Unique rice cooked in Chinese style is what is used by chinese to food any kind of fried rice. Any party cook in bulk and flavors it accordingly with for veg and non-veg variation.

Steps:

  • Put the dry rice in a large bowl, cover generously with cold water, then stir the rice in circles with your hand for 10-15 seconds, or until the water turns milky white. Drain the rice immediately into a large sieve or colander, then return the rice to the bowl, cover again with cold water, and repeat the process. Do this 5 or 6 times, for a total of 3 to 4 minutes, by which time the rinsing water should be nearly clear. Stir with increased gentleness as you near the final rinsing, as the rice will absorb a bit of water in the process and be susceptible to breaking. Shake off any excess water, then proceed at once to cook the rice, or leave it to sit in the colander for up to an hour before cooking. If you are cooking a single cup of raw rice, use a heavy quart pot with a tight-fitting lid. If you are doubling the recipe, use a heavy 4 quart lidded pot. The general rule with rice is to use a pot with more depth than breadth as you go to cook larger amounts, lest the water evaporate too quickly during the cooking. Put the rinsed and well-drained rice in the pot, then add the appropriate amount of cold water for the grain and the amount of rice you are using. Do not bother to stir the rice, now or anytime during cooking. Bring the water to a rolling boil over high heat. When the big starchy bubbles climb nearly to the rim, in about 30 seconds, cover the pot at once with a tight-fitting lid and reduce the heat to low. What you want inside the pot is a slow, bubbly simmer, which requires either a low or moderately low setting depending on the stove. Check the simmer by putting your ear next to the pot and listening for the bubbling within, and by observing the tiny wisps of steam that should be escaping from around the lid. Do not uncover the pot. Simmer the rice under the tight lid for 15 minutes, then move the pot off the heat, and let it sit undisturbed for 15-20 minutes. Do not open the lid even once; the rice is still at work within, absorbing the steam and plumping to tenderness. (Note that this quot;waitingquot; time is a bit longer for Chinese-style rice than is customarily given for American-style long-grain rice. The extra minutes mean extra tenderness and creaminess, which I personally like far better.) When the waiting time is up, lift the lid, then gently fluff the rice with a fork, lifting the grains from the bottom and tossing gently to separate them. Serve the rice immediately, or let it sit in the covered pot where it will stay warm for another 15-20 minutes.

8 dried shiitake mushrooms
3 tablespoons peanut oil
2 large eggs, lightly beaten with a pinch of kosher salt
4 scallions (white and green), thinly sliced
1/4 cup minced carrot
1 large clove garlic, minced
Pinch red chile flakes
1 teaspoon minced peeled fresh ginger
2 tablespoons soy sauce
1 teaspoon toasted sesame oil
3 cups cooked long-grain rice
1 cup cooked meat cut in 1/2-inch cubes, such as pork, ham, beef, or chicken
1/2 cup frozen peas, defrosted in a strainer at room temperature

Steps:

  • Put the mushrooms in a small bowl and cover with boiling water and soak until re-hydrated, about 20 minutes. Drain, squeeze dry, and cut mushrooms in quarters. Set aside.
  • Heat 1 tablespoon of the peanut oil in a well-seasoned wok or large non-stick skillet over medium-high heat. Swirl to coat the pan. Pour in the eggs, swirl the pan so the egg forms a large thin pancake. (Lift the edge of the egg to allow any uncooked egg to run to the center.) As soon as the egg has set, turn it out of the pan onto a cutting board. Cool, cut into 1 inch pieces.
  • Wipe out the pan with a paper towel and heat the remaining peanut oil over high heat. Add the scallions and carrots and stir-fry for 1 1/2 minutes. Add the mushrooms, garlic, chile, and ginger, stir-fry for 1 minute more. Add the soy sauce, sesame oil and rice and stir-fry for 2 to 3 minutes. Add the meat, peas, and reserved egg, cook, stirring until heated through, about 2 to 3 minutes. Serve immediately.

BETTER than take-out!!! Flavors blend well and are delicious! The keys to success for this recipe is using COLD rice, otherwise it will be sticky. Also, for good flavor, sesame oil must be used. I have on occasion used either pork or chicken in this recipe which has been finely chopped. We could eat this dish every day!!!

2 eggs, beaten
1/4 teaspoon salt
1 tablespoon olive oil
4 green onions, finely chopped
1 carrot, finely chopped
1/2 cup frozen peas
2 tablespoons olive oil
4 cups cold cooked rice
1 chicken bouillon cube
2 tablespoons water
1/4 teaspoon garlic powder
3 tablespoons light soy sauce
2 teaspoons sesame oil

Steps:

  • On low heat place 1 tablespoon of olive oil in large saucepan or wok. Cook beaten egg briefly, breaking into pieces. Remove and set aside.
  • Add 2 tablespoons olive to saucepan or wok. Add onions, carrot and peas. Stir-fry for 2 minutes.
  • Dissolve chicken bouillon cube in the 2 tablespoons water. Place in pan and add cold rice, garlic powder, soy sauce and sesame oil. Toss lightly to mix well and heat for 3 minutes. Add in egg pieces and mix.
  • Additional soy sauce may be added to taste. (One cup of finely chopped pork or chicken pieces may be added.)
  • Serve and enjoy!

