- Mix Marinade ingredients together. Add chicken and mix to coat. Marinade in the fridge for a minimum of 1 hour or up to overnight.
- Heat oil in a large non stick skillet or BBQ over medium high heat. (See notes for other cooking methods) Add chicken and cook until each side is dark golden brown and chicken is cooked through (about 3 minutes each side). Transfer to plate, cover loosely with foil and rest for 3 minutes.
- Garnish with chillies, shallots and sesame seeds if desired. Serve with white rice and slices of cucumber.
CHINESE DRY RUB RIBS

- (Optional) Remove the membrane from the back of the ribs by slicing the edge with a knife, then pull off the membrane sheet using your hand.
- Combine the rub ingredients in a small bowl and mix well. Sprinkle evenly all over the ribs, front, back and sides. Gently pat and rub in the spice using your hands. Cover with plastic wrap and marinate overnight in the fridge.
- Preheat the oven to 300°F (150°C). Line a baking sheet with foil or parchment paper for easy cleaning. Place a rack on top.
- Place the marinated ribs on the rack. Cover with a large piece of foil that's enough to cover the baking sheet. Fold the foil along the edges of the baking sheet to seal the ribs.
- Bake covered for 2 hours.
- Remove the baking sheet from the oven and carefully remove the foil. Turn on the boiler to 550°F (280°C). Broil for 8 to 10 minutes, or until the surface of the ribs are charred. You should stay close to the oven during the time and check on the ribs from time to time, to prevent it from burning.
- Once done, remove the baking sheet and let it rest for 10 minutes. Carve the ribs and serve hot.

- Cut pork with the grain into strips 1 1/2- to 2-inches long; put into a large resealable plastic bag.
- Stir soy sauce, honey, ketchup, brown sugar, rice wine, hoisin sauce, red food coloring or red bean curd (see Cook's Note), and Chinese five-spice powder together in a saucepan over medium-low heat. Cook and stir until just combined and slightly warm, 2 to 3 minutes. Pour the marinade into the bag with the pork, squeeze air from the bag, and seal. Turn bag a few times to coat all pork pieces in marinade.
- Marinate pork in refrigerator, 2 hours to overnight.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove pork from marinade and shake to remove excess liquid. Discard remaining marinade.
- Cook pork on preheated grill for 20 minutes. Put a small container of water onto the grill and continue cooking, turning the pork regularly, until cooked through, about 1 hour. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

CHINESE FIVE-SPICE SPARE RIBS

- Have your butcher separate the spareribs into individual ribs and then into chunks which are approximately 7.5cm/3in long. Alternatively do this yourself using a heavy sharp cleaver that can cut through the bones.
- Mix the marinade ingredients together in a bowl and steep the spareribs in the marinade for about 25 minutes at room temperature. Remove the spareribs from the marinade with a slotted spoon.
- Heat the oil in a deep-fat fryer or large wok. When the oil is very hot and slightly smoking, slowly brown the marinated spareribs in several batches until they are brown. Drain each cooked batch on kitchen paper. (Leave the cooking oil to cool. Strain it through a filter if you want to re-use it when cooking pork.)
- Put the sauce ingredients into a clean wok or frying pan.
- Bring the sauce to the boil and then reduce the heat. Add the spareribs, cover and simmer gently for about 40 minutes, stirring occasionally.
- If necessary, add a little water to the sauce to prevent the spareribs from drying up. Skim off any surface fat, turn onto a warm serving plate and serve at once.

- In a large bowl mix together all the ingredients listed under marinade (flour, cornflour, ginger garlic paste, soy sauce, chilli sauce, chilli powder, pepper powder and egg) and add chicken. Set aside for 15 minutes to an hour.
- Heat oil for deep frying in a deep pan or kadhai to the depth of 3/4 inches. Once the oil is hot enough (approx 350 F), start adding the chicken pieces and deep fry for 5-6 minutes, turning once or twice till golden brown on both sides. Take the chicken pieces out on a tray lined with tissue to absorb any extra oil and set aside.
- In the meanwhile, whisk together all the ingredients for the sauce (soy sauce, chilli sauce, tomato ketchup, chilli powder and vinegar) with 1/4 cup water and set aside.
- In another wok or kadhai, heat one and a half tablespoons oil and add green chillies, ginger and garlic. Saute for a minute or so and add the cubed onions. Stir fry on high heat for 2-3 minutes and add the capsicum and fried chicken. Toss together and cook for 2 minutes. This helps the chicken take on the smoky flavor from the capsicum.
- Add the sauce to the chicken on high heat and toss well till the sauce coats the chicken. Stir fry for a minute or two and switch off the flame. Top with spring onions and serve immediately!

- Thinly slice the pork into strips about 3" long and place in a large sealable plastic bag.
- Whisk together the remaining ingredients in a small bowl until well combined.

