Southwest Egg Rolls Made Lighter image

Inspired by my favorite appetizer at the Chili's restaurant chain but these are baked,not fried. Two full egg rolls per person makes a nice dinner for T.V. night. For a dinner party you can also cut them in thick slices sushi-style. These can be frozen before they're cooked or afterwards.

Number Of Ingredients 17

10 fresh flour tortillas (seven inch-usually 10 come in a package)
non-fat cooking spray
1 avocado, mashed (about one cup)
1 tablespoon key lime juice
1 (1 ounce) package ranch dressing mix
3/4 cup light sour cream
1/2 cup nonfat milk
2 cups cooked boneless skinless chicken breasts, finely diced (if you're pressed for time,one 10 oz pkg of Perdue Short Cuts carved chicken breast is perfect)
2 cups jalapeno jack cheese (one 8 oz block shredded-if your store has reduced fat that's even better)
1/3 cup frozen chopped spinach, thawed and squeezed dry or 3 cups chopped fresh spinach
1/2 cup canned black beans, rinsed and drained
2/3 cup canned Mexican-style corn, drained (such as Del Monte Whole Kernel Fiesta Corn,seasoned with red and green peppers)
1/2 teaspoon cayenne pepper
1 tablespoon minced fresh parsley
1 teaspoon cumin
1 teaspoon chili powder
2 green onions, thinly sliced

Steps:

  • Combine all Dipping Sauce ingredients in a bowl and mix until smooth; refrigerate.
  • Combine all Eggroll Filling ingredients in a bowl.
  • Turn on the broiler.
  • Assemble 10 eggrolls: spoon a half cup of the mixture into the center of each tortilla; fold in the ends and then roll the tortilla over the mixture very tightly. Hold together with two toothpicks, one through each end.
  • Spray a lasagna-type pan with non-fat cooking spray. Spray both sides of the egg rolls with cooking spray as you place them in the pan. You may brush them with olive oil if you prefer.
  • Broil for approximately one and a half to two minutes on each side, until golden brown and crispy. Watch very carefully. Do not leave the oven unattended because they cook quickly.
  • Remove from pan and slice each eggroll in half.
  • Take out the toothpicks and serve with chilled dipping sauce.

3 flour tortillas, not large (LaTortilla Factory Brand Originals LowFat LowCarb)
1 ounce chicken, cooked and shredded
2 tablespoons black beans, canned
2 tablespoons corn, canned
1 ounce fat free cheese, shredded (your choice of kind)
1 tablespoon red chili pepper, diced
3/4 cup frozen spinach, thawed and drained
2 tablespoons avocados
2 tablespoons nonfat sour cream
1/2 teaspoon Hidden Valley Ranch dip, dry
1 tablespoon tomatoes, diced

Steps:

  • Preheat oven to 400 degrees.
  • Combine chicken, corn, cheese, chili pepper, and spinach in a microwaveable bowl.
  • Heat for 30 seconds in micro.
  • Warm tortillas in micro for 15 seconds.
  • On a clean, flat surface, lay out tortillas side-by-side.
  • Put 1/3 of chicken mix in the center of each tortilla.
  • To assemble each roll, fold the left and right sides in so no filling escapes during cooking, and roll up.
  • Place all 3 rolls seam side down on a baking pan that has been sprayed.
  • Bake 12 minutes, flipping 1/2 way through cooking.
  • While eggrolls are in the oven prepare dip.
  • Sauce:.
  • Combine sour cream, avocado, and dry dip mix in a small bowl until smooth.
  • Season to taste with pepper.
  • Top dip sauce with tomatoes before serving.
  • When eggrolls are done, allow to cool for a few minutes, then cup diagonally.

1 can (15 ounces) chili without beans
1 cup shredded cheddar cheese
2 tablespoons finely chopped onion
2 tablespoons finely chopped seeded jalapeno pepper
8 egg roll wrappers
Oil for deep-fat frying
Sour cream and guacamole, optional

Steps:

  • In a small bowl, combine the chili, cheese, onion and jalapeno. Place 1/4 cup chili mixture in the center of one egg roll wrapper. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Fold bottom corner over filling. Fold sides toward center over filling. Moisten remaining corner with water; roll up tightly to seal. Repeat., In an electric skillet, heat 1 in. of oil to 375°. Fry egg rolls until golden brown, 1-2 minutes on each side. Drain on paper towels. Serve with sour cream and guacamole if desired.

