4 to 5 cups of diced bread. *see tips above recipe
4 eggs
1 cup of unsweetened almond milk
1 teaspoon of vanilla
2 Honey Crisp Apples, diced (Granny Smith work as well)
1 tablespoon of light butter
3 tablespoons of brown sugar
1 teaspoon of cinnamon

Steps:

  • Cut up bread in chunks. Pour all the wet ingredients including brown sugar into a bowl with the bread in it and let it soak while the apples are cooking.
  • In a cast iron skillet, sautee the apples with the sugar, butter, and cinnamon until the apples are cooked through. In an 8X8 pan dump the soaked bread mixture into the pan and then cover it with the apples. Bake at 375 for 45. Serve with bacon, sausage, eggs or whatever you like.

Here's another make-it-the-night-before breakfast casserole. You don't need syrup with this one. Prep time does not include refrigerating overnight.

4 tablespoons butter
3 large apples, peeled and sliced thinly (I use Cortland or Empire)
3/4 cup brown sugar, packed
2 tablespoons water
1 teaspoon cinnamon
8 slices Italian bread, 1 inch thick
4 large eggs
1 1/4 cups milk
2 teaspoons vanilla extract

Steps:

  • Melt the butter in a large skillet and add apples.
  • Cook and stir for 5 minutes.
  • Add brown sugar, water, and cinnamon and continue to cook and stir for 10 minutes until apples are tender.
  • Spoon mixture into 13x9 baking dish.
  • Cover apples with bread slices, making sure to cover the entire surface.
  • Trim the bread to fit if you must.
  • Beat eggs until foamy, then beat in milk and vanilla.
  • Pour egg mixture over the bread slices.
  • Cover the dish with plastic wrap and refrigerate overnight.
  • In the morning, remove the dish from the refrigerator and let it stand while oven is preheated to 375 F.
  • Bake uncovered for 35 minutes, or until bread is golden and firm.
  • Let sit 10 minutes before serving.
  • To serve on a platter, run a knife around the edges of the casserole, place platter on top of casserole, and carefully flip.
  • To serve individually, use a spatula to remove serving, place serving plate on top of serving and carefully flip so apple side is up.

When you're ready to cook, pop the pan into the over. The French toast will come out moist, succulent, and adorned with a fragrant melange of apple and banana. Serve it just as is without any additional fruit, butter or syrup.

4 tart apples, such as McIntosh or Granny Smith
2 tablespoons fresh lemon juice
3 large ripe bananas
1/2 teaspoon ground cinnamon
3 tablespoons unsalted butter
1/2 cup (firmly packed) light brown sugar
1 tablespoons maple syrup
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
4 to 5 slices challah bread (1-inch thick)

Steps:

  • Preheat oven to 375 F.
  • Peel, core, and cut each apple into 3/4 inch thick wedges. Place the apple wedges in a large mixing bowl, and toss gently with the lemon juice to prevent discoloration. Peel the bananas, and slice them crosswise 3/4 inch thing. Add the bananas to the apples and toss to coat evenly with lemon juice. Sprinkle the cinnamon over the fruits and toss well to combine.

8 slices Texas toast thick presliced white bread
8 large eggs
½ cup granulated sugar
3 ½ cups whole milk
1 tablespoon pure vanilla extract

Steps:

  • Peel, core, and cut the apples into ¼-inch-thick slices. Heat the butter in a saute pan over medium heat until it starts to foam. Add the apples and cook them until tender, about 10 minutes. Turn off the heat and stir in the brown sugar, cinnamon, and nutmeg. Set aside.
  • Lightly toast the bread. Cut the toast slices in half to make triangles. Butter a 9-by-13-inch baking dish, and arrange the bread in two rows, overlapping in the dish.
  • Beat the eggs in a medium bowl, then whisk in the sugar, milk, and vanilla to make a custard. Pour the custard over the bread triangles, and spoon the apples over the top. Cover, and refrigerate overnight.

2 tsp water

8 cups day-old French bread (or day-old Challah, torn into chunks)

3 cups milk
3 tsp pure vanilla extract
1/2 tsp salt
4 Granny Smith apples (cored and sliced)
4 Tbsp unsalted butter
2/3 cup brown sugar
1 tsp cinnamon

Steps:

  • Combine brown sugar, flour, water and cinnamon in a medium bowl. Add softened butter and knead into the sugar mixture with your finger tips. When completely moistened, set aside.
  • Place rack in the center of the oven then preheat to 375 degrees.
  • Grease a 9" × 13" casserole dish then add shredded bread. Make sure to cover the entire bottom of the dish evenly then set aside.
  • In a medium-sized mixing bowl, whisk eggs then add milk, vanilla and salt. Pour mixture over bread then set aside.

