Number Of Ingredients 6

1 (12-ounce) bag green beans (recommended: Birds Eye Steamfresh)
2 tablespoons olive oil
2 teaspoons chopped garlic
2 teaspoons Italian seasoning
1/4 teaspoon crushed red pepper flakes
Salt and freshly ground black pepper

Steps:

  • Cook the green beans in the microwave according to package instructions
  • Heat the olive oil in a large skillet over medium heat. Add the garlic, Italian seasoning, red pepper flakes, a generous pinch of salt and pepper and saute for 2 minutes. Add the green beans, toss to coat them in the oil and saute another 2 minutes. Serve hot.

GREEN BEAN SALAD (EASY ITALIAN RECIPE - SERVED COLD OR HOT)



Green Bean Salad (Easy Italian Recipe - Served Cold or Hot) image

A super quick and easy hot or cold green bean salad, popular in Italy.

12 oz (340 g) fresh green beans (or use frozen)
about 1 tsp salt
1 clove garlic (medium sized) -optional
1.5 Tbsp extra virgin olive oil
1 tsp red wine vinegar -optional

Steps:

  • Snap off the end(s) of the green beans and wash well (if they are fresh). If the beans are really long, you can cut/snap them in half. Frozen bean will be ready to use.
  • Heat enough water in a pot to just cover the beans and bring to a boil. When boiling, toss in the beans. Cover and simmer for 5 minutes then add about ½ tsp of salt. Check to see if they are ready, but you may need to continue cooking for another 1 to 5 minutes. The size of the beans will determine how long they need to cook (mine were ready in about 8 mins).
  • If you want to cool them quickly, or you might have cooked them longer than you wanted to, run them under cold water. If not, just drain and put into a bowl.
  • Add the sliced garlic (if using). If not using garlic, you can add a strong wine vinegar. In Italy, it's either with garlic or vinegar, but not both (according to my mother). Drizzle the extra virgin olive oil over the beans. Add the red wine vinegar if you didn't add garlic, and finally, salt if necessary (it will almost definitely need more salt).
  • Toss and mix well and either serve immediately, or refrigerate if serving cold.

1 small onion, chopped
2 tablespoons olive oil
2 to 3 garlic cloves, minced
1 can (14-1/2 ounces) stewed tomatoes, coarsely mashed
1/2 cup water
3 tablespoons minced fresh oregano or 1 tablespoon dried oregano
4-1/2 teaspoons minced fresh basil or 1-1/2 teaspoons dried basil
1 teaspoon sugar
1 teaspoon salt
1/4 to 1/2 teaspoon coarsely ground pepper
2 pounds fresh green beans, cut into 1-inch pieces
2 tablespoons grated Romano cheese

Steps:

  • In a small saucepan, saute onion in oil until tender. Add garlic; saute 1 minute longer. Add the tomatoes, water, oregano, basil, sugar, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 40 minutes., Meanwhile, place beans in a large saucepan and cover with water; bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain. Add tomato mixture and cheese; cook for 5 minutes or until heated through.

2 pounds fresh green beans, trimmed
½ cup balsamic vinegar
⅓ cup extra-virgin olive oil
1 small sweet onion, thinly sliced
1 clove garlic, minced
2 teaspoons chopped fresh parsley
1 teaspoon white sugar
1 teaspoon salt
freshly ground black pepper to taste

Steps:

  • Bring a large pot with lightly salted water to a boil over high heat. Add beans and cook, uncovered, until soft but still firm to the bite, 7 to 10 minutes. Check often so beans don't overcook.
  • Combine vinegar, olive oil, onion, garlic, parsley, sugar, salt, and pepper in a large bowl.
  • Drain cooked green beans and mix with dressing in the bowl while still warm. Allow to marinate at room temperature for at least 1 hour. Serve at room temperature or chilled.

1/4 cup Italian seasoned breadcrumbs
1/4 cup olive oil
salt and pepper
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano

1/4 cup parmesan cheese, grated

Steps:

  • Boil green beans in water until tender. Drain well.
  • Place beans in serving bowl and mix in bread crumbs, olive oil, salt and pepper, garlic powder, oregano, and basil.

1 lb fresh stringless green beans, tips removed,and chopped into 1 inch lengths
12 sun-dried tomatoes, soaked in warm water 10 minutes
1 medium onion, chopped
1 tablespoon olive oil
5 cloves garlic, minced
1/4 teaspoon crushed red pepper flakes (optional)
1 teaspoon dried basil leaves
1 teaspoon dried oregano
1/2 cup dry sherry
1 cup tomato sauce
1 teaspoon balsamic vinegar
1/4 cup water
parmesan cheese (optional)
additional crushed red pepper flakes (optional)

Steps:

  • Heat oil and garlic in a large skillet until garlic is fragrant, about 30 seconds.
  • Add chopped onion, red pepper (optional), basil, and oregano, and cook until onion is tender, 2-3 minutes.
  • Drain tomatoes from warm water and chop into strips.
  • Add sun dried tomatoes, green beans, and dry sherry to pan and cook 2 minutes, stirring to blend.
  • Pour in tomato sauce, then add balsamic vinegar and 1/4 cup water; stir to mix.
  • Bring mixture to a boil, then reduce heat, cover and simmer for 35-45 minutes, or until beans are cooked to your preference, adding a tbsp water if it gets too thick.
  • Serve topped with a sprinkling of parmesan cheese (optional), and additional red pepper flakes (optional), if desired.

1 ½ pounds fresh green beans, trimmed and cut into 1-inch pieces
¼ cup butter
½ cup Italian-seasoned bread crumbs
¼ cup grated Parmesan cheese
salt and pepper to taste
1 ½ teaspoons chopped fresh parsley

Steps:

  • Place the green beans in a saucepan with a lid and pour enough water over the beans to cover; bring to a boil. Reduce the heat to low and cover; simmer until the beans are tender but still crisp, about 10 minutes. Drain. Spread the beans onto paper towels to dry.
  • Melt the butter in a large skillet over medium-low heat; stir the bread crumbs and Parmesan cheese into the melted butter. Reduce heat to low; add the beans and cook and stir until the beans are heated through and the crumbs are beginning to brown, about 3 minutes. Season with salt and pepper. Sprinkle the parsley over the mixture to serve.

This is great to use up the green beans from your summer's crop, it is very good also! Plan ahead, this needs to chill for minimum of 5 hours. Prep time includes chilling time.

3 lbs fresh green beans
1/4-1/3 cup onion, finely chopped (or to taste)
salt and pepper
1 tablespoon Dijon mustard (or to taste)
3 tablespoons white wine vinegar
1/2 cup olive oil
1 teaspoon lemon juice (or to taste)

Steps:

  • Steam beans until JUST crisp-tender (do not over cook, the texture should be firm not soft).
  • Rinse/plunge in ice water or very cold water; drain very well.
  • In a bowl combine oil, mustard, wine vinegar, lemon juice, salt and pepper (adjusting all ingredients to taste).
  • In a large bowl place the beans and chopped onions.
  • Pour the vinaigrette over, and toss well to combine.
  • Adjust salt and pepper to taste.
  • Cover and chill for a minimum of 5 hours.
