CHINESE BROCCOLI WITH SOY PASTE

Chinese Broccoli With Soy Paste image

The flavor of the soy paste really shines here, so use the best-quality one you can find. We like Yu Ding Xing's glutinous rice soy paste.

Provided by Lisa Cheng Smith

Yield 8 servings

Number Of Ingredients 2

1 lb. Chinese broccoli or broccolini, trimmed, cut in thirds crosswise
¼ cup soy paste (such as Yu Ding Xing)

Steps:

  • Set a steamer basket in a large pot filled with 1" water, cover pot, and bring water to a boil. Add broccoli to steamer basket, cover pot, and steam broccoli until crisp-tender, about 5 minutes.
  • Meanwhile, whisk soy paste and 2 Tbsp. water in a large bowl.
  • Arrange broccoli on a platter and drizzle sauce over.

BROCCOLI WITH GARLIC AND SOY SAUCE

Broccoli with Garlic and Soy Sauce image

Categories     side-dish

Time 33m

Yield 6 to 8 servings

Number Of Ingredients 6

1 head garlic, peeled (about 16 cloves)
1 cup good olive oil
1 teaspoon crushed red pepper flakes
1 teaspoon kosher salt
4 stalks broccoli, cut into florets (8 cups of florets)
2 tablespoons soy sauce

Steps:

  • Put the garlic cloves and oil in a small heavy-bottomed saucepan. Bring to a boil and cook uncovered over low heat for 10 to 15 minutes, until the garlic is browned and tender. Turn off the heat and add the red pepper flakes and 1/2 teaspoon salt. Immediately pour into a heat-proof container to stop the cooking. Allow to cool to room temperature.
  • For the salad, blanch the broccoli florets in a large pot of boiling salted water for 2 to 3 minutes, until crisp-tender. Drain well and immerse immediately into a large bowl of ice water until the broccoli is cooled. This process stops the cooking and sets the bright green color. Drain well.
  • In a large bowl, toss the broccoli with 1/2 teaspoon salt, 1/4 cup of the oil used to cook the garlic, the soy sauce, and 8 or more cloves of cooked garlic. Taste for seasonings and serve cold or at room temperature.

  • Wash the broccoli thoroughly and set aside. Mix the soy sauces, rice wine vinegar, sugar, stock, sesame oil, and ground white pepper, and set aside.
  • Heat the wok over high heat. Add the vegetable oil, garlic, and broccoli and quickly stir-fry so the garlic doesn’t burn.
  • Stir fry for 15 seconds, and add the Shaoxing rice wine around the perimeter of the wok. Give everything a quick stir and add in the sauce mixture. Let the sauce come to a boil, and mix the cornstarch and water together to make a slurry. You can turn the heat down slightly and cook the broccoli a bit longer before adding the corn starch slurry if you like your broccoli softer.
  • You can turn the heat down slightly and cook the broccoli a bit longer before adding the corn starch slurry if you like your broccoli softer, add the cornstarch slurry slowly while stirring the broccoli and sauce constantly. Let the sauce cook and thicken until it coats the back of a spoon. If you like a thick sauce, add more cornstarch and water. If you like your sauce thinner, add less cornstarch and water.
