This crispy roasted chickpeas recipe is the perfect salty, crunchy healthy snack! They're spiced with chili powder and cumin.

2 15-ounce cans chickpeas (or 3 cups cooked chickpeas)
2 tablespoons olive oil
1 1/2 teaspoons chili powder
1 teaspoon black pepper
1 teaspoon cumin
1/2 teaspoon smoked paprika
3/4 teaspoon kosher salt

Steps:

  • Preheat oven to 375°F.
  • Rinse and drain the chickpeas, shaking off as much water as possible. Place them on a towel and pat gently to dry. Place another towel on top, then use your hands to rub the chickpeas and remove as many of the chickpea skins as possible. Do this once or twice; it should only take a few minutes and it's not necessary to remove all of the skins.
  • In a medium bowl, stir together chickpeas with the olive oil, chili powder, black pepper, cumin, smoked paprika, and kosher salt.
  • Pour chickpeas onto a parchment-lined baking sheet and spread them into a single layer. Bake for about 45 to 60 minutes until crispy and dry, shaking the pan every 15 minutes. The exact bake time depends on the chickpea brand and your oven, so watch closely in the final minutes, taste test, and remove when the chickpeas are browned but before they become very dark and hard. Allow to cool for at least 30 minutes before storing; the chickpeas will crisp up even more as they cool.
  • Allow to cool. Store in an airtight container in a dry cupboard for up to 1 week.

These little flavor bombs come together quickly. Use standard pantry ingredients to make 3 varieties that kids will love. The longer you dry the chickpeas before baking, the crisper they will be. If you have time, strain and rinse them, pat them dry, spread them on a baking sheet and refrigerate them, uncovered, overnight, before roasting.

Three 15-ounce cans chickpeas
3 tablespoons vegetable oil
3/4 teaspoon chili powder
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
1/4 teaspoon granulated garlic
1/4 teaspoon granulated onion

2 teaspoons distilled vinegar
Zest of 1 lime

Steps:

  • For the chickpeas: Preheat the oven to 400 degrees F.
  • Put a few layers of paper towels on your work surface. Strain and rinse the chickpeas in a colander, then shake off as much water as possible. Transfer them to the paper towels, top with more paper towels, then pat them gently and roll them around a bit to dry. Discard any papery skins that have peeled off or are about to. Slide the chickpeas onto a large rimmed baking sheet, and let stand at room temperature for at least 30 minutes.
  • Roast the chickpeas, stirring them occasionally to keep them from burning in spots, until a little shriveled and pretty crispy, about 45 minutes. Start checking them at around 35 minutes to make sure they are not burning.
  • Meanwhile, make the seasoning mixes. For the Taco Seasoning: Mix the chili powder, coriander, cumin, granulated garlic and onion and 1/2 teaspoon salt in a small bowl.
  • For the Vinegar-Lime Seasoning: Mix the vinegar, lime zest and 1/2 teaspoon salt in a small bowl.
  • For the Onion-Garlic Seasoning: Mix the granulated garlic and onion and 1/2 teaspoon salt in a small bowl.
  • When the chickpeas are done, divide them evenly among 3 medium bowls. Toss each batch with 1 tablespoon of the oil, then toss 1 batch with each of the seasoning mixes.
  • Return the chickpeas to the baking sheet, keeping each batch separate. Roast them for 3 minutes, just to cook the seasonings slightly. Let cool completely on the pan on a rack, about 30 minutes, then transfer to airtight containers. The chickpeas will keep for 1 day and will soften slightly as they sit.

2 tablespoons extra virgin olive oil

I make this a lot. Great as a snack, you can give it any flavour you like by using different spices. When I am in a hurry I make it from canned chickpeas, otherwise I use dried chickpeas. Cooking time does not include soaking and cooking dried chickpeas.

1 lb canned chick-peas, drained and rinsed or 1 1/2 cups dried garbanzo beans
1 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon chili powder

Steps:

  • If using dried chickpeas, soak in plenty of water for 6-24 hours.
  • Drain, cook in plenty water for about 1 1/2 hour.
  • Drain and proceed as follows.
  • Preheat oven to 425°F.
  • Grease baking sheet with the oil.
  • Mix salt pepper and chili powder (or whatever spices you want to use) in a big plastic bag.
  • Add chickpeas and shake until coated.
  • Place chickpeas on baking sheet.
  • Bake for about 30 minutes, or until golden and crisp.

30 oz Garbanzo Beans (rinsed & drained)

Steps:

  • Preheat the oven to 450°F.
  • In a large bowl, combine first five ingredients. Mix till well combined.
  • Drain and rinse the garbanzo beans. Pat the beans dry with a paper towel. This will ensure the chickpeas crisp up in the oven.
  • Add the garbanzo beans and toss until all the beans are well coated with the olive oil mixture.
  • Spread the beans on a baking sheet. Cook for 30 minutes or until the beans are brown and crisp, stirring once at the 15 minute mark. Ovens can vary so if your chickpeas are not crispy enough keep baking them until they are. They should be crunchy on the outside and soft in the center.
  • Let the beans cool before serving.

  • Preheat oven to 400°F (200°C).
  • Carefully dry the chickpeas. Removing the skins is optional and they will come off easily. The drier you get them, the crunchier they'll be!
  • In a medium bowl, add dried chickpeas, olive oil, cumin, chili powder, cayenne pepper and salt. Toss well to coat evenly.
  • Spread chickpeas out on a parchment paper-lined baking sheet.
  • Roast for 15-20 minutes.

2 cups canned chick-peas
paprika

black pepper (freshly ground is best)

Steps:

  • Preaheat the oven to 400 degrees.
  • Drain and rinse chic peas.
  • Place chic peas in a large bowl and add the olive oil.
  • Stir well ensuring that all the chic peas are evenly coated.
  • Sprinkle Paprika, black pepper,salt, and chili powder on the chic peas and mix. You can use as much or as little as you like. I am always more liberal with the paprika, and less liberal with the chili powder.
  • Place chic peas on a large baking pan covered with aluminum foil.
