SHRIMP-STUFFED CHILES

Shrimp-Stuffed Chiles image

Provided by Marcela Valladolid

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 11

Vegetable oil
12 whole yellow chiles (guero chiles), or Hungarian wax or large jalapeno
1 tablespoons olive oil
3/4 cup finely chopped white onion
1/2 cup finely chopped red bell pepper
1 pound medium shrimp, peeled, deveined and finely chopped
Salt and freshly ground black pepper
1/2 cucumber, peeled and thinly sliced
1/2 red onion, thinly sliced
3/4 cup low-sodium soy sauce
1/4 cup fresh lime juice, from about 2 large limes

Steps:

  • Pour enough vegetable oil in a large heavy skillet to come 1/2 inch up the sides of the pan and heat to 350 degrees F.
  • Add the chiles and fry, turning frequently, until golden brown on all sides, about 8 minutes. Transfer to paper towels to drain and set aside.
  • In a separate pan, heat the olive oil. Add the chopped onions and saute until golden brown, about 8 minutes. Add the bell peppers and saute until soft, about 5 minutes. Add the shrimp and cook until pink and cooked through, about 8 minutes. Season the filling with salt and pepper.
  • Cut a lengthwise slit in each chile and carefully scoop out the seeds, leaving the stem intact. (For milder heat, carefully cut out the ribs.) Divide the shrimp filling among the chiles, then close, overlapping the sides of each opening slightly.
  • On a shallow serving platter, toss the cucumber, sliced onions, soy sauce and lime juice and spread out on the platter. Arrange the chiles, seam-side up, on top of the salad and serve.

SHRIMP STUFFED PEPPERS

Shrimp Stuffed Peppers image

Shrimp Stuffed Peppers - Sweet red bell peppers stuffed with a creamy creole shrimp rice dressing is a fabulous meal and great for company too!

Provided by Jaren

Categories     Main Dish

Number Of Ingredients 15

6 cups cooked rice (I cooked 2 cups raw rice)
1 1/2 tbsp olive oil
1/2 stick butter
1 1/2 to 2 lbs. medium sized shrimp (peeled/deveined), seasoned with 1 1/2 tsp creole seasoning
1 large yellow onion, chopped
1 green bell pepper, chopped
2 cloves garlic, chopped
Creole seasoning to taste
1 15 oz. can diced tomatoes
1 8 oz. can tomato sauce
1 10 oz. can cream of mushroom
6 red bell peppers
1 to 2 cups water
1 to 1 1/2 cups shredded cheese
Fresh chopped parsley

Steps:

  • Begin by making rice so it can be ready when shrimp sauce is ready.
  • Slice 6 red bell peppers in half. Remove ribs and seeds. Rinse peppers. Place them in boiling water to parboil them for about 5 minutes. Remove from water and arrange in a large casserole dish.
  • Heat olive oil and butter in a large pot over medium high heat.
  • Season shrimp with creole seasoning.
  • Add shrimp and saute until shrimp are cooked through about 3 to 5 minutes. (At this point, it may be necessary to discard extra liquid out of the pot. A little liquid is fine to leave. My shrimp were just defrosted so I had a lot of liquid to take out).
  • Remove shrimp to a bowl.
  • Add a little more oil to pot, and saute onion, green peppers, and garlic. Season with a little more creole seasoning. Saute until onions are clear about 10 minutes.
  • Reduce heat to medium low and add diced tomatoes, tomato sauce, cream of mushroom and stir.
  • Add shrimp back to sauce and stir.
  • Stir in cooked rice. Turn off heat.
  • Fill each pepper with a good amount of shrimp mixture.
  • Pour about 1//2 cup of water into the bottom of casserole dish (or both dishes if using two). This is to allow the peppers and the rest of the dish to continue to steam a little.
  • Cover casserole dish with foil and seal tightly.
  • Bake at 350 for 25 minutes.
  • Remove from oven. Carefully remove foil (be careful of steam) and top with a little shredded cheese and fresh parsley.

Yield 4 servings

Number Of Ingredients 12

3 tablespoons sugar
1/3 cup fresh lime juice (from 4 limes), plus wedges for serving
2 large cloves garlic, grated
1 red Thai bird or serrano chile pepper, thinly sliced (remove seeds for less heat)
1 tablespoon fish sauce
2 tablespoons vegetable oil
12 ounces large shrimp (about 16), peeled and deveined, tails intact
1 8.8-ounce package thin rice noodles
1/2 head red leaf lettuce, thinly sliced
2 large carrots, grated (about 2 cups)
1/2 English cucumber, halved lengthwise and thinly sliced
1 cup roughly chopped fresh cilantro and/or mint

  • Add the rice noodles to the boiling water and cook as the label directs; drain, rinse with cold water and shake off the excess liquid. Add the noodles to the bowl with the remaining dressing; add the lettuce, carrots, cucumber and herbs and toss to coat.