I love going to Chili's and eating these.... When I came across this recipe, I just had to post it here for safe keeping.... These are delicious....I'll be preparing these often...I do recall these having corn in them as well but they weren't listed in the ingredients on www.recipes/chef2chef.com where I found this.... They could be optional.

0.5 (12 ounce) can refried black beans
1 (15 ounce) can black beans (drained)
0.5 (10 ounce) package frozen spinach, defrosted and water squeezed out
2 medium fresh tomatoes, small dice
1/2 bunch fresh cilantro, chopped
4 green onions, finely chopped
1 (12 ounce) can whole kernel corn (optional)
1 teaspoon cumin
salt and pepper
3/4 cup cheddar cheese, grated
3/4 cup monterey jack cheese, grated
flour tortilla, the small size
vegetable oil (for frying)

Steps:

  • Mix all the ingredients together in a bowl.
  • Put a couple heaping tablespoons of the mixture in a snack size warmed flour tortilla and wrap like a burrito (very tightly) use toothpick to hold in place.
  • Fry in 1/2 deep oil in skillet on medium heat. Turn and brown other side.
  • Cut each one in half diagonally and serve on platter with ranch dip, salsa or whatever dip you like.

1 (16 ounce) package large egg roll wrappers (such as Nasoya®)
2 (7 ounce) cans whole fire-roasted mild green chiles (such as La Victoria®), or more to taste
1 pound shredded pepper Jack cheese
1 ½ cups canola oil for frying

Steps:

  • Place eggroll wraps on a work surface. Place 1 whole green chile diagonally on the wrap. Add about 2 tablespoons pepper Jack cheese, or enough to cover chile. Fold bottom corner over filling. Roll snugly halfway to cover filling. Fold in both sides snugly against filling to look like an envelope; moisten edges of last flap with a moistened finger. Roll wrap up and seal top corner using water again to moisten edges to make them stick. Lay flap-side down until ready to cook. Repeat with remaining ingredients.
  • Heat canola oil in a deep saucepan over medium heat to 350°F. Lower eggrolls with the flap side down carefully into the hot oil in batches. Fry until golden, turning occasionally, 2 to 3 minutes. Transfer to a plate lined with paper towels to drain. Repeat with remaining eggrolls.

A favorite from a local restaurant no longer in business. Not an authentic Mexican chile relleno, but a crispy, flaky version.

1 package egg roll wrap
3 cans whole green chilies
8 ounces cheese (Cheddar,jack or pepper jack cut in one ounce sticks)
1/2 box cornstarch
oil (for deep frying)

Steps:

  • Drain green chiles.
  • Sprinkle cornstarch on sheet pan.
  • Open up chile and place on egg roll wrapper with corner facing you.
  • Place cheese stick on chile and roll up, tucking in corners and moistening edges to seal.
  • Toss in cornstarch, dusting liberally.
  • (Can be made up to this point a day ahead. Leave in cornstarch. Cover and refrigerate.) Shake off excess cornstarch and deep fry in 350 oil to cover until lightly golden and cheese just starts to ooze out.
  • Drain on paper towels and keep warm in 250 oven.
  • Serve as a side dish or appetizer with your favorite Mexican meal.
  • Add your favorite condi- ments/sauces.

  • Season chicken with salt and black pepper. Brush the olive oil onto the chicken breast. Grill on a medium hot grill. Cook for 5 to 7 minutes on each side. Chop the chicken into small pieces. Set chicken to the side.
  • Saute red pepper until just tender. Add the green onion, corn, black beans, spinach, and pickled jalapenos to the mixture. Add taco seasoning. Heat through.
  • In a large pot add enough vegetable oil to cover the bottom of the pan by 4 inches. Heat to 350 degrees. Deep fry the egg rolls until they are golden brown. This should take 7 to 8 minutes. When golden remove from oil, and place on a wire rack.
  • Prepare a package of Ranch dressing mix with 1/2 cup mayonnaise, and 1/2 cup buttermilk. Add 1/4 cup of mashed avocado to the mixture. Pulse mixture in a blender until the dipping sauce is just blended.
