CHINESE DRY RUB RIBS



Chinese Dry Rub Ribs image

These super-simple dry rub ribs come out with a texture that melts in your mouth and a sweet yet spicy taste that makes them impossible to resist!

1 rack (about 3 lbs / 1.4 kg) St Louis ribs (or baby back ribs)
1 tablespoon salt
1 tablespoon sugar
1 tablespoon cumin
1 tablespoon gochugaru ((or paprika for less spicy))
1 tablespoon ground black pepper ((or 1/2 tablespoon ground Sichuan peppercorns))
1/2 tablespoon garlic powder
1/2 teaspoon five spice powder

Steps:

  • (Optional) Remove the membrane from the back of the ribs by slicing the edge with a knife, then pull off the membrane sheet using your hand.
  • Combine the rub ingredients in a small bowl and mix well. Sprinkle evenly all over the ribs, front, back and sides. Gently pat and rub in the spice using your hands. Cover with plastic wrap and marinate overnight in the fridge.
  • Preheat the oven to 300°F (150°C). Line a baking sheet with foil or parchment paper for easy cleaning. Place a rack on top.
  • Place the marinated ribs on the rack. Cover with a large piece of foil that's enough to cover the baking sheet. Fold the foil along the edges of the baking sheet to seal the ribs.
  • Bake covered for 2 hours.
  • Remove the baking sheet from the oven and carefully remove the foil. Turn on the boiler to 550°F (280°C). Broil for 8 to 10 minutes, or until the surface of the ribs are charred. You should stay close to the oven during the time and check on the ribs from time to time, to prevent it from burning.
  • Once done, remove the baking sheet and let it rest for 10 minutes. Carve the ribs and serve hot.

1 1/2 cups dry sherry or Shaoxing wine
1/2 cup oyster sauce
1/3 cup packed light brown sugar
2 1/2 pounds short ribs, English cut
1 tablespoon kosher salt
2 teaspoons five-spice powder
1 tablespoon vegetable oil
6 medium garlic cloves, smashed
1-inch piece ginger, sliced
1 small serrano or Thai bird chile, or jalapeno pepper, halved

Steps:

  • Heat the oven to 350 degrees F and arrange a rack in the middle.
  • Mix together sherry, oyster sauce, and brown sugar until evenly combined; set aside. Pat ribs dry with a paper towel and season well with salt and five-spice powder.
  • Place a 3-quart Dutch oven or other heavy-bottomed, shallow pot with a tight-fitting lid over medium heat and add oil. When oil starts to smoke, add ribs and sear until well browned, about 2 minutes per side.
  • Remove ribs to a plate and set aside. Discard all but 1 tablespoon drippings, return pan to stove, and add garlic, ginger, and chile and cook just until fragrant, about 30 seconds. Stir in reserved sherry mixture and bring to a simmer.
  • Return ribs to pan and bring to a simmer. Cover and transfer to oven to cook, turning occasionally, until meat is knife tender, about 1 1/2 hours. Increase oven to 400 degrees F and cook, covered, until ribs are sticky, about 30 more minutes.

After searching the internet for a good Chinese Spareribs recipe and not finding any that caught my eye, I decided to make my own. This recipe is pretty simple, and yields tender, juicy, tangy ribs. In Japan, I cooked this in the fish broiler, but it should be fine on the grill or in the oven.

1 tablespoon ketchup
1 tablespoon honey

Steps:

  • In a shallow glass dish, mix together the hoisin sauce, ketchup, honey, soy sauce, sake, rice vinegar, lemon juice, ginger, garlic and five-spice powder. Place the ribs in the dish, and turn to coat. Cover and marinate in the refrigerator for 2 hours, or as long as overnight.
  • Preheat the oven to 325 degrees F (165 degrees C). Fill a broiler tray with enough water to cover the bottom. Place the grate or rack over the tray. Arrange the ribs on the grate.
  • Place the broiler rack in the center of the oven. Cook for 40 minutes, turning and brushing with the marinade every 10 minutes. Let the marinade cook on for the final 10 minutes to make a glaze. Finish under the broiler if desired. Discard any remaining marinade.

12 meaty pork ribs
100ml hoisin sauce
2 tbsp soy sauce
1 tbsp clear honey
1 tbsp vinegar (you can use cider, malt or wine)
1 tsp Chinese five-spice powder

Steps:

  • Put the ribs in a large pan and cover with water. Bring to the boil and simmer for 15 mins. Meanwhile, pour the hoisin sauce in a jug and stir in the soy sauce, honey, vinegar and five-spice.
  • Drain the ribs very well, then brush with the glaze - if barbecuing, chill, cover and keep in the fridge for later.
  • Heat the grill to high, if using. Grill or barbecue for 15-20 mins, turning from time to time until shiny and slightly charred in places. Serve hot.

