Chinese Red Spinach Amaranth Stir Fry image

Simple and easy Chinese red spinach amaranth greens (yin choy) stir fry with garlic is a classic Chinese vegetable dish. This Chinese red spinach recipe takes around 10 minutes! 1.5 pounds Chinese red spinach amaranth (Yin Choy)
6 cloves Garlic
1 tablespoon Vegetable oil
4 cups Water
1/4 teaspoon Salt ((Add salt to your taste))

Steps:

  • Peel and wash 6 cloves of garlic. Then, pour 1 tablespoon of vegetable oil into a pot. Put the garlic and stir fry until it turns golden brown.
  • After that, put the washed yin choy red Chinese spinach into the pot. Pour 4 cups of water. Then, cover the lid for 2-3 minutes.
  • Next, open the lid and flip the yin choy on the other side and cover another 2-3 minutes. Or until it's soft. Then, add ¼ teaspoon of salt and stir it well. (Remember to add salt to your taste.)

6 cups fresh spinach, stems removed (about 8 oz)
2 teaspoons soy sauce
1 teaspoon rice vinegar
1/4 teaspoon sugar
1 teaspoon sesame seeds, toasted

Steps:

  • Heat oil in a wok or large skillet over medium high heat. Add garlic and cook 1 minutes. Add spinach, soy sauce, vinegar and sugar; stir fry 2 minutes until spinach begins to wilt.
  • Sprinkle with sesame seeds and serve.
