I adopted this recipe September 2006. It's great on it's own. For a lower fat version I used Smoked Pork Bones instead of the Meat. Great served with a Mexican entree and rice.

2 cups dry pinto beans
water
1/2 lb meat (Meats should include only one of the following ( Saltpork, Ham Hock)
1 large onion, Chopped
2 garlic cloves, minced
1 tablespoon red chili powder
1 tablespoon ground cumin
1/2 teaspoon oregano

Steps:

  • Add salt to taste if other than Salt Pork is used (optional).
  • Soak beans in water overnight.
  • Add salt pork, onion, garlic, chili powder, cumin and oregano; simmer on low heat at least 4 hours or water is absorbed and mixture is thick.

Beans are a part of everday eating in the Southwest. Frijoles are served either soupy in broth or mashed and fried (frijoles refritos- or refried beans). This mouthwatering recipe features both variations. Tip: If you want the beans extra spicy, do not remove the seeds from the chiles. Prep time does not include soaking. From Ladies Home Journal.

1 lb dry pinto beans
1 tablespoon olive oil
1/4 lb salt pork, rind removed or 1/4 lb sliced bacon, finely chopped
1 cup chopped onion
1 serrano chilies or 1 jalapeno chile, finely chopped
1 tablespoon finely chopped garlic
6 cups water
1/4 teaspoon cumin seed
2 1/2 teaspoons salt

Steps:

  • Soak beans according to package directions; drain.
  • Heat oil in stock pot or dutch oven over medium-high heat.
  • Add salt pork; cook 2 minutes, until browned.
  • Reduce heat to medium; add onions and chile and cook 4 minutes.
  • Add garlic and cook 1 minute.
  • Add drained beans, water and cumin seed.
  • Bring to a boil; reduce heat to medium-low, cover and simmer 30 minutes.
  • Add salt and continue to cook 25 to 35 minutes more, until tender.
  • (Can be made ahead. Cool. Transfer to large microwaveproof container. Cover and refrigerate overnight. To reheat: Microwave on high 10 minutes, stirring once after 5 minutes, until heated through.) Makes 7 cups.
  • Refries Beans (frijoles refritos):.
  • Heat 1 tablespoon olive oil or lard in large skillet over medium-high heat.
  • Add 1/2 cup finely chopped onion and cook 2 to 3 minutes, until browned.
  • Add 2 teaspoons finely chopped garlic and cook 30 seconds.
  • Add 2 cups cooked beans and 1/3 to 1/2 cup bean liquid to skilet.
  • (Or, microwave 2 cups refrigerated beans and 1/3 to 1/2 cup bean liquid on High, 2 to 3 minutes, until room temperature, and add to skillet).
  • Mash beans and liquid coarsely with back of wooden spoon or potato masher.
  • Cook 1 to 2 minutes more, untilheated through, addingmore bean liquid or water if needed.
  • Transfer beans to a food processor.
  • Process just until smooth.
  • Makes 2 cups (4 servings).

1 cup pinto beans or 1 cup pink beans
1 large onion, peeled and sliced
1 tablespoon chili powder (store bought, your own recipe or Chili Powder)
3 slices bacon, chopped
1 garlic clove, peeled and chopped
2 cups tomatoes, cooked (canned is fine)
2 onions, peeled and finely chopped
1 teaspoon chili powder (store bought, your own recipe or Chili Powder)
1/4 teaspoon salt

Steps:

  • Wash beans thoroughly.
  • Cover with cold water and let stand overnight.
  • Drain well and cover with boiling water; add onion and cook until tender.
  • Drain and chop beans fine; add salt, pepper and chili powder.
  • Brown bacon in skillet; add garlic, cook until golden and remove from fat.
  • Stir beans into fat and cook until brown; remove to platter.
  • In same skillet, cook tomatoes, onions, chili powder and salt until reduced to about half.
  • Mash or whirl in a food processor/blender; add more salt and chili powder to taste, reheat and pour over beans.

This chili is chock full - of meat, beans and flavor! And it feeds a crowd. If making vegan, don't add the ground beef. Substitute any canned beans for the ones listed, the more the merrier, whatever your pot will hold. If making a small batch use the cans of unseasoned "bean medley" and cut back on the other ingredients. If you're watching your sodium, drain and rinse the beans before adding, but if not, use undrained - excellent source of fiber.

1 large onion, diced
3 cloves garlic, minced
1 green pepper, seeded and chopped
2 (28 ounce) cans crushed tomatoes
1 (28 ounce) can diced tomatoes
1 (19 ounce) can black beans
1 (19 ounce) can chickpeas
1 (19 ounce) can pigeon peas
1 (19 ounce) can red kidney beans
1 (19 ounce) can lentils

Steps:

  • In a large pot, brown ground beef, breaking apart any large chunks.
  • Add in onion and garlic, fry until softened.
  • Add green pepper.
  • Add tomatoes, undrained.
  • Stir in all beans, undrained.
  • Add chili powder, black pepper.
  • Stirring once in awhile to prevent scorching, simmer for 2 hours.
  • Skim fat, if lean beef used this step shouldn't be necessary.
  • Taste and adjust seasoning.

1 small white onion, finely chopped
2 garlic cloves, finely chopped
19 ounces canned black beans or 1 1/2 cups cooked black beans
1/2 red chili, finely chopped
2 stems cilantro, chopped, for garnish

Steps:

  • Cook the onion in the butter until soft then add the garlic and chili and cook for a further minute.
  • Drain the beans, reserving the cooking liquid. Add the cooked beans, with a little of their cooking liquid and whiz in the food processor.
  • Remove beans to a bowl, stir in onion, garlic, and chili and season to taste.

Authentic and delicious. I learned this one from being married into a Hispanic family. Moms, Aunts, and Grandmothers had a few little twists upon it, but heres how it goes.

Number Of Ingredients 14

6 -8 cups water
1 lb pinto beans, soaked overnight
1 1/2 large white onions, chopped
4 garlic cloves, chopped
5 -8 slices bacon, chopped
1 tablespoon cumin
1 teaspoon oregano
1 teaspoon dried cilantro
3/4 teaspoon black pepper
1 lime, juice of
1/2 teaspoon dried poblano pepper (optional)
1 tablespoon bacon grease
1 tablespoon salt
1/2 cup cheese (mexican blend)

Steps:

  • Add beans to water and bring to a boil, then partially cover and bring to a simmer.
  • Chop the Onion, Garlic, and Bacon and add into the pot. Add the rest of the ingredients except Salt, Bacon grease and Cheese.
  • Simmer for 2 hours adding water if necessary to keep beans covered.
  • After the 2 hours add the Salt and Bacon grease. Correct seasoning with more cumin, oregano, and cilantro (don't add more salt yet). Simmer 30 more minutes.
  • Taste again and correct seasoning, this time you can add more salt, if desired.
  • Drain beans reserving 1 cup of cooking liquid. Put beans back into pot and mash with a potato masher or 'boat motor', adding the cooking liquid until you have desired consistency. Mix in the cheese and serve immediately.Garnish with more cheese and fresh cilantro if desired.