750g/1½lb pork spareribs
600ml/1 pint groundnut (peanut) oil
1 tbsp Shaoxing rice wine or dry sherry
1 tbsp light soy sauce
1 tbsp Chinese black rice vinegar or cider vinegar
2 tsp sesame oil
1 tbsp cornflour
2 tbsp finely chopped garlic
2 tsp five-spice powder
3 tbsp finely chopped spring onions
3 tbsp Chinese rock sugar or granulated sugar
3 tbsp Shaoxing rice wine or dry sherry
150ml/5fl oz chicken stock
1½ tbsp light soy sauce
2 tbsp dried grated orange peel
85ml/3fl oz Chinese black rice vinegar or cider vinegar

Steps:

  • Have your butcher separate the spareribs into individual ribs and then into chunks which are approximately 7.5cm/3in long. Alternatively do this yourself using a heavy sharp cleaver that can cut through the bones.
  • Mix the marinade ingredients together in a bowl and steep the spareribs in the marinade for about 25 minutes at room temperature. Remove the spareribs from the marinade with a slotted spoon.
  • Heat the oil in a deep-fat fryer or large wok. When the oil is very hot and slightly smoking, slowly brown the marinated spareribs in several batches until they are brown. Drain each cooked batch on kitchen paper. (Leave the cooking oil to cool. Strain it through a filter if you want to re-use it when cooking pork.)
  • Put the sauce ingredients into a clean wok or frying pan.
  • Bring the sauce to the boil and then reduce the heat. Add the spareribs, cover and simmer gently for about 40 minutes, stirring occasionally.
  • If necessary, add a little water to the sauce to prevent the spareribs from drying up. Skim off any surface fat, turn onto a warm serving plate and serve at once.

Steps:

  • Season both sides of the ribs with salt and pepper.
  • Sprinkle both sides with five spice powder - generously.

800 g ribs
black pepper
1 tbsp. toasted white sesame seeds for garnishing
2 cloves garlic (finely chopped)
1 tsp. cumin powder + 1 tsp. Chinese five spice powder as a dry dip mix (optional)
2 tbsp. hoisin sauce
2 tbsp. light soy sauce
1 tbsp. oyster sauce
1 tbsp. Chinese cooking wine or rose wine
1 tbsp. honey
1/4 tsp. Chinese five spice powder
1 thumb ginger (sliced)
1 tbsp. honey
1/2 tbsp. previous marinating sauce
1/2 tbsp. hot water

Steps:

  • Pre-soak the ribs with clean water for 30 minutes. During the process, the clean water turns slightly pink or red. Change the water once after the first 10 minutes. Then drain completely.
  • Whisk all of the marinating sauce in a bowl. Pour the marinating sauce to the ribs. Set aside for at least 4 hours or overnight in fridge.
  • Get a lined baking sheet, place only the ribs in. Wrap the ribs with foil paper. Pre-heat oven to 180 degree C.
  • Place the baking sheet in the middle rack and roast for 40 minutes (depending how soft you want the ribs to be). Take the upper foil off and then brush the honey water. Rise the oven temperature to 200 degree C. Continue roasting for around 10 minutes until well colored.

Cooking these Chinese spare ribs in the slow cooker makes them easy, without heating up the house, and still tender and packed with flavor.

1.2 lb St Louis style pork ribs (approx (545g) - 1/2 a rack (can also use other cuts, these are just probably best suited))
2 tbsp hoisin sauce
2 tbsp honey
1 tbsp soy sauce
1 tbsp rice wine
1 tsp Chinese five spice powder
1/2 tsp ginger (grated/minced)
1/2 tsp garlic (grated/minced)

Steps:

  • Cut the ribs between the bones to give individual ribs. Put the in a single layer in the bottom of the slow cooker.
  • Mix together the hoisin sauce, honey, soy sauce, rice wine, Chinese five spice, ginger and garlic. Pour on top of the ribs and turn them over a little to coat. You should have a thin layer of sauce over the top and a slight 'puddle' around the ribs (see photo above). Put the lid on and cook on low for 6-7 hours.
  • After they are cooked and tender, but not falling off the bones too much, carefully remove the ribs from the slow cooker and place on a foil-lined baking sheet/tray. Pour the sauce into a small pan and simmer for a few minutes to reduce slightly. Pour a little over the ribs and put under the broiler/grill for a couple minutes to caramelize. Serve with some more of the sauce on the side, if you like.

Everybody loves Chinese restaurant "BBQ" ribs. They have a distinct pork flavor, a glossy sheen that implies the sweet glaze beneath, and a glowing red-pink color that penetrates the surface. Here's a simple recipe for making Chinatown char siu ribs at home on your grill or in the oven featuring a flavorful marinade. You can use any cut of ribs.

