Steps:
- Husk corn and remove silk.
- Plunge corn into large kettle of rapidly boiling water, cover and cook over high heat 8 to 10 minutes.
- Remove from water; drain well.
- Meanwhile melt butter in small saucepan and stir in remaining ingredients.
- Serve corn at once with chili butter.
GRILLED CORN ON THE COB WITH CHILI-LIME BUTTER AND COTIJA CHEESE

- Heat a grill to medium-high heat. Grill the corn in their husks until the husks start to blacken, about 3 minutes per side.
- Mix together the butter, chili powder, cayenne pepper, lime juice and some salt and black pepper in a bowl until incorporated.
- Peel back the corn husks, leaving on to use as handles while eating. Rub the chili-lime butter all over the corn. Garnish with the cotija cheese.

COPYCAT CHILI'S ROASTED STREET CORN RECIPE BY TASTY
The secret to Chili's roasted street corn is the charred exterior. Without a grill, Katie improvised and roasted the corn in the oven to achieve similar results, then slathered the cob with creamy, spicy mayo and topped it with Cotija cheese and cilantro. If you don't have Cotija, you can substitute grated Parmesan cheese.

- Preheat the oven to 425°F (220°C).
- Add the corn to a medium cast iron skillet. Drizzle with the olive oil and season with salt.
- Roast for 15-20 minutes, until charred on the outside and tender on the inside.
- In a small bowl, mix together the sour cream, mayonnaise, lime juice, salt, and chili powder.
- Remove corn from the oven and let cool slightly. Brush all over with the mayonnaise mixture, then sprinkle with the Cotija, cilantro, and more chili powder.

Yet another way to cook corn on the cob on the grill, but this is different, and very good. You won't need butter.

Steps:
- Wash the husked corn.
- Wrap one slice of bacon around each ear. It probably won't cover the entire ear, but be sure it goes from one end to the other. Sprinkle with chili powder to taste.
- Wrap the corn and bacon and chili powder in heavy aluminum foil and place over medium coals, or medium flame on gas grill.
- Cook approximately 20-25 minutes. Time will depend on the size of the ears of corn, and how fresh they are.

CHILI LIME CORN ON THE COB

- In a small bowl, combine butter, lime zest and juice, chili powder, garlic and salt and pepper and set aside.
- Carefully peel back husk from the ear, without detaching from the bottom, remove silk from corn, fold the husk back around the ears and soak in water for 30 to 45 minutes. Make sure to weigh down the ears so that they are fully submerged.
- Preheat a grill to medium, indirect heat. Remove ears from water, drain, open husk, dry ears with paper towel and spread butter mixture evenly on corn. Fold husk back over corn and grill, turning often, for 35 minutes (change heat to medium-high for the last ten minutes of grilling). Serve immediately.
GRILLED CHICKEN CHILI VERDE AND CORN ON THE COB WITH CHIPOTLE CREAM

- Heat broiler and grill pan to high.
- Place peppers under broiler and char on all sides, 15 minutes. Place the peppers in a paper sack or in a bowl and cover with plastic wrap. Let rest for about 5 minutes or until cool enough to handle. Peel, seed and chop peppers into large dice.
- While peppers cook, coat the chicken with a healthy drizzle of oil and season with salt and pepper. Grill chicken 3 minutes on each side. Chop into a bite size dice and reserve.
- Heat 2 tablespoons oil in a medium soup pot over medium-high heat. Add the jalapeno, onions and garlic and cook a few minutes while you process the tomatillos into a chunky salsa consistency in food processor. Add the tomatillos to onions and cook 5 to 6 minutes.
- While the tomatillos cook, in a small pot heat cream with chipotle and the zest of 1 lime over low heat. Reduce 10 minutes.
- Drizzle corn with oil and grill until charred all over, 6 to 7 minutes.
- Add chicken stock to chili. Stir in the chicken and season with cumin. Simmer 5 to 6 minutes and stir in peppers, 2 to 3 tablespoons of chopped cilantro and the mint. Turn heat off.
- Add the juice of 2 limes to the chili and stir.
- Serve each bowl of chili with a handful of lightly crushed chips on top and a sprinkle of cheese.
- Pour a ladle of chipotle cream over the corn and garnish with a little cilantro, chives and a sprinkle of cheese.

- Preheat BBQ to medium-high. Husk corn. Soak in water at least 5 minutes before grilling.
- Stir lime juice with chili powder, salt, and pepper in a small bowl. (We would suggest adding tequilla) Set aside.
- Place cobs on grill, using tongs to turn every 2 minutes until charred, about 10 min total. After each turn, brush the length of the cob with juice mixture. Transer to a platter. Serve when cool enough to handle.
CHILI AND CUMIN BUTTERED CORN ON THE COB
Using this technique will give you perfect corn on the cob every time!!! We are fortunate that we live in an area where we can get fresh corn on the cob....so, I go down to the farms and buy what I need for the night. As I am only feeding 3 these days, I ended up cutting this recipe in half. The rest of the un-cooked corn gets made into fresh corn salads for lunches. Yummy!!!

- Prepare grill.
- Combine butter and next 5 ingredients (through red pepper) in a small bowl; set aside.
- Pull husks back from corn; remove silks from corn.
- Place them on the grill. Brush butter mixture evenly over corn. Grill until nice grill marks appear on the cobs, 10 - 15 minutes.
- Serve with lime wedges.
- Note: Corn on the cob is best husked just before it goes on the grill. Cobs are like bananas -- they loose their freshness once the husk has been pulled back. When buying corn, do not even peek -- just run your fingers down the cobs to make sure that they are uniformed -- check there are no worm holes. Basically, you want to grill the corn enough to get nice grill marks -- anything more will dry out the cobs. Once they are cooked, take them off the grill and let them sit for 5 - 10 minutes, depending on how dense the cobs are. This way, they won't burn the mouth.
