FELIX'S CHILE CON QUESO
This recipe comes from an original created by Felix Mexican Restaurant in Houston, TX. This is my take on this classic dish, and by far my favorite recipe for con queso. NOTE: If you want to omit the oil, be sure to soften the onions in a couple of tablespoons of hot oil!

Steps:
- Combine oil, onion, tomatoes, cayenne, sugar, paprika, garlic powder, salt and pepper to a large saucepot.
- Simmer for 25 to 30 minutes over medium heat, stirring occasionally.
- Combine flour and water in a bowl and stir until mixture is smooth.
- Add to saucepot slowly, stirring constantly until smooth and thick.
- Add the cheese while continuing to stir.
- Cook until cheese has fully melted and the mixture is blended.
- Serve warm.
- Expect an oil-like red film to form above the cheese-- this is normal.
- Freezes well.

Steps:
- Brown the sausage and onion in a large nonstick skillet, breaking the sausage up as you go. Once browned, drain off some of the fat.
- Chop the cheese block into cubes and add along with the diced tomatoes and green chiles and chopped green chiles, juice and all.
- Cook over a low heat until it all starts coming together. Then stir in the diced jalapeno. Serve with chips.

Steps:
- Melt the butter in a medium saucepan over medium heat. Add the onions and jalapeños and cook, stirring frequently, for about 5 minutes until the onions are soft and translucent.
- Add the garlic and cook for 30 seconds more. Add the flour and cook, stirring constantly, for about 1 minute.
- Add half and half to the pot and whisk until the flour dissolves. Bring to a simmer and cook for a few minutes until thickened.
- Turn the heat down to low and gradually add the grated cheese, whisking and letting it melt, until all of the cheese is incorporated.
- Add the cumin, salt, and tomatoes. Taste and adjust seasoning if necessary; for more heat, add the optional red pepper flakes.
- Transfer to a bowl and serve hot with tortilla chips. Enjoy!

This is from the copy cat Top Secret Recipes 2 by Todd Wilbur. I read the other recipes and tried them and they do not compare to this recipe. One was missing a key ingredient for texture- milk and others did not have the spices in proportion. This one tastes like Chili's Restaurant. - In small skillet over medium heat, melt butter. Sauté the onion in the butter for 10 minutes, uncovered. Add the chili powder, tomatoes, jalapeños and simmer, stirring frequently, until slightly thickened. Add the cheese, stirring constantly. Cook, stirring constantly, until the cheese melts. Add the sour cream and cook for 1 minute more. Serve with soft or crispy tortillas.
- Yield: 2 to 3 Servings.
