A red version of the timeless Argentinian chimichurri sauce recipe, which can also be used as a marinade, made with plenty of fresh herbs, garlic, vinegar, olive oil, and red bell pepper. Whip this together in minutes to add depth and sophistication to many meals.

1 red bell pepper (seeded and chopped)
1 shallot (chopped)
4 cloves garlic (chopped)
½ bunch fresh cilantro
½ bunch fresh parsley
1/3 cup red wine vinegar
Juice from half a lemon
1 teaspoon red pepper flakes
1 teaspoon paprika
1 teaspoon dried oregano
Salt and pepper to taste
1/3 cup olive oil

Steps:

  • Add all ingredients except the olive oil to a food processor and pulse on low to combine the ingredients.
  • Drizzle the oil in the mixture while processing on high, until it forms a paste-like quality.
  • Serve immediately or use as needed.

1/2 cup packed fresh parsley
1/4 cup red wine vinegar
2 teaspoons smoked paprika
5 garlic cloves (peeled)
1/4 cup fresh lemon juice
1/4 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/2 cup olive oil (good quality)

Steps:

  • Add all the ingredients, except the olive oil, to a blender and pulse until well combined.
  • Pour into a bowl and stir in the olive oil. (It's okay if it's not perfectly smooth - it's actually better with a few chunks in it).
  • Serve with meat, chicken, seafood or vegetables

small pack coriander, finely chopped
small pack flat-leaf parsley, chopped
2 garlic cloves, very finely chopped
1 small sweet onion, finely diced
1 green chilli, deseeded and finely chopped
5 tbsp extra virgin olive oil
2 tbsp white wine vinegar (Sauvignon Blanc or rice wine vinegar are good)

Steps:

  • Put the herbs, garlic, onion and chilli in a bowl. Pour the oil and vinegar in and add salt. Mix together.

1/4 cup red wine vinegar
1 lemon wedge (juice of)
1 tablespoon diced red onion

1/2 teaspoon salt

Steps:

  • Pulse parsley in processor to chop.
  • Add remaining ingredients and blend.

1 1/2 lbs flank steaks
1/2 cup red wine vinegar
1/4 cup olive oil
3 tablespoons tomato paste
2 tablespoons garlic, minced
1 tablespoon sugar
1 teaspoon ground cumin
1 teaspoon ground black pepper
1 teaspoon red pepper flakes
salt

Steps:

  • Slice the steak against the grain at 45 degree angle into 1/4"-thick strips.
  • In a large bowl whisk together remaining ingredients.
  • Preheat grill to medium.
  • Toss meat slices into the chimichurri to coat.
  • Thread 4-5 strips (6 oz) onto each of 4 metal skewers. Fold each strip accordion-style, then spear through the center with the skewer. Spread strips down length of the skewer.
  • Grill skewers, covered, for 3 minutes. Turn, baste with remaining chimichurri, and grill, covered, for 3 more minutes.
