150g spaghetti or linguine
1 tbsp olive oil
1 garlic clove, sliced
1 red chilli, deseeded and finely chopped, plus extra to serve (optional)
1 tbsp drained capers
small bunch of parsley, finely chopped (stalks included)
145g tuna in spring water, drained
90g rocket or baby spinach leaves
½ lemon, juiced

Steps:

  • Cook the spaghetti for 9-11 mins in a large pan of well-salted water until al dente.
  • Heat the oil in a wide frying pan over a very low heat, and gently cook the garlic and chilli to infuse the oil. Remove from the heat if the garlic is turning past light golden, as this will make it bitter.
  • Drain the pasta, keeping a cupful of the cooking water, and tip the spaghetti into the frying pan. Toss the pasta in the oil over a low heat, adding a little of the pasta water to emulsify into a sauce that coats the pasta, then fold in the capers, parsley, tuna and some seasoning. Don't stir too vigorously - you want to keep larger chunks of tuna. Toss the rocket and lemon juice through the spaghetti, and serve with extra chilli scattered over, if you like.

One of my favourites...for best results be sure to use good quality tuna. I usually use Sirena brand tuna.

300 g large shell pasta
200 g green beans, halved
2 (185 g) cans tuna, in chili oil
1/4 cup coarsely chopped fresh parsley
1/4 cup firmly packed fresh basil leaf, torn
2 tablespoons drained baby capers
100 g baby rocket or 100 g baby spinach leaves
1/4 cup olive oil
1/4 cup lemon juice
2 garlic cloves, crushed
2 teaspoons sugar

Steps:

  • Cook the pasta in a large pan of boiling water, uncovered, until it is just tender. Drain the pasta, then rinse it under cold water.
  • Meanwhile, boil, steam or microwave the beans until just tender, then drain. Drain the tuna over a small bowl, reserving the oil for the Dressing. Flake the tuna into large chunks with a fork.
  • Just before serving, combine the pasta, beans tuna, herbs and capers is a large bowl then drizzle with the Dressing. Serve the salad topped with rocket leaves.
  • DRESSING.
  • Combine all of the ingredients with the reserved chilli oil in a jar and shake well.

425 g tuna packed in oil
8 sun-dried tomatoes, chopped
1 red onion, finely chopped
50 g pine nuts
250 ml pasta sauce (Leggos stir through Tomato)
4 garlic cloves, crushed
2 teaspoons chili flakes (can use minced or fresh chilli instead if desired)
250 g penne
10 ml olive oil (for frying)
1/2 cup fresh basil, roughly coppped
30 g parmesan cheese (thick and long slices is great)

Steps:

  • In a large pot, cook penne to taste (see packaging for details).
  • Add oil to a deep, heavy based frying pan. Chop onion and cook in pan along with garic and chilli on high heat until oninion is soft.
  • Add chopped sun dried tomatoes, tuna and pasta sauce.
  • Reduce heat to a simmer.
  • Add pine nuts.
  • When pasta has cooked, drain and add to frying pan along with chopped, fresh basil.
  • Stir pasta through sauce until well coated.
  • Serve in large, open bowl.
  • Top with slices of fresh parmesan cheese.
  • You can add pretty much anything to this dish - olives, egg plant, artichoke hearts, capers - even anchovy fillets are lovely.
  • You can also remove the tuna from the dish and add 4 or 5 rashers of chopped bacon instead. This is VERY nice.

• 180g No.1 Bucatini pasta • 2 tbsp extra virgin olive oil • 2 cloves garlic, finely chopped • 1⁄4 tsp chilli flakes • 110g pot John West Fridge Pot Tuna Steak in Sunflower Oil • 1⁄2 unwaxed lemon, zest and juice • 160g No.1 Red Choice Tomatoes, finely diced • 1 tbsp finely chopped flat leaf parsley

Steps:

  • 1. Bring a large pan of salted water to the boil. Add the bucatini and cook according to pack instructions (about 8-9 minutes). 2. Meanwhile, heat 1 tbsp oil in a medium frying pan over a medium heat. Fry the garlic for 1-2 minutes until golden, then add the chilli flakes and tuna and cook for 1-2 more minutes, breaking up the tuna into chunks. Take off the heat, and stir in the remaining 1 tbsp oil, the lemon juice and diced tomatoes. Season and set aside. 3. When the pasta is ready, scoop out a mugful of the cooking water, then drain. Tip the pasta into the frying pan with 3 tbsp cooking water and toss together. Stir in the parsley, then divide between plates. Scatter with the lemon zest and a little finely grated Parmigiano Reggiano if liked, and serve immediately.
