CREAMY FETTUCCINE ALFREDO WITH BROCCOLI
This is my all-time favorite kick-back recipe on a Sunday night.

Steps:
- Bring a pot of water to a boil. Cook broccoli in the boiling water until bright green and tender, 2 to 3 minutes. Drain.
- Fill a large pot with water; add salt and bring to a rolling boil. Stir in fettuccine, bring back to a boil, and cook pasta, stirring 2 to 3 times using tongs, over medium heat until cooked through but still firm to the bite, about 10 to 12 minutes. Drain and return pasta to pot.
- Mix broccoli, Alfredo sauce, butter, and black pepper into pasta using tongs. Transfer fettuccine Alfredo to a serving bowl and top with Parmesan cheese.

- Melt Butter in large nonstick skillet over medium-high heat and cook chicken, in batches if necessary, stirring occasionally, until chicken is thoroughly cooked. Remove chicken and set aside. Stir Sauce and broccoli into same skillet. Bring to a boil over medium-high heat. Reduce heat to low and simmer covered, stirring occasionally, until broccoli is heated through, about 5 minutes. Stir in chicken and cook, stirring occasionally, until heated through, about 2 minutes. Serve over hot fettuccine and sprinkle, if desired, with grated Parmesan cheese.
STEAK FETTUCCINE ALFREDO
A simple but elegant dinner in for two!

- While you cook the steaks, boil pasta in salted water until al dente. Drain and set aside.
- Preheat a cast iron skillet or other heavy-bottomed skillet over medium high heat. Add butter.
- Generously season steaks with salt and pepper. Add to the hot skillet and cook until caramelized and golden brown, 2-4 minutes.
- Flip and cook the other side. Cook steak to your desired doneness. I like to use an instant read thermometer and cook to 145-155 degrees F, or medium.
- Remove steaks from skillet, cover with foil and let rest while you prepare the sauce.
- Return skillet to medium heat. Add remaining butter, heavy whipping cream, and parmesan cheese. Season with salt and pepper.
- Bring sauce to a simmer and cook until cheese is melted and sauce is slightly thickened, stirring frequently, about 5 minutes.
- Add drained pasta to the sauce and toss to coat.
- Slice steaks and serve over pasta. Top with more parmesan cheese, if desired.

QUICK FETTUCCINE AND BROCCOLI ALFREDO
This is a go-to dinner in my house. You can have the entire family eating within 30 minutes, and it's fun to get the kids involved in the cooking. You can switch out the pasta for another long cut like linguine, bucatini or angel hair. And you can sub cauliflower florets or baby carrots for broccoli; just be sure to adjust the steaming time.

- Bring a large pot of salted water to a boil. Add fettuccine and cook according to package directions until al dente, 8 to 11 minutes. While the pasta cooks, place a steamer basket over the pot and place the broccoli in the basket. Cover and steam until tender, 3 to 4 minutes. Set aside.
- Meanwhile, in a large saucepan or skillet, melt the butter over medium heat. Grate the half clove of garlic with a rasp grater into the butter and cook, stirring, about 1 minute. Stir in the cream, milk, and salt and pepper to taste. Bring to a simmer. Stir in the Romano and Parmesan, stirring until melted; the sauce will thicken. Turn off the heat and set aside until the pasta is done.
- Drain the pasta, reserving about 1/2 cup of cooking liquid. Add the drained pasta to the cream sauce and stir until well coated. If the sauce seems too thick, stir in some of the reserved pasta cooking liquid to thin it until it coats the pasta well. Fold in the broccoli. Garnish with parsley and more Parmesan.
EASY FETTUCCINE ALFREDO WITH BROCCOLI

- Cook fettuccine according to package instructions in a large pot of generously salted water. Add broccoli during the last 3-4 minutes of cooking time and cook until done. Drain, return to pot, and set aside.
- While your pasta cooks, melt butter in a medium saucepan. Add half and half and stir. Allow to come to a simmer and cook for 5-8 minutes, stirring occasionally, until slightly thickened and reduced. Watch closely and do not allow to come to a full boil.
- Add garlic powder, salt, black pepper, cayenne, and Parmesan. Pour sauce over noodles and toss to coat.
- Serve and sprinkle with more Parmesan if desired.

ONE-POT CHICKEN BROCCOLI FETTUCCINI ALFREDO
Steps:
- Spray a large skillet/pan (big enough to cook pasta and all the ingredients in) with some non stick spray and cook the cubed chicken over medium heat, about 8-10 minutes turning the chicken.
- Add salt, pepper and garlic, then pour in the broth, milk and heavy cream, bring to a light boil then reduce heat to low. Add the noodles and cook for about 6 minutes, until they are starting to soften but not fully cooked.
- Add the broccoli, stir and cover with a lid..let cook for another 8 minutes while stirring occasionally then stir in the parmesan cheese until well mixed. If it seems too dry add a splash more of milk.
- Makes 6 servings, approx 1 heaping cup per serving. This recipe will freeze well.

- Prepare the broccoli per packaged directions and set aside.
- Brown the stew beef, cutting the larger pieces into smaller ones. Set aside.
- Heat one gallon of water to a rolling boil and prepare the pasta per packaged directions.
- For the Alfredo sauce, I used Grits-N-MS's wonderful recipe, #64196: melt the butter in a sauce pan.
- Add cream cheese and whisk.
- Add half and half.
- Add parmesan cheese and garlic powder. Whisk until smooth. Set aside.
- When the pasta is done, mix it all together. Mangia!
