SWEET AND SOUR PORK RECIPE

- If the recipe in advance is desired to prepare, I suggest cooking the sauce, and start the first cooking pork fritters. Then at the last second, finish with the second frying and pour sauce to coat everything! Start by cutting the roast pork into pieces of a size suitable for bites. Pour the clear soy sauce, Chinese wine, powder 5 spice, baking soda and cornstarch. Let cool at least one hour.
- Pour all the sauce ingredients except the cornstarch and water.
- Add vegetables, peppers, onions and pineapple. Put on low heat for ten minutes just to cook the onion and peppers. So you can cook a little more or a little less.
- Add to the end of these 10 minutes, the cornflour and 50g of water if the sauce thickens too much.
- Cook one minute and stop the fire.
- Prepare the batter for pork. Combine flour, cornstarch, egg white.
- Add hot water gradually to obtain a smooth paste. Too dry or too wet. Pour this batter over pork.
- Heat oil in a wok or saucepan. When the oil is hot, add the pork pieces one by one. Do not put too much pork pan simultaneously. Cook two or three times!
- Turn pieces of browned on all sides. Set aside each time on a paper towel while the other pieces cook. Once everything is cooked, allow the oil to warm up a little and then add all at once. We will fry again to make the extra-crispy pork !! Yum!
- Drain the oil from the wok into another container (an empty pan) and put the fried pork pieces into the wok, pour over donuts sweet and sour sauce.
- Cook just to warm up the sauce. Serve immediately with rice.

- Bring stock to a simmer.
- Add soy sauce, pork, mushrooms and chile paste. Simmer for 10 minute.
- Add pepper, vinegar, bamboo shoots, water chestnuts, fungus and tofu.
- Simmer 5 minute.
- Mix cornstarch with 2 tablespoons water and add.
- Bring back to simmer and pour the eggs in a very thin stream over the surface. Let stand for 10 sec. before stirring in the sesame oil.
- Serve with a garnish of chopped scallions.
- NOTE: The pepper, chile paste and vinegar can be varied for taste. I also omit the pork and use less egg.

I found a basic chinese soup recipe on the internet and made a couple of modifications. The soup came out great, so I decided to post this one.

Steps:
- Rub five spice powder on pork and salt liberally.
- Fry the pork and ginger in a wok with a little oil till cooked through.
- Transfer pork onto a cutting board and slice into thin strips.
- Add 6 cups of water to the wok and bring to a boil. The wok does not need to be rinsed out unless you used too much oil.
- Add granuled chicken flavoring, mushrooms and carrots. Boil till the vegetables are cooked.
- Turn heat off. Add pork strips and sesame oil to taste. Lime juice can be added, too, if you want the soup to be a little sour.
- Serve into individual bowls with cilantro.

- Prepare the Ingredients: Soak 1 small piece of chenpi in cold water for 20 minutes. Wash the dried dates with cold running water. Prepare the rest of the ingredients as listed.
- Pressure Cook Bone Soup: Place 4 pieces (1045g) of parboiled pork bones, 700g chopped carrots, 525g chopped corn on cob, 1 (5g) thin slice of ginger, 2 (33g) dried dates, 1 small piece of chenpi, and 6 ½ cups of cold water in the pressure cooker. Do not add any salt. Close the pressure cooker’s lid and pressure cook at High Pressure for 30 minutes + 15 minutes Natural Release. Turn off the heat. After 15 minutes, carefully turn the venting knob from sealing position to venting position to release the remaining pressure.
- Seasoning: Carefully open the lid and heat up the pressure cooker to bring the soup back to a full boil. Let the soup boil for an extra 15 - 20 minutes. Add salt to taste. (Make sure to add in the salt slowly and keep tasting. Do not over season. For reference: We added roughly 1 ½ teaspoon of fine table salt.)

- Soak the pork bones in cold water for an hour. Rinse thoroughly and drain. The soaking process helps to get rid of any impurities or blood, to keep the soup clear.
- In a large stock pot, add the pork bones, and fill with enough cold water to fully submerge the pork bones. Turn up the heat and bring to a boil. Next, turn off the heat, dump everything into a colander, and rinse the pork bones clean. Wash the soup pot as well. This process will help to get rid of any remaining impurities in the pork bones to ensure a clear soup.
