1/4 cup/60 mL dry sherry
1/4 cup/60 mL chili sauce
2 teaspoons/10 mL black pepper

1 teaspoon/5 mL Chinese five-spice powder
1 clove garlic (minced)

Steps:

  • Gather the ingredients.
  • Add all of the ingredients to a glass or plastic bowl and mix well.
  • Use immediately or store in an airtight container in ​the refrigerator for up to 5 days after preparation.
  • Enjoy.

CHAR SIU (CHINESE BBQ PORK)



Char Siu (Chinese BBQ Pork) image

"Char siu" literally means "fork roast" - "char" being "fork" (both noun and verb) and "siu" being "roast" - after the traditional cooking method for the dish: long strips of seasoned boneless pork are skewered with long forks and placed in a covered oven or over a fire. This is best cooked over charcoal, but it's important to cook with indirect heat.

2 pork tenderloins
½ cup soy sauce
⅓ cup honey
⅓ cup ketchup
⅓ cup brown sugar
¼ cup Chinese rice wine
2 tablespoons hoisin sauce
½ teaspoon red food coloring
1 teaspoon Chinese five-spice powder

Steps:

  • Cut pork with the grain into strips 1 1/2- to 2-inches long; put into a large resealable plastic bag.
  • Stir soy sauce, honey, ketchup, brown sugar, rice wine, hoisin sauce, red food coloring or red bean curd (see Cook's Note), and Chinese five-spice powder together in a saucepan over medium-low heat. Cook and stir until just combined and slightly warm, 2 to 3 minutes. Pour the marinade into the bag with the pork, squeeze air from the bag, and seal. Turn bag a few times to coat all pork pieces in marinade.
  • Marinate pork in refrigerator, 2 hours to overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove pork from marinade and shake to remove excess liquid. Discard remaining marinade.
  • Cook pork on preheated grill for 20 minutes. Put a small container of water onto the grill and continue cooking, turning the pork regularly, until cooked through, about 1 hour. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

In addition to its impressive high-gloss appearance and savory taste, this Chinese barbeque pork is quite easy to make at home--even without a fancy ceramic grill.

⅔ cup soy sauce
½ cup honey
½ cup Chinese rice wine (or sake or dry sherry)
⅓ cup hoisin sauce
⅓ cup ketchup
⅓ cup brown sugar
4 cloves garlic, crushed
1 teaspoon Chinese five-spice powder
½ teaspoon freshly ground black pepper
¼ teaspoon cayenne pepper
⅛ teaspoon pink curing salt
1 (3 pound) boneless pork butt (shoulder)
1 teaspoon red food coloring, or as desired
1 teaspoon kosher salt, or to taste

Steps:

  • Place soy sauce, honey, rice wine, hoisin sauce, ketchup, brown sugar, garlic, five-spice powder, black pepper, cayenne pepper, and curing salt in a saucepan. Bring to a boil on high heat; reduce heat to medium-high. Cook for 1 minute. Remove from heat. Cool to room temperature.
  • Cut pork roast in half lengthwise. Cut each half again lengthwise forming 4 long, thick pieces of pork.
  • Transfer cooled sauce to a large mixing bowl. Stir in red food coloring. Place pork sections into sauce and coat each piece. Cover with plastic wrap and refrigerate 4 to 12 hours.
  • Preheat grill for medium heat, 275 to 300 degrees F (135 to 150 degrees C) and lightly oil the grate. Line a baking sheet with parchment paper.
  • Remove sections of pork from marinade and let excess drip off. Place on prepared baking sheet. Sprinkle with kosher salt to taste.
  • Transfer pork sections to grate over indirect heat on prepared grill. Cover and cook about 45 minutes. Brush with marinade; turn. Continue cooking until an instant-read thermometer inserted into the center reads 185 and 190 degrees F, about 1 hour and 15 minutes more. Do not use any more marinade on cooked meat until after you boil it.
  • Place leftover marinade in saucepan; bring to a boil; let simmer 1 minutes. Remove from heat. Now you can use it to brush over the cooked pork.

1/2 cup hoisin sauce
1/4 cup soy sauce
3 tablespoons dark brown sugar
2 tablespoons honey, plus a bit extra to finish
1 tablespoon five-spice powder
1 teaspoon granulated garlic
1 teaspoon grated fresh ginger
1 teaspoon red food coloring
2 racks spare ribs (8 to 10 pounds, St. Louis-style work best), individually sliced into single ribs

Steps:

  • Mix together the hoisin sauce, soy sauce, brown sugar, honey, five-spice powder, garlic, ginger and food coloring in a metal, non-reactive bowl. Pour the marinade into a large zip-top bag, reserving 1/2 cup on the side for basting later. Add the ribs to the bag and marinate, refrigerated, for at least 3 hours, though longer is better and overnight is ideal.
  • Heat a charcoal or gas grill to 275 degrees F for direct and indirect grilling.
  • Remove the ribs from the marinade (discard the marinade) and place onto a wire rack. Place the rack directly on the cooler side of the grill. Cook until the meat is very tender, basting with the reserved marinade 3 times during the cooking process, 2 to 3 hours.
  • Drizzle the ribs with honey, move them to the direct heat side and quickly char each rib to caramelize.

