- In a small bowl, combine the first 8 ingredients. Refrigerate until serving. Serve with chips.

GRILLED SHRIMP WITH MANGO SALSA
Steps:
- Toss together the cilantro, mangoes, lime juice, jalapeno and red onions in a medium bowl. Divide half of the mixture among 4 glasses with a wide mouth, reserving the remaining half to top with.
- Meanwhile, preheat a grill or grill pan to medium-high heat.
- Add the shrimp to a large bowl and toss with the oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Grill the shrimp on each side until opaque and slightly charred, 1 to 2 minutes.
- Add the shrimp to the 4 glasses with the salsa and top with the remaining salsa. Garnish with a plantain chip.
SMOKED CHILE BUTTER-BRUSHED SHRIMP WITH TOMATILLO SALSA
Steps:
- For the Smoked Chile Butter: Place ingredients in a food processor and process until smooth. Scrape into a bowl and refrigerate for 1 hour. Remove 20 minutes before using.
- For the Tomatillo Salsa: Place the halved tomatillos and the lime juice in a blender and blend until smooth. Place the coarsely chopped tomatillos, the onion and the jalapeno in a bowl, add the tomatillo mixture and toss to coat. Add the olive oil and honey and season with salt and pepper. Fold in the cilantro just before serving.
- For the Shrimp: Preheat grill or grill pan. Grill the shrimp on both sides for 2 to 3 minutes, brushing with the butter every 30 seconds. Remove shrimp to a platter and immediately brush with the remaining butter. Sprinkle with salt and pepper. Serve the Tomatillo Salsa alongside.
GRILLED SHRIMP WITH PINEAPPLE SALSA

- Spray grill with nonstick spray; preheat barbecue (medium-high heat). Thread shrimp on 6 skewers. Whisk 2 tablespoons oil and 2 tablespoons lime juice in small bowl to blend; brush mixture over shrimp. Sprinkle shrimp with salt and pepper; let marinate 15 minutes.
- Sprinkle 12 pineapple slices with salt and pepper. Grill pineapple until just tender, about 4 minutes per side. Transfer to work surface; cut pineapple into 1/2-inch pieces. Place in bowl; mix in onion, cilantro, chili, remaining 2 tablespoons oil and 2 tablespoons lime juice. Season salsa with salt and pepper.
- Grill shrimp until just opaque in center, about 5 minutes. Serve with salsa.
SPICY SALSA-CILANTRO SHRIMP
The blend of the salsa, cilantro, and garlic are so great with the shrimp. I used hot salsa, but that's just my preference.

- Mix all ingredients together, in a bowl and marinate for 30 minutes.
- Heat medium pan on stovetop.
- Cook for approximately.
- 4 minutes, or until shrimp are no longer pink.
- Do not over cook, as shrimp will be"rubbery".
- Remove from stovetop and serve over pasta, rice, or a good crusty bread.

CHILLED SHRIMP IN CILANTRO SALSA

- 1. In a large saucepan, bring to a boil about 2 quarts of water. Add the shrimp, reduce heat to low, and cook the shrimp until pink and curled, about 3 to 4 minutes. Drain the shrimp under cold running water and put them in a large bowl. 2. In a blender, purée as smooth as possible the serrano, garlic, onion, cilantro, vinegar, and oil. Season with salt. Put about 2 tablespoons sauce in the bowl with the shrimp. Toss well to coat. Arrange the shrimp on a serving platter in even rows. Put the remaining sauce in a small bowl for dipping. I prefer grilling in the summer because you don't need to turn on the stove and heat up the house. If you want to get fancy, serve it in a chilled martini glass for a beautiful presentation. - In a large resealable plastic bag, combine the first seven ingredients. Add the shrimp; seal and turn to coat.
