A wonderful dish that brings back the flavor of the islands. A side dish that dresses up plain old pork chops or can be used as a bed for seafood like grilled scallops or shrimp.

Number Of Ingredients 5

1 (20 ounce) can pineapple slices in heavy syrup
1/2 cup brown sugar
2 tablespoons soy sauce
1 teaspoon ginger
2 cups cooked rice

Steps:

  • 1. Pour syrup from the can into a sauce pan. Bring to a boil for approximately five minutes.
  • 2. Lower heat and stir in brown sugar untill it disolves completely. Add ginger and soy and allow to sit on very low heat to keep warm.
  • 3. On a grill place pinapple rings and cook for about four minutes on one side and one minute on the other side. ( you can broil them in the oven, but you should baste the rings with the sauce before broiling to help pinapple turn golden brown) place pinapple rings on top of rice, pour sauce over rice.
  • I highly recommend adding grilled scallops or shrimp to this dish. enjoy.

1 1/4 cups rice
2 1/2 cups chicken stock
3/4 cup diced canned pineapple
1 cup ham, diced
3 tablespoons butter
1/4 cup slivered almonds
salt and pepper

Steps:

  • Cook rice in chicken stock until stock is absorbed. Brown pineapple and ham in butter in 1 1/2 quart casserole. Stir in rice and season, to taste, with salt and pepper.
  • Add almonds, stir well and bake for 15 minutes at 350 degree oven.

Funny how adding pineapple to any dish makes it "Hawaiian" but hey, that's the name it had when I got it. A really nice twist on fried rice.

3/4 cup cooked chicken, diced
1 egg
2 cups cooked rice, cold
2 green onions, diced
1/4 cup carrot, finely diced
1/4 cup pineapple, drained and diced
2 tablespoons soy sauce
1 teaspoon sesame oil
2 tablespoons vegetable oil
pepper

Steps:

  • Cook the egg with a little salt and pepper, set aside.
  • Heat oils, add onions & carrots.
  • Stir fry until onions become translucent (about 2 minutes).
  • Add the rice and continue to cook until the rice starts turning a light gold color.
  • Slice the cooked egg into strips, add with the cooked chicken stirring while cooking to warm it up.
  • Remove from element, add soy sauce, pepper and pineapple, return to element turning up to high heat, stir fry vigorously for thirty more seconds. (Pineapple gets flavorless if stir fried too much).
  • Note: Always use cold cooked rice for stir fry & break apart with wetted fingers any clumps.

4 ½ cups rice, cooked
2 eggs
1 container spam, cubed
1 yellow onion, diced
mayonnaise
¼ cup green onion, chopped

Steps:

  • Put rice in a bowl, then flip it over on a plate, making dome rice.
  • Cook spam in a skillet, then set aside. In the same skillet, scramble eggs and set aside. Once set aside, sauté onion. Put aside.
  • To assemble, top rice with eggs, then add onions and spam. Finally, garnish with green onion and drizzle with mayo.
  • Serve.
