Got this from the Weight Watchers message boards, thought I would put this in to check nutritional info. Although I've never made it the reviews by others have been positive.

1 lb extra lean ground beef
1/2 cup brown sugar
2 tablespoons prepared mustard
1 medium onion, chopped
2 (14 ounce) cans kidney beans
2 cups low-sodium tomato juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon chili powder

Steps:

  • Brown ground beef and onion in non-stick skillet over medium heat.
  • Stir brown sugar and mustard into meat.
  • Combine all ingredients in crockpot. Cover, cook on high for 2 hours. If convenient, stir several times during cooking.

1/2 cup brown sugar
2 tablespoons yellow mustard
1 medium onion, chopped
1 garlic clove, finely chopped
1 stalk celery, diced
1 large carrot, diced
1 -2 bell pepper, diced
1 hot pepper
3 1/2 cups red kidney beans
1 (14 ounce) can no-salt-added diced tomatoes
1/4 teaspoon black pepper
2 teaspoons chili powder
3 teaspoons red pepper flakes
14 ounces water

Steps:

  • Brown ground beef, onion, and garlic in non-stick skillet over medium heat.
  • Stir brown sugar and mustard into meat.
  • Combine all ingredients in crockpot. Cover. Cook on high 6-8 hours or on low 2-4 hours. Stir several times during cooking, if possible.

6 ½ pounds ground beef
salt and ground black pepper to taste
3 (12 ounce) cans stewed tomatoes
1 (12 ounce) can tomato paste
2 ½ tablespoons chili powder
2 tablespoons white sugar
2 teaspoons garlic salt
1 tablespoon olive oil
1 bunch celery, chopped
1 ½ yellow onions, finely chopped
1 large green bell pepper, chopped
1 large red bell pepper, chopped
4 jalapeno peppers, seeded and chopped
2 tablespoons minced garlic
1 (29 ounce) can light red kidney beans, undrained
1 (29 ounce) can dark red kidney beans, undrained

Steps:

  • Heat a large nonstick skillet over medium-high heat. Season ground beef with salt and pepper; cook and stir in batches in the hot skillet until browned and crumbly, 5 to 7 minutes per batch. Remove meat to a colander to drain and then set aside in a large bowl. Drain and discard grease from skillet between batches.
  • While meat is cooking, combine stewed tomatoes, tomato paste, chili powder, sugar, and garlic salt in the bowl of a food processor; blend until smooth.
  • Heat olive oil in a 16-quart pot over medium-high heat. Add celery, onions, green pepper, red pepper, jalapeno peppers, and garlic. Cook and stir until vegetables have softened and onion has turned translucent, 7 to 10 minutes. Add reserved meat, stewed tomato puree, and undrained light and dark red kidney beans. Simmer for 1 hour.

2 tablespoons vegetable oil
2 onions, chopped
3 cloves garlic, minced
1 pound ground beef
¾ pound beef sirloin, cubed
1 (14.5 ounce) can peeled and diced tomatoes with juice
1 (12 fluid ounce) can or bottle dark beer
1 cup strong brewed coffee
2 (6 ounce) cans tomato paste
1 (14 ounce) can beef broth
½ cup packed brown sugar
3 ½ tablespoons chili powder
1 tablespoon cumin seeds
1 tablespoon unsweetened cocoa powder
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
1 teaspoon ground coriander
1 teaspoon salt
4 (15 ounce) cans kidney beans
4 fresh hot chile peppers, seeded and chopped

Steps:

  • Heat oil in a large saucepan over medium heat. Cook onions, garlic, ground beef and cubed sirloin in oil for 10 minutes, or until the meat is well browned and the onions are tender.
  • Mix in the diced tomatoes with juice, dark beer, coffee, tomato paste and beef broth. Season with brown sugar, chili powder, cumin, cocoa powder, oregano, cayenne pepper, coriander and salt. Stir in 2 cans of the beans and hot chile peppers. Reduce heat to low, and simmer for 1 1/2 hours.
  • Stir in the 2 remaining cans of beans, and simmer for another 30 minutes.

  • In the same skillet you used to brown the beef, add 1 tablespoon of vegetable oil and sauté peppers and onions on medium heat until tender. (If you have picky eaters, you can pulse the vegetables in a food processor first which is what I usually do.) Add the vegetables to the slow cooker. Stir in crushed tomatoes, tomato sauce, diced tomatoes, beans and all of the spices. Feel free to play with the spices to your liking. Stir very well. Put the lid on the slow cooker and cook on low for 5-6 hours. You can also set it to high and cook for 3-4 hours.
  • My Favorite Homemade Chili will stay fresh stored in an airtight container in the refrigerator for up to one week.
