I just recently have discovered my love for green chilies. Paired with some cheese or bread or meat...GOOD EATS! I thought this would be a good way to add a little spice to the meal, but not burn up my tongue. This bread makes a great appetizer/snack or addition to a Tex-Mex meal.

2 (8 count) cans homestyle jumbo refrigerated buttermilk biscuits
1 cup shredded colby-monterey jack cheese
1 cup shredded cheddar cheese
1 (4 ounce) can chopped green chilies, drained

Steps:

  • Preheat the oven to 350 degrees. Spray a 9x13 pan. Separate the biscuits into 16 pieces. Cut each biscuit into 6 pieces. Mix the cheeses, chilies, and biscuit pieces in a bowl and pour into the pan.
  • Bake 25-30 minutes or until biscuits are just starting to brown. Let stand 10 minutes.

This is a very tasty appetizer! It would also be great served alongside a bowl of your favorite soup. Next time I make this I'm going to try it with sliced jalapenos on top for an extra kick!

1 Loaf French bread
1/2 lb Butter
1 lb Grated Monterey Jack and cheddar cheeses
2 can(s) Chunk white chicken
8 oz Chunky red medium/hot salsa like Herdez

Steps:

  • 1. Slice fresh French bread loaf in half lengthwise.
  • 2. Grate cheeses together, shred the chicken, and mix together with softened butter and salsa.
  • 3. Spread very chunky mixture on cut sides of the loaf, place separately on a cookie sheet.
  • 4. Bake 350 degrees until cheese has melted and serve hot and bubbly, sliced about 2 inches wide on a wooden cutting board.

2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1 cup cheddar cheese, shredded
1 (4 ounce) can green chilies, well drained and chopped
1 cup milk
1 tablespoon vinegar
1 tablespoon vegetable oil
1 egg, beaten

Steps:

  • Preheat oven to 350°F
  • Grease a pie plate 8- inch pie plate.
  • Mix flour, baking powder, salt, and baking soda; toss with cheese and chilies,
  • Stir in remaining ingredients just until flour is just moistened.
  • The batter will be lumpy.
  • Pour into pie plate.
  • Bake until golden brown and a toothpick inserted in the center comes out clean, about 50 minutes.
