How to tenderise beef (velveting beef) image

Chinese restaurants tenderise economical cuts of beef so they are tender and juicy in stir fries. It's also done for chicken. There's a few methods - this baking soda way is the easiest, fastest and highly effective. Though I'm sharing this with beef stir fries in mind, don't just limit yourself to Asian food. This beef can be used for any recipe calling for strips of beef to be cooked quickly, like Beef Stroganoff. Do not use this method for whole steaks (read Note 4).

250 g / 8 oz stewing beef or other economical beef cuts ((Note 1))
3/4 tsp baking soda / bi-carbonate soda ((Note 2))

Steps:

  • Slice beef thinly against the grain. (Note 3)
  • Place in a bowl. Sprinkle over baking soda, toss with fingers to coat evenly.
  • Refrigerate for 30 to 40 minutes. (See Note 1 for different cuts)
  • Rinse beef well with tap water. Shake off excess water, then use paper towels to blot away excess water (doesn't need to be 100% dry).
  • Proceed with recipe of choice. Beef can be marinated or seasoned before cooking, stir fried or deep fried, and it will be soft and tender, "velvet" like. Use for Stir Fries, Stir Fried Noodles, Beef Stroganoff and any other recipe calling for quick-cooked beef strips.

Made with a classic Chinese stir fry sauce, this is a great recipe to use up whatever leftover greens you have in the fridge! Instead of making this Sauce, you can use my All Purpose Stir Fry Sauce (see Note 1) If using economical beef, consider tenderising it the Chinese way ("velveting", simple, highly effective, see Note 5!)

3 tsp cornstarch / corn flour*
2 tbsp + 1/3 cup water (, separated)
2 tbsp soy sauce ((Note 2)*)
1 tbsp oyster sauce*
2 tbsp Chinese cooking wine OR Mirin ((Note 3)*)
1 tsp white sugar*
1/2 tsp sesame oil ((optional)*)
Dash of black pepper*
2 tbsp peanut oil
1 garlic clove (, crushed)
7 oz / 200 g beef (, good quality, thinly sliced (Note 4))
1/2 small onion (, sliced (yellow, brown or white))
1/2 red bell pepper / capsicum (, sliced)
1 small carrot (, halved lengthwise and sliced thinly on the diagonal)
3 baby pak choy / bok choy (, quartered lengthwise)
2 stems scallion / shallots (, cut into 1.5"/3cm pieces)
Steamed white rice
Sesame seeds ((optional))
Fresh cilantro / coriander ((optional))

Steps:

  • Combine the cornstarch and 2 tbsp of water in a small bowl, mix until smooth.
  • Mix in remaining Sauce ingredients EXCEPT the 1/3 cup water.
  • Place the beef and 2 tbsp of Sauce in a bowl and mix gently. Set aside for 15 minutes.
  • Add 1/3 cup water into the remaining Sauce. Set aside.
  • Heat oil in wok over high heat. Add garlic and cook for 15 seconds.
  • Add onion and cook for 1 minute.
  • Add the beef and cook until it changes colour from red to light brown but not cooked through.
  • Add bell pepper and carrots and stir fry for 30 seconds.
  • Add Sauce and cook for 30 seconds.
  • Add pak choy and scallions/shallots and cook for a further 1 minute until the Sauce is thickened.
  • Remove from heat immediately.
  • Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice! Garnish with sesame seeds and cilantro, if using.

1 cup boiling water

Roll up jelly-roll style; holding 1 end of the rope, wrap dough around, forming a coil, pinching to seal. Flatten slightly. Roll each coil to 1/8-in. thickness., In a large cast-iron or other heavy skillet, heat 1 tablespoon canola oil. Cook pancakes, 1 at a time, over medium-high heat until golden brown, 2-3 minutes on each side, adding more oil as needed; keep warm. , In the same skillet, heat sesame oil over medium-high heat. Steps:

  • Beat the egg in a medium sized bowl. Add the sliced beef, vegetable oil, and salt. Mix well and let marinate for 15 to 20 minutes while preparing the other ingredients.
  • Combine everything for the sauce in a big bowl and mix well.
  • When you're ready to cook, drain the extra liquid from the bowl of beef. Add the cornstarch. Stir to coat the beef, until it forms an uneven coating with a little dry cornstarch left unattached.
  • Heat oil in a large nonstick skillet (or a cast iron pan) over medium high heat until hot. Add the beef and spread into a single layer in the skillet. Separate the beef pieces with a pair of tongs or chopsticks.
  • Cook without touching the beef for 2 to 3 minutes, or until the bottom turns golden. Flip to brown the other side, 1 to 2 minutes. Transfer the beef to a big plate and remove the pan from the stove. Let cool for 2 to 3 minutes.
  • Place the pan back onto the stove and turn to medium heat. You should still have 1 to 2 tablespoons of oil in the pan. If not, add more.
  • Add the onion, pepper, and dried chili pepper. Cook and stir for 1 minute.
  • Add the ginger and garlic. Stir a few times to release the fragrance.
  • Stir the sauce again to dissolve the cornstarch completely. Pour into the pan. Stir and cook until it thickens a bit.
  • Add back the beef pieces. Stir to coat beef with sauce.
  • Transfer everything to a plate immediately and garnish with roasted sesame seeds, if using.
  • Serve hot over steamed rice as a main dish.