JUMBO SHRIMP STUFFED WITH CILANTRO AND CHILES

Jumbo Shrimp Stuffed with Cilantro and Chiles image

Provided by Food Network Kitchen

Categories     appetizer

Time 55m

Yield 4 servings

Number Of Ingredients 10

8 jumbo shrimp, in the shell (about 1 1/4 pounds)
3 sprigs fresh thyme, leaves stripped
Juice of 2 limes (about 1/4 cup)
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt, plus additional for seasoning
Freshly ground black pepper
1 clove garlic, chopped
1/2 large jalapeno, with seeds
2 scallions (white and green parts)
1 cup coarsely chopped fresh cilantro leaves

Steps:

  • Prepare an outdoor grill with a medium-high fire. Without removing the shells, slit about 3/4 of the way through the shrimp down the ridged back and remove the vein that runs down the center. Rinse and pat the shrimp dry. Whisk thyme leaves, lime juice, 1 tablespoon of the olive oil, 1/2 teaspoon of the salt and black pepper, to taste, in a shallow nonreactive bowl or dish. Lay the shrimp cut side down in the lime mixture and refrigerate for 30 minutes.
  • In a food processor, pulse the garlic, jalapeno, scallions, remaining 1 tablespoon olive oil and remaining 1/2 teaspoon salt to make a coarse paste. Add the cilantro and pulse just enough to incorporate into the mixture. Spoon the mixture into the opening in the shrimp and close the shrimp. Grill the shrimp shell side down (to keep filling from falling out) for 3 minutes. Turn to the other shell side, cover, and grill another 2 minutes or until the shrimp turn pink and are slightly firm to the touch. Sprinkle with salt and serve.
  • Jumbo shrimp in the shell can be a knife and fork sort of deal unless you're outside and it's summer and you are feeling very relaxed. Serve these with lots of napkins if your crowd is the peel-and-eat type.

Categories     dinner, weekday, main course

Time 45m

Yield Serves four

Number Of Ingredients 17

7 ounces thin rice stick noodles 1/2 of a 14-ounce package, preferably brown rice noodles
1/2 cup chicken or vegetable broth
1 tablespoon soy sauce (more to taste)
2 tablespoons Shao Hsing rice wine or dry sherry
1/2 teaspoon sugar
1 teaspoon cornstarch
2 tablespoons minced ginger
1 tablespoon minced garlic
1 jalapeño, seeded and minced
3/4 pound medium shrimp, shelled and deveined
Salt to taste
2 tablespoons peanut oil or canola oil
1 large red bell pepper, cut in 2-inch julienne
1 large yellow bell pepper, cut in 2-inch julienne
4 scallions, minced
1/2 cup chopped cilantro
2 teaspoons dark sesame oil

Steps:

  • Place the noodles in a large bowl and cover with warm water. Soak for at least 20 minutes until soft. Drain in a colander. With kitchen scissors, cut into 6-inch lengths. Set aside within reach of your wok or pan. Combine the broth, 2 teaspoons of the soy sauce and 1 tablespoon of the rice wine or sherry and sugar in a small bowl. Combine the garlic, 1 tablespoon of the ginger and the minced jalapeño in another bowl. Have all of your ingredients within reach of your wok or pan.
  • In a medium bowl, combine the cornstarch, 1 teaspoon soy sauce, 1 tablespoon rice wine or sherry and 1 tablespoon of the ginger. Stir together well. Lightly salt the shrimp and toss with the cornstarch mixture until coated.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates from the surface within a second or two. Add the oil to the sides of the pan and tilt the pan to distribute. Add the garlic, ginger and jalapeño, and stir-fry for no more than 10 seconds. Add the peppers and stir-fry for one minute. Add the shrimp along with any liquid in the bowl, and stir-fry for two to three minutes until pink and opaque. Add the scallions, drained noodles and the broth mixture, and stir-fry for one to two minutes until the noodles are just tender. Add the cilantro and stir-fry for another 30 seconds. Stir in the sesame oil, remove from the heat and serve, with more soy sauce if desired.

..........Click the Edit tab and select this entry to follow preparation instructions.
Rice Salad without the garnishes
36 medium raw shrimp, peeled, tails removed, and deveined
3 teaspoons olive oil
1/4 teaspoon crushed red pepper
2 teaspoons Worcestershire sauce
1/4 teaspoon salt, or to taste
3 medium plum tomatoes, cored, seeded, and finely diced
1/3 cup sour cream, diluted with 2 teaspoons milk

Steps:

  • 1. Prepare chiles. Then, using a small sharp knife, cut a slit lengthwise from the stem end to within 1 inch of the tip of each chile. Keep the stems intact. Make a short crosswise cut at the top of the lengthwise cut, to form a "T" and carefully cut out the seed pod. Rinse the chiles under running water to wash out the remaining seeds. Pat the chiles dry with paper towels. Cover and refrigerate. 2. Prepare the rice salad, but do not include the radishes, olives, or lettuce. Cover the salad and refrigerate. 3. Put the shrimp into a large bowl. Add the oil, red pepper, Worcestershire, and salt. Let stand about 20 minutes. Heat a large nonstick skillet over medium heat and cook the shrimp, turning, until curled and cooked through, 5 to 6 minutes. Transfer the shrimp to a bowl. When cool enough to handle, set aside 12 whole shrimp for the final presentation. Cut the rest of the shrimp into 1/2-inch pieces. Mix the small shrimp pieces with the rice salad. 4. To assemble, stuff each chile with about 1/2 cup of the rice and shrimp salad. Reshape the chiles to their original form with the opening on top showing some of the filling. Place the stuffed chiles in the center of 4 serving plates. Spoon the remaining rice along one side of each chile, but do not cover any of the green. Garnish each plate with the diced tomatoes. Drizzle the tops of the chiles with sour cream. Place 3 of the reserved whole shrimp on top of each stuffed chile. Serve cold. From "1,000 Mexican Recipes." Copyright 2001 by Marge Poore.
