QUICK JUNIOR MINT BROWNIES

You can use your favorite brownie recipe if you prefer. This is one of those "hurry up, I need to take a dessert" recipes for me! It is always well received. I use Pillsbury Traditional Fudge Brownie mix. To cut brownies smoothly, use a putty knife or a plastic knife.

Ingredients

19 1/2 ounces brownie mix
11 ounces Junior mints (the big box)

Steps:

Prepare brownie mix according to package directions in a 9x13 pan (they will be thin).
Remove baked brownies from oven and pour the Junior Mints over the brownies.
Cover pan tightly with aluminum foil and allow to sit for 10 minutes.
Remove foil and swirl melted mints all over the top of the brownies.
Allow to cool completely.
The mints will form a hard chocolate-mint frosting.

cooking spray
1/4 cup butter or 1/4 cup margarine
32 chocolate-covered mint candies (about 3 ounces)
1 cup flour
1/4 teaspoon baking soda
1/8 teaspoon salt
2/3 cup sugar
1/3 cup unsweetened cocoa
1 large egg
1 large egg white

Steps:

Preheat oven to 350°F.
Coat bottom of an 8-inch square baking pan with cooking spray.
Combine butter and mints in a 2 cup glass container; microwave at high 30 seconds or until soft.
Stir until smooth; set aside.
Combine flour, baking soda, and salt in a bowl, set aside.
Combine sugar, cocoa, egg, and egg white in a large bowl; beat at medium speed until well blended.
Add mint mixture and beat well.
Add flour mixture and beat at low speed just until blended.
Pour batter into pan and bake at 350°F for 20 minutes or until a toothpick inserted in center comes out clean.
Cool completely.

1/2 cup dark brown sugar
1/2 cup sugar
2 eggs
1/2 teaspoon peppermint extract
1/2 cup flour
1/3 cup dark cocoa
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup M & M mint chocolate candies
green candy sprinkles

Steps:

Preheat oven to 350 degrees.
Stir together melted butter and sugars.
Stir in eggs and peppermint extract.
Mix in flour, dark cocoa powder, baking powder and salt.
Stir in mint M&Ms.
Pour brownie batter into a greased brownie pan,.
Cover with green candy sprinkles.
Bake for 25-30 minutes until a knife inserted in the center comes out clean.
Cool and cut.
Enjoy!