1 tablespoon soy sauce
2 teaspoons cornstarch
1 teaspoon garlic

1 lb sirloin, sliced thin
1/4 cup chicken broth
2 tablespoons oyster sauce (or sacha sauce)
2 teaspoons chili-garlic sauce
2 teaspoons cornstarch
1/8 teaspoon white pepper
1/8 teaspoon sesame oil
8 ounces fresh think Chinese egg noodles
1/2 onion, thinly sliced
1/2-1 lb asparagus, trimmed and cut into 1 inch pieces

Steps:

  • Marinate beef; stir sherry, soy, cornstarch, garlic and ginger.
  • Toss beef to marinate.
  • Sauce: Stir fry chicken broth, oyster sauce, chili garlic sauce, cornstarch, pepper and sesame oil together.
  • Set aside.
  • Cook noodles in large pot, according to directions.
  • Drain, rinse under cool water, drain again.
  • Heat skillet over medium high heat.
  • Add 1 T of oil and coat.
  • Spread noodles evenly and cook, pressing lightly from time to time to form a cake, until bottom is golden brown, about 5 minutes.
  • Turn cake over.
  • Drizzle 1 T oil on bottom and cook other side.
  • Transfer to plate.
  • Heat wok over high heat.
  • Add 1 T oil, swirl Add meat and stir fry until no longer pink.
  • Remove from pan.
  • Add onion to wok and stir fry until crisp tender.
  • Add asparagus and cook.
  • Return meat to wok pour in sauce and bring to boil.
  • Cook until slightly thickened.

I like this recipe because it uses only a few simple ingredients. This is a common Chinese Appetizer -- cooked and sold in the Chinese-equivalent of a New York hotdog stand. They go for around $0.10 each in China and are typically purchased as a light breakfast or a quick snack between meals.

3 1/2 cups all-purpose flour
1 1/4 cups water
3 green onions, finely chopped
1/4-1/2 cup cooking oil
salt, to taste

Steps:

  • Boil 1 cup of water; Add 1/4 cup of cold water to the boiled water.
  • Put 3 cups of flour into a large bowl; Slowly pour approximately 1 cup of the hot water into the flour and stir the bowl while you pour.
  • Knead until all of the flour in the bowl has joined the dough; (It may seem like there is too little water at first, but be patient; The dough will be kind of hot when kneading; When you are done, your dough should not be sticky and should look grayish).
  • Cover the ball of dough with 2 layers of moist paper towels; Leave covered for at least 1 hour; After an hour or so, the dough should have transformed from gray to white; (You can use the wait-time to prepare the next step).
  • Have your chopped onions and cooking oil ready in small bowls; Make sure your rolling pin and rolling board are floured; The steps to follow will need to be repeated until all of the ingredients are used up.
  • Make a ball of dough 6-10 ounces in volume; (6 ounces will give you a pancake the size of a CD and will allow you to o fry 2-3 of them at the same time;) Make sure you re-cover the bowl each time you remove some dough.
  • Use the roller to flatten the ball into a round circle 2-mm thick; Sprinkle salt (you decide how much) uniformly over the'circle;' Use the roller to roll the salt crystals into the dough.
  • Brush a thin amount of cooking oil uniformly over the circle; Then sprinkle 1-2 teaspoons of chopped onion uniformly over the circle; (Read the next step before applying the onions, so as to better understand how much onions to apply).
  • Roll the circle into a cylinder; (If you put too much onion, it won't roll well) Gently squeeze as much air out of the'cylinder' as you can; Pinch the ends so the onions wont fall out; (If the sides of your cylinder start popping holes, you made the circle too thin, but don't worry).
  • Roll the cylinder along the length and tuck the outer-end into the roll; Your creation should look like a snail shell and be shaped like a rollerskate wheel.
  • Rest the'wheel' on its face and use your roller to flatten it into a pancake, around 4-5 mm thick; Don't be worried if onions start spilling out when you flatten.
  • Brush your frying pan with cooking oil and fry on low heat; Turn when the bottom is crispy; The final pancake should be crispy on the outside, with a few burn spots on the surface, and dense and chewy on the inside.
  • I recommend tasting the first one to decide if you want to add more salt or onion, or if you want to make the pancake thicker or thinner.