1 15-ounce loaf challah bread, ends trimmed
5 large eggs
1 cup half-and-half
1 tablespoon granulated sugar
Pinch of salt
1/2 teaspoon pure vanilla extract
1/3 cup confectioners' sugar
1 stick unsalted butter
2 Golden Delicious apples, peeled and sliced into 1/2-inch-thick wedges
1/4 teaspoon ground cardamom
1/4 cup honey
1 tablespoon fresh lemon juice
3 tablespoons brandy

Steps:

  • Preheat the oven to 325˚ F. Line a large rimmed baking sheet with foil; set aside. Slice the challah into eight 3/4- to 1-inch-thick pieces. Whisk the eggs and half-and-half in a large shallow dish, then whisk in the granulated sugar, salt and vanilla until the sugar is dissolved and the custard is smooth. Put the confectioners' sugar in a fine-mesh strainer.
  • Add 4 slices of bread to the custard and let soak, turning once, until saturated but not falling apart, 1 1/2 to 2 minutes. Meanwhile, melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add the soaked bread, letting the excess custard drip off, then immediately dust with some of the confectioners' sugar. Cook until the bottom of the bread is golden, 2 to 3 minutes, then flip and dust with more confectioners' sugar. Continue to cook, flipping twice more and dusting with more confectioners' sugar each time, until both sides are browned and caramelized, about 5 more minutes; add 1/2 tablespoon more butter when the skillet is dry. Transfer to the baking sheet. Add 1 more tablespoon butter to the skillet and repeat with the remaining bread, custard and confectioners' sugar; add 1/2 tablespoon more butter to the skillet when needed. Transfer the baking sheet with all the French toast to the oven and bake until cooked through, about 10 minutes.
  • Meanwhile, wipe out the skillet and add 4 tablespoons butter; increase the heat to medium high. Add the apples and cardamom and cook, stirring, until softened and lightly browned in spots, 3 to 4 minutes. Add the honey, lemon juice and 2 tablespoons water and continue to cook until the sauce has thickened slightly, 2 to 3 minutes. Add the brandy and carefully tilt the pan or use a long lighter to ignite. Cook until the apples are glazed and soft but not falling apart, 1 to 2 more minutes. Remove from the heat, add the remaining 1 tablespoon butter and swirl to melt and slightly thicken the sauce.
  • Divide the French toast among plates. Spoon the apples and sauce on top.

Steps:

  • Lightly spray a 9x13 baking pan with cooking spray. Arrange 3/4 inch thick bread slices in the prepared baking dish, overlapping the bread.
  • In a medium bowl, whisk together the eggs, milk, cinnamon, vanilla, ginger, and nutmeg. Pour the milk mixture over the bread, making sure to pour between the slices of bread.   • Preheat the oven to 350°F and set an oven rack in the middle position.
  • Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and continue baking until puffed and golden, about 20 minutes more. Remove from the oven and, using a fine sieve, dust with the confectioners' sugar. Serve with maple syrup.

This Baked Apple Butter French Toast is the perfect fall or winter breakfast. It's got delicious flavors of apple cinnamon, in a great make a head breakfast. Perfect for any occasion.

14 oz loaf french bread
3 large eggs
1 cup milk
3/4 cup apple butter
2 TBS unsalted butter ((melted))
2 TBS molasses
1 tsp ground cinnamon
1 tsp ground cinnamon ((divided))
1/4 cup brown sugar
2 TBS unsalted butter ((melted))

Steps:

  • Cut loaf into slices, about 1 to 1 1/2 inches thick. Set aside.
  • Add the eggs, milk, apple butter, melted butter, molasses, and cinnamon to a small bowl. Stir them together.
  • Dip the bread slices into the egg and milk mixture, letting it soak for a couple seconds on each side. Lay the slices on a cookie sheet. Pour any extra egg mixture over the bread on the pan.
  • Cover the bread on the plan with plastic wrap and place it in the fridge overnight. (You can skip this step if you don't have the time).
  • Preheat the oven to 350 degrees Fahrenheit. Grease a 9inch square pan with butter or nonstick spray.
  • Mix the brown sugar and the cinnamon together.
  • Spread the butter over the top of the bread.
  • Sprinkle the brown sugar cinnamon mixture over the top of the bread slices.
  • Take the bread slices and place them upright in the prepared pan, stacking each of the slices until thy are all in the pan.
  • If there is any extra butter or brown sugar mixture, sprinkle it over the top of the bread.
  • Bake the french toast in the oven for 35 to 40 minutes, until hot throughout and the top is golden brown.
  • Serve french toast slices hot with your favorite syrup.

3 eggs
1 cup milk
1 teaspoon vanilla
10 slices day-old French bread or 8 slices day old cinnamon raisin bread, about 1/2 inch thick
2 tablespoons butter, melted
1 tablespoon sugar
1/8 teaspoon ground cinnamon

Steps:

  • Grease a 9 x 13 baking dish.
  • Spread pie filling in dish.
  • In a pie plate, beat the eggs, milk and vanilla.
  • Dip bread slices into the egg mixture for about a minute per slice, turning once.
  • Arrange 2 rows of bread on top of pie filing overlapping slices slightly.
  • Mix cinnamon and sugar.
  • Brush bread with melted butter and sprinkle with sugar mixture.
  • At this point, the dish may be refrigerated overnight, if needed.
  • Preheat oven to 350°.
  • Bake dish uncovered for 30-35 minutes or until slightly browned.
