2 (29 ounce) cans tomato sauce
2 (28 ounce) cans peeled and diced tomatoes
2 cups diced onion
1 tablespoon Italian seasoning
1 pound bacon, diced
2 pounds spicy sausage
3 pounds lean ground beef
1 (32 ounce) bottle hickory smoke barbeque sauce
½ cup chili powder
4 (15.25 ounce) cans kidney beans, undrained
2 (1 ounce) squares unsweetened chocolate, chopped

Steps:

  • In a large pot or Dutch oven over medium heat, combine tomato sauce, tomatoes, onion and Italian seasoning.
  • In a large skillet over medium heat, cook bacon until slightly crisp. Drain and stir into the pot.
  • In the same skillet over medium heat, cook sausage until brown. Drain and stir into the pot.
  • In the same skillet over medium heat, cook the beef until brown. Drain and stir into the pot.
  • Stir the barbeque sauce and chili powder into the pot; taste and adjust seasonings. Stir in the kidney beans and chocolate and simmer until flavors are well blended. Serve.

I have tried so many recipes for chili, and this one is by far the best. Rick is my chili taster expert so that is why I call it Rick's chili. I have so many chili recipes this is how I keep his fav separate, by naming it after him.

3 lbs ground chuck
2 tablespoons olive oil
1 whold onion, chopped
3 tablespoons chili powder
2 teaspoons oregano
2 tablespoons cocoa
2 teaspoons garlic powder
1/2 teaspoon red pepper flakes
2 beef bouillon cubes
2 teaspoons cayenne
1 teaspoon cumin
2 teaspoons Worcestershire sauce
6 drops hot pepper sauce
3 tablespoons vinegar
2 -3 corn tortillas, chopped in pieces
2 (10 ounce) cans rotel (mild,med,or hot)
1 (12 ounce) can beer (I sometimes use water)
salt and pepper
1 (14 ounce) can beans (any kind, I like pinto)

Steps:

  • Heat oil, add onion and cook until soft.
  • Add ground beef and brown.
  • Add everything else ,except beans.
  • Cook on simmer for 30 minute.
  • Drain beans and add to chili. Warm up and enjoy.

Basically I just measured the ingredients in the package and substituted fresh onion and garlic. I usually mix up several of these and store them in ziplock bags to use later.

2 lbs hamburger
15 ounces tomato sauce
15 ounces diced tomatoes
15 ounces water
2 tablespoons masa harina, dissolved
1 (16 ounce) can pinto beans
mixed spice
1/2 cup chili powder
1 teaspoon ground cumin
2 teaspoons dried oregano
2 teaspoons paprika
1 teaspoon salt
2 teaspoons onions, minced dried
1 teaspoon garlic, minced dried
1/2 teaspoon cayenne pepper

Steps:

  • Brown hamburger meat and drain off fat.
  • Return to heat, add onion and garlic, cook until onion is softened.
  • Add tomato sauce, tomatoes, and water.
  • Stir in dry ingredients except masa harina.
  • Cover and simmer for 30 minutes or longer for spicier flavor.
  • Add masa harina dissolved in water.
  • Stir in pinto beans.
  • Simmer another 20 minutes.

4 thick slices smoked bacon, cut into 1/2 inch pieces
2 cups rice, preferably medium grain
2 cups Mellow Red Chile Salsa
1 1/2 cups hot rich-tasting chicken broth or hot water
1/2 teaspoon salt
4 green onions, sliced crosswise 1/4 inch thick
1 pound medium-large (about 24) shrimp, peeled and deveined
1/2 cup chopped fresh cilantro

Steps:

  • Heat the oven to 350 degrees. In a 3-quart ovenproof saucepan, cook the bacon over medium heat, stirring, until crispy and brown, about 5 minutes. Remove with a slotted spoon, leaving behind the fat (you'll need a generous tablespoon to fry the rice). Set the crisp bacon aside. Add the rice to the pan and cook, stirring, until lightly browned, about 5 minutes.
  • Add the salsa and stir for 1 minute, then add the broth, salt and green onions. Bring to a boil, stir once, cover tightly and bake for 25 minutes. Remove from the oven.
  • Uncover and lay the shrimp on top of the rice mixture; re-cover and bake until the shrimp is opaque, 7 to 10 minutes. Sprinkle with the cilantro and crispy bacon, mix everything thoroughly with a fork and serve.

2 tablespoon vegetable or olive oil
3 dried guajillo chiles (about 3/4 ounce), stemmed, seeded, and torn into large pieces
15 ounces diced tomatoes, preferably fire-roasted
1 large white onion, cut into 1/4-inch pieces
2 cloves garlic, peeled
6 cups homemade or store-bought low-sodium chicken, or fish broth
4 medium red-skin boiling potatoes, or Yukon Gold potatoes (about 1 pound), cut into 8 pieces
2 large sprigs fresh epazote, optional
Coarse salt
1 pound mussels, scrubbed and debearded, or 2 clams, scrubbed
1 pound fish fillets, such as halibut, mahi-mahi, or catfish, cut into 1-inch cubes
1/2 cup chopped fresh cilantro, for garnish
1 lime, cut into 6 wedges, for serving

Steps:

  • Heat oil in a medium pot over medium heat. Add chiles; saute, being careful not to overtoast chiles, until aromatic and they have changed color slightly, 30 seconds to 1 minute. Using a slotted spoon, transfer chiles to a blender jar; add tomatoes and their juice to blender jar.
  • Add 2/3 of the onion and all the garlic to the pot. Cook, stirring frequently, over medium heat until golden, about 7 minutes. Transfer remaining onion to a strainer, and rinse under cold water; reserve for garnish. Using the same slotted spoon, transfer onions and garlic to blender; process until smooth.
  • Set a medium-mesh strainer over pot; using a wooden spoon, press tomato mixture through. Return pot to medium-high heat; cook, stirring frequently, until reduced and thick, about 6 minutes. Add broth, potatoes and epazote, if using; when mixture comes to a boil, reduce heat to medium-low and simmer until potatoes are tender, about 15 minutes. Season with salt.
  • Just before serving, increase heat to medium-high; add mussels and fish. Boil briskly until shells have opened, about 4 minutes.
  • To serve, ladle into large bowls. Sprinkle generously with cilantro and reserved onion. Serve immediately with limes.
