This hearty chili has just the right level of spice. One bite and you'll see why it's Betty's Best!

1 lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
2 cloves garlic, crushed
1 tablespoon chili powder
1/2 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dried oregano leaves
1 teaspoon unsweetened baking cocoa
1/2 teaspoon red pepper sauce
2 cups Muir Glen™ organic diced tomatoes (from 28-oz can), undrained
1 can (19 oz) Progresso™ red kidney beans, undrained

Steps:

  • In 3-quart saucepan, cook beef, onion and garlic over medium-high heat about 8 minutes, stirring occasionally, until beef is brown; drain.
  • Stir in remaining ingredients except beans. Heat to boiling. Reduce heat to low; cover and simmer 1 hour, stirring occasionally.
  • Stir in beans. Heat to boiling. Reduce heat to low; simmer uncovered about 20 minutes, stirring occasionally, until desired thickness.

This recipe came from my Pillsbury Cookbook. This has been my favorite way to eat chili since 1995. The recipe listed here includes my modifications. When in season, I have substituted the green chilis with a habenero and another time with a habenero plus 2 tabasco peppers. Both of these, especially the latter, made it a HOT chili.

1 lb ground beef
1 medium onion, chopped
3/4 cup water
1 green pepper, chopped
2 tablespoons chili powder
1/4 teaspoon black pepper, freshly ground
1/4 teaspoon hot pepper sauce
1 (28 ounce) can whole tomatoes, undrained and cut up
1 (10 3/4 ounce) can condensed tomato soup
1 (6 ounce) can tomato paste
1 (4 ounce) can green chilies, chopped and undrained
1 (15 1/2 ounce) can kidney beans, drained and rinsed

Steps:

  • Sautee ground beef with onion; drain.
  • In a large pot, combine ground beef mixture and remaining ingredients, except for the kidney beens.
  • Bring to a boil and reduce heat.
  • Cover and simmer for 1 1/2 - 2 hours, stirring occassionally. You can also cook this in a crock pot for 5-6 hours on low.
  • Add kidney beans and simmer until thoroughly heated.

2 medium onions, chopped (about 1 cup)
1 cup chopped green pepper
1 (28 ounce) can tomatoes
1 (8 ounce) can tomato sauce
2 teaspoons chili powder
1 teaspoon salt
1/8 teaspoon red cayenne pepper
1/8 teaspoon paprika
1 (15 1/2 ounce) can kidney beans, drained

Steps:

  • Cook and stir ground beef, onion and green pepper in large skillet, until meat is brown and onion is tender.
  • Drain off fat.
  • Stir in remaining ingredients except kidney beans.
  • Heat to boiling.
  • Reduce heat; cover and simmer 2 hours, stirring occasionally (or cook uncovered about 45 minutes).
  • Stir in beans; heat.
  • Serves 4 or 5 (about 1 cup each).

1 lb lean ground beef
1 (29 ounce) can kidney beans
1 (14 1/2 ounce) can Italian stewed tomatoes
1 (14 1/2 ounce) can tomato sauce
1 (8 ounce) jar mild salsa or 1 (8 ounce) jar hot salsa
1 onion, chopped
1 green pepper, chopped
1 garlic clove, minced
1/2 teaspoon paprika
1 teaspoon Worcestershire sauce
1 tablespoon chili powder
1/8 teaspoon cayenne
salt

Steps:

  • Brown beef with onion& green pepper.
  • Drain off grease.
  • Drain juice off kidney beans.
  • Place everything in large kettle and simmer 2-3 hours.
  • Stirring occasionally.

1 large onion, chopped

1 (28 ounce) can diced tomatoes, undrained

1 (15 ounce) can kidney beans, rinsed and drained

Steps:

  • Cook beef in skillet over medium heat until browned; drain.
  • Mix beef and remaining ingredients except beans in 3 1/2 - 6quart slow cooker.
  • Cover and cook on low heat setting 6 to 8 hours (or high heat setting 3 to 4 hours) or until onion is tender.
  • Stir in beans. Cover and cook on high heat setting 15 to 20 minutes or until slightly thickened.