4 Tbsp peanut oil
3 large eggs, beaten
1 medium white onion, minced
3 clove garlic, minced
3 Tbsp minced peeled fresh ginger
2 c cooked regular long-grain rice
2-1/2 Tbsp soy sauce
2 Tbsp dark sesame oil
1/4 c dry sherry
4 scallions, white and green parts, thinly sliced on the diagonal
salt and freshly ground pepper to taste

Steps:

  • 1. Heat 1 Tablespoon peanut oil in a skillet over medium heat. Add the eggs and stir to scramble for 1-2 minutes or until fluffy. Set aside.
  • 2. Add remaining 2 Tablespoons oil to a wok or skillet, and heat over medium heat until the oil is rippling, about 1 minute.
  • 3. Add the onion, garlic, and ginger and stir-fry until the mixture is aromatic but not browned, about 1 second.
  • 4. Add the cooked rice, soy sauce, sesame oil, and sherry and stir-fry for 2 minutes, breaking up any lumps of grains and blend the mixture well. Stir in the scallions and stir-fry, tossing quickly but gently for 10 seconds.
  • 5. Add the previously scrambled eggs, mix all together and season with salt and pepper.

This Chinese fried rice has the flavor those other recipes are missing. Tastes like takeout. I want to dedicate this dish to Bergy, whose recipe "AM & B's Indonesian Mehoon" has inspired this dish. Make sure you season your rice with salt before it cooks. Add some butter to the cooking water, as well. Other seasonings should be added before you cook, as well, so it has time to get inside the rice. If you like sesame flavor, add 1 tsp. of it after you add the green onions, but do not use it as a cooking oil because it easily burns.

3/4 cup finely chopped onion
2 1/2 tablespoons oil
1 egg, lightly beaten (or more eggs if you like)
3 drops soy sauce
3 drops sesame oil
8 ounces cooked lean boneless pork or 8 ounces chicken, chopped
1/2 cup finely chopped carrot (very small)
1/2 cup frozen peas, thawed
4 cups cold cooked rice, grains separated (preferably medium grain)
4 green onions, chopped

Steps:

  • Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.
  • Allow wok to cool slightly.
  • Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.
  • Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.
  • Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.
  • Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.
  • Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.
  • Set out additional soy sauce on the table, if desired.

1 each egg - lightly beaten
1 teaspoon soy sauce
1 teaspoon sesame oil
8 ounces boneless pork cooked; or 8 ounces chicken - cooked, chopped
½ cup carrot - finely chopped
½ cup peas - frozen, thawed
4 cups rice - cooked
4 each green onions - sliced
2 cups bean sprouts
2 tablespoons soy sauce

Steps:

  • Heat 1 tablespoons oil in wok; add chopped onions and sauté until onions brown in color; remove from wok.
  • Allow wok to cool slightly.
  • Mix egg with 1 teaspoon soy sauce and 1 teaspoon sesame oil; set aside.
  • Add ½ tablespoon oil to wok. Add meat and carrots.
  • Add rice, green onions, and bean sprouts, tossing to mix well.
  • In the middle of the rice, make a hole and add the egg mixture. Once it starts to set, mix in with the rest of the rice.
  • Add 2 tablespoons soy sauce and sauté until thoroughly mixed.

CHICKEN AND SHRIMP FRIED RICE

1 teaspoon chopped garlic
250 g of cooked rice
1 egg
20 g of shrimp, deveined, remove the shell
50 g of chicken breast meat, cut into thin slices
50 g frozen mixed beans
1 tablespoon of premium grade light soy sauce
1 tablespoon of chopped scallion

Steps:

  • Heat up the vegetable oil in a wok or large saucepan.
  • Saute the minced garlic until aromatic.
  • Add the shrimps, follow by the chicken meat and stir-fry until they are cooked. Remove the shrimps and meat. Leave the remaining oil in the wok.
  • Add the cooked rice and stir-fry over low heat until the rice turns aromatic, spluttered and sizzled.
  • Beat an egg. Pour the egg over the rice.
  • Coat the rice grains with the egg. Continue stir fry until the egg is cooked and no longer sticky.
  • Return the shrimps and chicken to the wok. Stir-fry for a minute.
  • Add the beans and the light soy sauce. Stir-fry over high heat until the rice becomes dry again.
  • Sprinkle the chopped scallion on it and serve.

½ teaspoon soy sauce
1 tbsp Shaoxing wine
1 teaspoon sesame oil

3 tablespoons fresh peas ((or frozen peas))
4 cups jasmine ((or basmati rice, steamed, cold))
4 scallions (, cut into small pieces)
5 oz. bean sprouts

Wok

Steps:

  • Heat a wok over medium to high heat and pour in 1 tablespoon of soybean or peanut oil. Add the chopped onion and sauté for about 8 to 10 minutes or until golden brown.
  • Let the wok cool slightly.
  • Lightly beat the eggs and add ½ teaspoon of soy sauce and sesame oil. Set aside.
  • Add ½ tablespoon of oil to the wok. Stir.
  • Add the egg mixture and, working quickly, swirl the egg until it sets against the bottom of the wok.
  • When the eggs puff, turn the omelet over and cook the other side briefly; remove from the wok and cut into small pieces. Mash the eggs with a fork and set aside.
  • Heat another wok over medium to high heat then pour in the soybean (or peanut) oil.
  • Add the meat, as well as the carrots, peas and previously sautéed onion.
  • Sauté for 2 minutes, stirring very often.
  • Add the steamed rice, half of the scallions and bean sprouts, stirring to combine well, then sauté for 3 minutes.
  • Add 2 tablespoons of light soy sauce (or more), Shaoxing wine, and chopped egg to the rice mixture and stir in.
  • Add the other half of the scallion and sauté over high heat for 1 minute. Serve immediately.