CHINESE BBQ RIBS WITH HOISIN SAUCE

- Pre-soak the ribs with clean water for 30 minutes. During the process, the clean water turns slightly pink or red. Change the water once after the first 10 minutes. Then drain completely.
- Whisk all of the marinating sauce in a bowl. Pour the marinating sauce to the ribs. Set aside for at least 4 hours or overnight in fridge.
- Get a lined baking sheet, place only the ribs in. Wrap the ribs with foil paper. Pre-heat oven to 180 degree C.
- Place the baking sheet in the middle rack and roast for 40 minutes (depending how soft you want the ribs to be). Take the upper foil off and then brush the honey water. Rise the oven temperature to 200 degree C. Continue roasting for around 10 minutes until well colored.
CHINESE CURED PORK BELLY
Lap yuk (臘肉) or là ròu (腊肉) is a Chinese cured pork belly. It's a classic and traditional Chinese bacon that can be used in lo bak go, taro cake, glutinous rice stir fry and clay pot rice. This lap yuk Chinese bacon recipe only uses a few simple ingredients. Also, it shows how to make and prepare Chinese cured pork belly at home.

- Remove the boneless cut pork belly from the package. It is best to choose half fat and half meat. (This is 4.26 pounds and has 10 pieces. You can get 3-4 pounds of pork belly.)
- Put the pork belly into the plastic ziplock bag. (I prefer to use a ziplock bag to marinate because it's easier and less messy.)
- Pour ¼ cup of soy sauce, 2 tablespoons of dark soy sauce, 2 tablespoons of salt, ¼ cup of sugar, ¼ cup of cooking rice wine, ¼ teaspoon of five spices, 1 teaspoon of garlic powder and 1 slice of grind ginger into a bowl. Then, mix it well.
- After that, pour the marinade sauce from step 3 into the bag of pork belly. Then, zip and tighten the bag. Massage the bag of meat and make sure the sauce covers each pork belly. Let the pork belly marinade in the refrigerator for at least a full day (24 hours). Marinated for 1-2 days is ok. Remember to lay the marinated pork belly bag flat in the refrigerator (12 hours) and flip the other side at night before going to sleep (12 hours).
- Cut 10 of the 36 inches long strings. (Because I have 10 pieces of pork belly.) Then, thread a string through the needle and tie the end.
- Next, take a piece of marinated pork belly and thread through the meat part a couple times to secure the meat. Cut the needle out and tie the string. See the video below the recipe card for detail.
- Repeat steps 5-6 until the marinated pork belly is tied with a string.
- After, put the safety pins through the strings. (You can use any hooks that help hanging is ok.)
- The following, hang the marinated pork belly outside in the early morning until dark at night. Then, I put them back in the refrigerator cover with a plastic wrap. I repeat this process for 7 days on average depending on the weather and area. (The first day hanging the marinated pork belly out, I usually put a plastic cover under the meat because it prevents the liquid from dripping on the floor.)
- These Chinese bacon are hanging outside 2-3 days on a mostly sunny day, humidity was around 56%-76% and wind was around 5-9 mph.
- On days 4-5, hanging the lap yuk outside. (On a sunny day, humidity was around 51%-69% and wind was around 4-7 mph.) You can see a layer of oil shiny on the meat. It's a good indicator that the bacon is almost done.
- Chinese cured pork belly, lap yuk, is ready after hanging outside for 7 days.
- You can cut it into slices. (When the lap yuk is dried and cold, it is hard to cut.)
- Therefore, a lot of people like to wash the lap yuk with warm or hot water. Then, put lap yuk on a plate and steam it for 10 minutes. (After the water is boiling, put the lap yuk in and account for 10 minutes.)
- After steaming lap yuk for 10 minutes, it is softer.
- And, steamed lap yuk is easier to cut. The taste is even better.

- Soy Sauce. Ubiquitous in Chinese cooking, soy sauce is used in marinades, sauces, as a dip and more. Light soy sauce (also called thin soy sauce) is lighter and saltier, while dark soy sauce has a darker color and richer flavor.
- Hoisin Sauce. This thick, dark brown sauce is known for its pungent, slightly sweet flavor with just a bit of heat. Hoisin sauce is used in sauces, to marinate meat, especially pork, and as a dip.
- Rice Wine. Indispensable in Chinese cooking, rice wine is used as a tenderizer in marinades, to add flavor to sauces and in many dishes. Fortunately, good quality rice wine is becoming more widely available.
- Rice Vinegar. While there are exceptions, most Chinese vinegar is rice-based. Generally milder and with more subtle flavor than western vinegar, Chinese rice vinegar is a key ingredient in several recipes, including sweet and sour and hot and sour dishes, and is used as a dip.
- Oyster Sauce. Made from oyster extract and spices (and frequently thickened with cornstarch and with caramel added for color), oyster sauce is used to enhance existing flavors and add a darker color to dishes.
- Asian Sesame Oil. All it takes is a small amount of this dark colored oil, made from pressed and toasted sesame seeds, to add flavor to marinades, dips, and cooked dishes.
- Chili Paste/Sauce. Made from chili peppers and salt, with garlic and other seasonings, a dash of chili paste is all that is needed to add heat to dishes.
- Chili Bean Sauce. Not to be confused with regular chili paste or sauce, this thick, spicy chili bean sauce is made with chilis, fermented soybeans and often fermented broad beans and a variety of seasonings.
- Plum Sauce. While in the West it’s known mainly as a dip, in China this jam-like sauce with a sweet and sour flavor is also used in cooking. In any event, you’ll want to keep a jar on hand, or you can make your own plum sauce.
