Garlic-Chile Vinegar image

This spicy-tangy-funky condiment is delicious on grilled fish, grain bowls, braises, and stews-basically anything that needs a touch of acid and heat.

Yield Makes about 2 cups

Number Of Ingredients 8

7 red or green Thai chiles
8 garlic cloves, thinly sliced
1 (1 1/2") piece ginger, peeled, thinly sliced
2 cups distilled white vinegar
1 Tbsp. sugar
1 1/2 tsp. kosher salt
Special Equipment
A heatproof 1-qt. jar

Steps:

  • Place chiles, garlic, and ginger in a jar. Bring vinegar, sugar, and salt to a boil in a medium saucepan, stirring to dissolve sugar and salt. Pour hot brine into jar; let cool 30 minutes. Cover and chill at least 4 hours before using.

  • Garlic-chile vinegar can be made 4 weeks ahead. Keep chilled.

You can store this all-purpose sweet-and-spicy vinegar in clean mason jars, but it is easier to keep it in repurposed glass bottles. Note that this recipe can be adjusted as you like-try using different chiles or other spices like bay leaf.

Number Of Ingredients 7

10 garlic cloves, peeled and sliced
1/4 cup (35 g) dried fruit, such as raisins, cherries, or mangos (optional)
5 whole bird's-eye chiles
1 (3-inch/7.5 cm) knob fresh ginger, scrubbed and minced
1 tablespoon whole black peppercorns
3 to 4 cups (720 ml to 1 L) white sugarcane vinegar
1/4 cup (60 ml) fish sauce

Steps:

  • Put the garlic, dried fruit, chiles, ginger, and peppercorns in a clean glass jar or bottle and cover with the vinegar and fish sauce. Loosely cover or cap the jar and let sit at room temperature in a dark place for 48 hours.
  • Transfer the jar to the refrigerator. The pinakurat will keep indefinitely, and the flavors will continue to develop over time.

4 cloves garlic
2 -3 cups distilled vinegar
2 teaspoons coarse seasoned sea salt (with cracked peppers and garlic)

Steps:

  • Pack chili peppers and garlic into a sterilized jar.
  • Add salt and vinegar.
  • Cork and give a shake.
  • Let sit in a cool, dry, dark place for flavor to be released about 3 weeks giving a shake occasionally.
  • Should last about 6 months.

  • Strain the vinegar through a fine sieve into a glass pitcher, reserving 2 chilies for garnish and discarding the rest, and pour it into 2 very clean 1/2 pint glass jars. Ad the reserved chilies and seal the jars with the lids.
