CHILI LIME CRISPY BRUSSELS SPROUTS

3 cups brussels sprouts
2 tablespoons olive oil
salt and pepper
1/4 cup peanut, chopped
2 tablespoons olive oil
1/2 Medium yellow onion, finely diced
2 jalapeno peppers, finely diced
juice of 2 limes
1 heaping tablespoon agave
pinch of salt

Steps:

  • Preheat the oven to 400 degrees. Chop the stems off the brussels sprouts and cut them in half or thirds (depending on how big they are). Toss them in 2 tbsp of olive oil and a large pinch of salt and pepper. Spread over a baking sheet and roast for 30 minutes, tossing 2-3 times during baking. I added half of the chopped peanuts onto the baking sheet about halfway through as well to toast some of my peanuts.
  • In a large sauté pan, heat 2 tbsp of olive oil and add in diced yellow onion. Cook for a few minutes, then add in diced jalapeño and salt. Let the peppers and onions sauté until the onions are translucent and the peppers are very tender. At this point, stir in the juice of 2 limes (really get all that juice out of them!) and 1 heaping tablespoon of agave. You can also use honey if you have that on hand. Stir the sauce together and let it simmer for a few minutes as the flavors meld. If you want your sauce to be a little thinner, add in another tablespoon of olive oil. This will also add a little more richness!
  • Once the brussels are done, you have two options. You can toss the brussels in the chili lime sauce, then top with the additional chopped peanuts. The other option is plating the brussels individually, then topping each plate with the chili lime goodness and a sprinkle of peanuts. Both methods worked beautifully when I tried!

1 ¾ pounds Brussels sprouts, trimmed and halved
1 tablespoon olive oil, or more as needed
½ teaspoon garlic powder, or more to taste
1 pinch salt and freshly ground black pepper to taste
¼ cup Thai sweet chile sauce
2 teaspoons soy sauce

Steps:

  • Set a rack to the highest position and preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
  • Place Brussels sprouts on the prepared baking sheet, cut-sides down. Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper.
  • Roast in the preheated oven on the top shelf until golden brown, 15 to 17 minutes.
  • Stir together sweet chili sauce and soy sauce. Dab or brush sauce on top of Brussels sprouts and continue to roast until glaze is hot and bubbly, 5 to 7 minutes.

1 1/2 pounds Brussels sprouts
4 cloves garlic, chopped
Salt and fresh ground pepper
1/4 cup olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the larger Brussels sprouts into quarters; halve the smaller ones.
  • Place the Brussels sprouts in a large baking dish or on a baking sheet. Add the garlic, sprinkle with salt and pepper, and pour over the olive oil. Toss to coat. Transfer to the oven and roast for 35 minutes. Crank up the oven to 450 degrees F and roast until tender and the outer leaves are browned and crispy, another 10 minutes. Transfer to a serving dish. Serve immediately.

My husband said that brussels sprouts don't go well with mexican food, so I said I'd add lime to them to give them a mexican feel. He just laughed. Surprisingly we loved them! A zingy fun combination of flavors.

24 Brussels sprouts
1 tablespoon butter
1/2-1 teaspoon fresh lime juice
salt
pepper

Steps:

  • Wash and trim brussels sprouts. Cut each in half. Place sprouts in a bowl with a teaspoon of water and cover with plastic wrap (leave little hole at along edge of seal for air to escape).
  • Cook in microwave on high for 2-3 minutes depends on how tender you like your sprouts. They will cook a little more in the next step but not much.
  • Melt butter in skillet over medium high heat to high heat. (Might need more or less butter depending on the overall size of your sprouts). You can use something other than butter, but I do love the flavor of browned melt on the sprouts. I know it's bad for me!
  • Add sprouts - cook over medium high to high heat (stirring ever so often)till the sprouts start to get brown.
  • Once sprouts have the color of brown you like, add salt and pepper and lime juice to taste I suggest trying a half of teaspoon of lime and if you'd like more than add more. Be careful not to add too much right off the bat because the lime will overpower the sprouts.

4 cups Brussels sprouts, cleaned and a cross cut into the bottom of the stem
1 tablespoon margarine or 1 tablespoon butter
1/2 teaspoon fresh lemon juice
1/4 cup coarsely chopped salted cashews (use unsalted for low sodium diets)

Steps:

  • Depending on the size of the sprouts steam them for 5-8 minutes. They should still be slightly crisp.
  • Drain and pour into a fry pan where you have already melted the margarine. Add lemon juice and pepper. Cook until sprouts are heated through and glazed with the margarine.
  • Sprinkle with the nuts and serve.
