- In a small bowl, combine Bellucci EVOO, balsamic vinegar, minced garlic cloves, red pepper flakes and chopped parsley. Grate fresh parmesan cheese and add to bowl. Whisk and serve on shallow plate. Serve with sliced bread loaf.
- In a small bowl, combine Bellucci EVOO, balsamic vinegar, minced garlic, fresh thyme, pinch of red pepper flakes, pinch of fresh ground black pepper, pinch of sea salt and chopped parsley. Serve on shallow plate. Grate parmesan cheese and top on plate. Serve with sliced bread loaf.

Cover and let steep for 1 hour. Strain into a sterilized bottle or jar and discard the garlic. Use within 24 hours. (Or store in a sterilized container in the refrigerator for up to 1 week.)
- To make the dipping sauce, place the oil at room temperature in a shallow bowl or decorative plate. Swirl a drizzle of balsamic decoratively into the center. Sprinkle with the pepper flakes, salt, and ground black pepper, and top with a light coating of cheese.

- Preheat oven to 350 degrees F. Slice the top off of the head of garlic, just exposing the top of the garlic.
- Place the garlic, thyme and rosemary in a small, shallow baking dish and drizzle the olive oil over the garlic and into the baking dish. Cover tightly with foil and bake for 1 hour.
- Remove from the oven, uncover and let cool until you are able to handle the garlic. Squeeze the roasted garlic out of the peel and discard the peels. Mash the garlic with a fork and whisk it into the olive oil-herb mixture. Serve with Italian bread. (Leftover oil can be stored in the refrigerator for up to 2 months. Bring to room temperature before serving.)