1 slab ribs ((any cut))
¼ cup hoisin sauce
¼ cup water
2 tablespoons brandy ((or dark rum or bourbon))
2 tablespoons honey
2 tablespoons soy sauce
1 tablespoon toasted sesame oil
1 tablespoon hot sauce such as Tabasco
½ tablespoon ground/powdered ginger
½ tablespoon ground/powdered onion
¼ tablespoon ground/powdered garlic
¼ tablespoon five spice powder
½ teaspoon red food coloring

  • Prep. Remove the membrane from the rack of ribs. Cut the rack in to individual ribs.
  • Mix the marinade thoroughly in a bowl. Don't skip the booze. It helps penetrate, and even if you're a teetotaler, don't worry, there isn't any measurable alcohol in the meat. Yes, I know alcohol can dry meat out, but I just think it works well in this case. If you must skip it, substitute apple juice or water. You can substitute fresh ginger and garlic for powdered ginger and garlic if you wish.
  • Marinate. Marinate the meat for 1 to 2 hours in a metal bowl or zipper bags. Discard the used marinade. It is contaminated with meat juice. Don't marinate in a plastic bowl if you use the food coloring. It might stain.
  • Fire up. As much as we are fans of outdoor cooking, this meat also tastes great cooked in an indoor oven. Either way, heat your cooker or oven to about 225°F (107.2°C) in the indirect zone.
  • Cook. If you are grilling, set up in a 2-zone or Indirect system. Make sure the meat is not directly over the flame on a grill. Indoors, put a pan of water with a rack on top of it under the meat. This is important or drippings will burn in the pan. Roast ribs for about 3 hours, loin strips for about 1 1/2 hours. If you grill, skip the smoking wood. I think it is cleaner and brighter sans lumber.
  • Serve. Once completely cooked, slice the rack of ribs between the bones and serve.

1 rack (2.5 to 4 lbs) pork ribs ((the one I used was about 3 lbs / 1.4 kg))
1/2 tablespoon salt
1 1/2 teaspoon gochugaru ((or chile powder) (*Footnote 1))
1/2 teaspoon white pepper
1/2 teaspoon five spice powder
3 tablespoons brown sugar
2 tablespoons oyster sauce
2 tablespoons hoisin sauce
2 tablespoons honey
1 tablespoon soy sauce
1 teaspoon salt
2 teaspoons rice vinegar
2 teaspoons Shaoxing wine ((or dry sherry))
1 teaspoon grated ginger
1 clove garlic (, grated)
1/2 teaspoon 5 spice powder
6 to 10 drops red food coloring ((optional))

Steps:

  • (Optional) Remove the membrane from the back of the ribs by loosening one end with a knife, and then tearing it away.
  • Prepare a large piece of foil (at least 2" / 5 cm bigger than the ribs on all sides) to layer over a baking sheet. Place the ribs back side up onto the foil.
  • Combine the dry rub ingredients in a small bowl and mix well. Sprinkle evenly over the back of the ribs and rub in. Flip the ribs and sprinkle on the top side, rub in the spice again. Set aside to marinate briefly while preheating the oven to 275°F (135°C).
  • Combine the sauce ingredients in a medium-sized bowl. Mix well.
  • Once the oven is heated, brush a thin layer of sauce all over the ribs.
  • Place another piece of foil over the top. Crimp the bottom foil over the top foil and fold a few times to create a sealed parcel.
  • Place the ribs in the oven and bake for 2 to 3 hours depending on their size (*Footnote 2). Once done, you can use a thermometer or a fork to poke through the foil to test the doneness. The meat should feel very tender or read at least 160°F/71°C.
  • While cooking, prepare a baking tray lined with foil (or parchment paper) and a rack on top.
  • Remove the ribs from the oven and turn the heat up to 450°F (230°C).
  • Carefully open the parcel and move the ribs to the prepared baking tray. You might need to use 2 spatulas to help with this step because the ribs are extremely tender and might fall apart.
  • Generously brush the top and back of the ribs with the sauce, leaving a few tablespoons for after cooking.
  • Return the ribs to the oven and bake until beginning to char, 10 to 15 minutes. Check on the ribs every 5 minutes to prevent them from burning.
  • Remove the ribs from the oven and brush with a thin layer of sauce. Let cool for 10 minutes then slice the ribs and serve hot with the remaining sauce.

2 racks pork spareribs, 4 pounds each, trimmed of excess fat
1/2 cup Chinese five-spice powder
Sea salt and freshly ground black pepper

1 cup grapefruit juice

Steps:

  • Preheat the oven to 300 degrees F.
  • Rub the ribs all over with the five-spice powder; season generously with salt and pepper. Arrange the ribs in a single layer in a roasting pan and slow-roast for 2 1/2 hours.
  • To prepare the teriyaki glaze: Meanwhile, in a pot, combine the soy sauce, grapefruit juice, hoisin sauce, ketchup, rice wine vinegar, brown sugar, chile, garlic, and ginger over medium heat. Bring to a slow simmer and cook, stirring, until thickened, about 20 minutes.
