- In a non-stick skillet over medium heat, cook sausage and onions, stirring to crumble sausage. Once sausage is cooked through, drain off any fat and transfer the sausage and onions to your slow cooker.
- Drain the pineapple, reserving both the juice and the fruit separately. Add the juice to the slow cooker. Cover and store the fruit in the refrigerator (it will be added toward the end of cooking).
- Add tomatoes, black beans, tomato paste, chili powder, cumin and garlic to the slow cooker.
- Stir everything to combine.
- Cook on low (6-8 hours), adding reserved pineapple during last hour or two of cooking, or on high (4-5 hours), adding pineapple during last 1/2 hour - hour of cooking.
- Serve topped with cheese, sour cream and hot sauce, if desired.

GRILLED CHILE FLANK STEAK WITH SALSA

- In a bowl, combine the orange juice, chile powder, oregano and 1 teaspoon salt. Place steak in a large glass or ceramic container and coat all over with the marinade. Cover with plastic wrap and refrigerate at least 4 hours, preferably overnight.
- To make the salsa, light a grill, keeping a small area unlit for indirect heat. Grill pineapple over direct heat until charred on both sides, 3 to 5 minutes a side.
- Toss the tomatillos, onion, jalapeños and garlic with olive oil, remaining 1/2 teaspoon salt and black pepper. Place the garlic over indirect heat, cut-side down, and grill until charred and somewhat tender, 6 to 10 minutes (do not turn). Grill the onion, cut-side down over direct heat, until well charred, 3 to 5 minutes (do not turn). Grill the tomatillos and jalapeños over direct heat on both sides until they are tender and blistered, 1 to 3 minutes a side.
- When cool enough to handle, peel onion and coarsely chop it and tomatillos and jalapeños. Squeeze the garlic from the peel and mash with the flat side of a knife, then chop. In a bowl, combine vegetables, half the garlic and the pineapple. Toss in cilantro and season with a squeeze of lime juice and salt and pepper to taste.
- Grill steak until done to taste, about 2 to 4 minutes a side. Let rest for 10 minutes, then smear the remaining garlic on top. Carve steak against the grain and serve with the salsa and lime wedges.

- Remove top and bottom of pineapple.
- Peel. It is not possible to get all the eyes off without wasting a good deal of the pineapple so compromise on how many eyes you can stand to pick out at the table. Some pineapples have seeds in their eyes, just pop them out with the tip of a paring knife.
- Slice crosswise into rounds about 3/4" thick.
- Brush pineapple slices with soy sauce.
- Heat grill medium hot, brush grill with oil if necessary to prevent sticking.
- OR, heat lightly-greased skillet medium hot.
- Cook pineapple steaks about 5 minutes on each side or until lightly browned, brushing with soy sauce before turning.
- Some people eat the core, some do not.

- Heat a large Dutch oven until hot over high heat. Add the ground beef, and cook until barely pink, stirring constantly to break into small pieces. Stir in onions and bell pepper, cook until the meat has browned, and the onions have softened and turned translucent, about 5 minutes. - Prepare marinade by combining marinade ingredients in shallow dish.
- Add tuna and coat with marinade.
- Cover and refrigerate at least 1 hr or more, turning occasionally.
- Prepare pineapple sauce by puree in blender until smooth.
- Add bell pepper, vinegar, jalapeno chili, curry powder and ground pepper.

CHILI PINEAPPLE
Chili, salt and pineapple is just one of those weird food combinations that really works. The chef who introduced me to this idea, Lindsey Bareham, recommends serving this recipe with drinks before dinner. To really make the dish shine you need to have a chilli with a bit of kick in it, although it doesn't have be one of the really firey ones like a habanero or bird's eye.

- Put the gammon in a large pan and cover with water. Bring to the boil and skim any foam from the surface, then reduce to a simmer, cover and cook for 2 hrs. Leave to cool in the liquid in the pan for 30 mins.
- Meanwhile, make the glaze. Tip all the ingredients into a pan and bring to the boil. Reduce to a simmer and bubble for 10-12 mins, or until just syrupy. Drain the gammon (you can reserve the liquid for stock). The gammon and glaze can be prepared and chilled up to one day ahead.
- Heat the oven to 200C/180C fan/gas 6. Sit the gammon on a board and, using a sharp knife, cut away the skin, making sure you leave a good layer of fat. Score lines all over the fat. Transfer to a roasting tin and roast for 10 mins, then pour over some glaze. Continue to roast, basting with more glaze every 5-10 mins, until the gammon is sticky, about 40 mins. Don't worry if the ends get a little dark, as this adds flavour.
- Remove from the oven and rest for 15 mins. Carve and serve.

PINEAPPLE SWISS STEAK
A recipe from my Great Aunt Alta's collection. This is one she clipped from the Chicago Tribune and it had won the "$5 Favorite Recipe Prize," a weekly feature in the newspaper. I am not sure if she ever made this one or not, but I thought it sounded good enough to share. These days, I would use a few spoonfuls of olive oil to brown the steak instead of the bacon drippings originally called for.

- Set meat on a wax paper lined cutting board.
- Mix together flour with salt, paprika, and pepper.
- Cover meat with the seasoned flour; using a meat mallet, pound the steak, turning the meat over several times, until all of the flour has been pounded into the meat.
- Brown steak on both sides in bacon dripppings in a large skillet; drain off any excess fat.
- Drain pineapple, reserving juice.
- Add enough water to the pineapple juice to measure 2 cups liquid.
- Whisk together this liquid with the onion soup mix and then pour over the steak.
- Cover and simmer for about 2 hours, or until meat is tender.
- Top with pineapple rings, green pepper, and tomato wedges during the last 10 minutes of cooking time.
- Remove steak to a platter and keep warm.
- Whisk together the cornstarch and the 1/4 cup cold water, then add to the pan juices, stirring constantly until slightly thickened.
- Pour sauce over the steak and serve.
