cover, and let the wings marinate in the refrigerator overnight (a full 24 hours is even better).
  • After the wings have finished marinating, take them out of the refrigerator, and let them come up to room temperature. There may be some liquid at the bottom of the bowl, which is fine. Add the beaten egg white, cornstarch, and flour to the wings, and mix well with a spatula. The wings should be very lightly coated with a thin batter.
  • In a deep pot, heat your frying oil to 325F. There should be enough oil so that the wings can be submerged. Fry the wings in small batches for 5 minutes each, and transfer to a sheet pan lined with paper towels.
  • After all of the wings are fried, return them to the oil in batches fry a second time for 2 minutes each batch--until they turn golden brown and crispy. Transfer the wings to a stainless steel bowl and sprinkle in the remaining spice mixture. Toss the wings until they are well coated!
  • If you like, per standard practice with fried food, feel free to add more salt to taste before serving!

Fried Chinese Five-Spice Chicken Wings image

Categories     Chicken     Appetizer     Braise     Fry     Marinate     Cocktail Party     Super Bowl     Poker/Game Night     Party     Gourmet

Yield Serves 6 as an hors d'oeuvre or 4 as a main course

Number Of Ingredients 11

3 pounds chicken wings (12 to 14)
1 onion
a 1 1/2-inch piece peeled fresh gingerroot
2 tablespoons soy sauce (preferably Kikkoman)
1‚ tablespoons medium-dry Sherry
1 tablespoon Chinese five-spice powder
1 tablespoon sugar
2 tablespoons plus 1 teaspoon coarse salt
2 teaspoons freshly ground black pepper, or to taste
1/2 cup cornstarch
6 cups vegetable oil

Steps:

  • Cut off wing tips, reserving for another use, and halve wings at joint. Coarsely chop onion and finely chop gingerroot. In a large sealable plastic bag combine onion, gingerroot, soy sauce, Sherry, five-spice powder, sugar, and 1 teaspoon salt. Add wings and seal bag, pressing out excess air. Turn bag until wings are completely coated. Marinate chicken wings in bag in a large bowl, chilled, turning bag once, 2 hours.
  • Preheat oven to 350°F.
  • Transfer wings and marinade to a roasting pan or large shallow baking pan and bake, covered with foil, in middle of oven 1 hour. Cool wings until they can be handled and drain in a colander, discarding marinade. Wings may be prepared up to this point 1 day ahead and chilled, covered.
  • Reduce temperature to 250°F.
  • In a small serving bowl combine remaining 2 tablespoons salt and pepper. Put cornstarch in a small bowl and dredge each wing, knocking off excess cornstarch and transferring to a shallow pan. In a 5- to 6-quart heavy kettle heat oil until a deep-fat thermometer registers 370°F. Working in batches of 6 or 7, fry wings in oil until golden brown, about 3 minutes, and with a slotted spoon transfer to paper towels to drain. Keep wings warm on a baking sheet in oven. Fry remaining wings in same manner, returning oil to 370°F. between batches.
  • Serve wings with salt and pepper mixture.

  • Kung Pao Chicken. One of Szechuan's most famous dishes, Kung Pao chicken with peppers, garlic and peanuts is a real delight. Very few steps are required for this dish: cube chicken breast, marinate, and deep-fry.
  • General Tso's Chicken. This North American-Chinese dish is a variation, some say, of an authentic Hunan dish. There are many theories about the origin of the dish but what remains clear is how famous it is amongst Americans.
  • Spring Rolls. Spring rolls come with many fillings and in plenty of varieties. Our recipe gives you the steps to make shrimp and pork rolls, but you can choose to make it with just one of the two proteins.
  • Egg Rolls. The American take on spring rolls, eggs rolls are stuffed with pork and vegetables and served with a variety of sauces, like oyster sauce, duck sauce, sweet and sour sauce, or hot mustard.
  • Crab Rangoon. Crab rangoon, or crab puffs, are yet another Chinese-American creation that has been a party favorite for decades. Make the stuffing with cream cheese and crab meat.
  • Sesame Chicken. Make this popular restaurant dish and drop the greasy takeout. When correctly made this chicken is crunchy and moist. Marinate your chicken breast and deep-fry it.
  • Sweet and Sour Pork. A favorite of Cantonese cuisine both in China and North America, sweet and sour pork uses ketchup, vinegar, and sugar as the base of the sauce.
  • Ginger Beef. Ginger beef is a take out classic that you can enjoy without the added preservatives and fake flavors. Juicy beef is thinly sliced and marinated, then deep-fried until cooked and crispy.
  • Lobster Cantonese. This special Cantonese dish takes lobster tails to the next level, thanks to a savory black bean sauce and ground pork. Spices, vegetables, and a splash of sherry blend this beautiful dish together.
  • Fried Wonton. These little crunchy morsels of pork and seasonings are another favorite appetizer. Dark mushrooms, pork, and vegetables make a flavorful filling.