5 -6 minced fresh garlic cloves
1 piece fresh ginger, minced
1 cup hoisin sauce
1/2 cup sherry wine
1/2 cup soy sauce (low-sodium works too-)
1/2 cup sugar
1/2 teaspoon Chinese five spice powder
3 teaspoons red food coloring

Steps:

  • Mix all ingredients in a bowl,( or a jar with a tight fitting lid), until the sugar is dissolved. Refrigerate until you are ready to use it.
  • *You can set aside some for use as a dipping sauce, but you must first bring it to a full rolling boil, over med. heat, then reduce the heat to low, and simmer until it is thick, and slightly reduced.
  • **When you are ready to cook, marinate meat for 4-24 hours, turning once every two hours. You then grill or broil the meat until it is cooked through,(and slightly charred- this adds to the flavor!).

5 lbs pork steaks (I use 3/4-inch thick sliced loin) or 5 lbs pork loin (I use 3/4-inch thick sliced loin)
1/3 cup hoisin sauce
3 tablespoons minced garlic
3 tablespoons oyster sauce
1/2 teaspoon white pepper
1 tablespoon salt
1 tablespoon rice wine
1 1/2 teaspoons five-spice powder

Steps:

  • Combine all ingredients, except pork, in a bowl and mix well.
  • Coat pork in mixture. I store mine in quart sized zipper bags, 2-3 chops per bag.
  • Let pork marinade in refrigerator for a minimum of 1 hour. I marinate for 24 hours.
  • Cook outdoors on grill until done. On my grill that's 4-5 minutes per side.
  • They also cook well indoors on a contact type grill. I generally cook for 5-6 minutes indoors.
  • Pork filled bags may be frozen with marinade and thawed to cook later.
  • **Note - Marinating time is not included in my "time to Make".

4 pork chops
1 tsp five-spice powder
½ tsp ground cinnamon
1 tbsp hoisin sauce
2 tbsp each soy sauce , brown sugar, honey
1 tsp dry sherry , or Shaohsing rice wine
thumb-sized piece ginger , grated
1 garlic clove , crushed
2 tsp fish sauce
juice 2 limes
2 tsp soft brown sugar
1 shallot , thinly sliced
1 red chilli , thinly sliced
1 cucumber , halved lengthways, then sliced
small bunch mint , roughly chopped
50g roasted peanuts , chopped

Steps:

  • Make marinade by mixing ingredients together. Put chops in a shallow bowl or tray, pour marinade over, turning chops to make sure they are coated all over, and leave to stand for at least 30 mins.
  • To make salad, put the fish sauce, lime juice and 1 tbsp water into a small bowl, add the sugar, then mix until dissolved. Stir in shallot and chilli. Put cucumber in a serving dish, sprinkle mint over, pour dressing over and scatter with peanuts.
  • Heat the barbecue or griddle pan and cook chops on each side for 4-5 mins, until cooked. Serve with cucumber salad.

12 meaty pork ribs
100ml hoisin sauce
2 tbsp soy sauce
1 tbsp clear honey
1 tbsp vinegar (you can use cider, malt or wine)
1 tsp Chinese five-spice powder

Steps:

  • Put the ribs in a large pan and cover with water. Bring to the boil and simmer for 15 mins. Meanwhile, pour the hoisin sauce in a jug and stir in the soy sauce, honey, vinegar and five-spice.
  • Drain the ribs very well, then brush with the glaze - if barbecuing, chill, cover and keep in the fridge for later.
  • Heat the grill to high, if using. Grill or barbecue for 15-20 mins, turning from time to time until shiny and slightly charred in places. Serve hot.

The original has double the amount of sesame oil but I feel a little of that goes a long way...double it if you wish. This can be served hot or cold. It's delicious! Prep time does not include 1 hour marinating time.

1 whole chicken (about 3-3 1/2 lbs.)
2 teaspoons salt
4 cloves garlic, peeled
2 slices fresh peeled ginger

1 tablespoon light soy sauce
1 teaspoon chili paste
2 teaspoons sugar

Steps:

  • Cut the chicken into quarters and rub each piece evenly with the salt.
  • Combine the rest of the ingredients in a blender or food processor and puree them.
  • Place the chicken in a resealable plastic bag and pour the marinade over.
  • Squish around good so the marinade is evenly coating the chicken.
  • Set aside to marinate at least 1 hour at room temperature, or refrigerate overnight.
  • Preheat broiler, light a fire in an open gril or turn on your gas grill.
  • When your chosen cooking method is hot, place the chicken on the grill and cook, over indirect heat, for about 45 minutes turning occasionally, or until meat is no longer pink near the joints.
  • This is really good served with steamed jasmine rice and greens or stir-fried pea pods and mushrooms.
