CHICKPEAS WITH MINT, SCALLIONS AND CILANTRO

Chickpeas With Mint, Scallions and Cilantro image

Chickpeas (garbanzos) always taste better cooked from scratch, but unlike other beans, you do have to soak them overnight. Then it's a simple matter of simmering for about 45 minutes. Cooked chickpeas will keep up to 5 days stored in their cooking liquid in the refrigerator. The combination of warm beans and cool herbs makes a great side dish.

Provided by David Tanis

Categories     easy, salads and dressings, side dish

Time 1h

Yield About 6 cups cooked chickpeas

Number Of Ingredients 10

1 pound chickpeas, soaked overnight in cold water
1 onion, halved, with each half stuck with 2 cloves
2 bay leaves
1 2-inch piece cinnamon stick
Salt
2 tablespoons olive oil
1/2 teaspoon turmeric, or a small pinch of crumbled saffron
2 tablespoons chopped mint
1/4 cup chopped scallions
1/4 cup chopped cilantro leaves and tender stems

Steps:

  • Pour soaked chickpeas into a colander to drain and put in a medium-size soup pot. Add water to cover by 1 inch and bring to a boil. Add onion, bay leaves, cinnamon and 2 teaspoons salt. Skim off and discard any rising foam. Lower heat and simmer gently for about 45 minutes, until tender. (May prepare in advance and reheat).
  • Drain hot chickpeas (reserve broth for another purpose, such as soup) and discard onion and aromatics. Return chickpeas to pot and add olive oil and turmeric or saffron, stirring to distribute. Taste for salt and adjust.
  • Transfer to a warm serving bowl. Mix mint, scallions and cilantro together and sprinkle over top. Serve warm.

SPICY CHICKPEAS W/ BEEF AND CILANTRO

Spicy Chickpeas W/ Beef and Cilantro image

Make and share this Spicy Chickpeas W/ Beef and Cilantro recipe from Food.com.

Provided by Ang11002

Categories     Curries

Time 45m

Yield 4 serving(s)

Number Of Ingredients 9

1/2 lb lean ground beef
1 teaspoon olive oil
2 (15 ounce) cans chickpeas, drained (save water)
1 cup chicken broth
1 1/2 teaspoons ground cumin
1/2 teaspoon ground dried chipotle powder
1 1/2 teaspoons minced garlic
salt & freshly ground black pepper
1/2 cup finely chopped cilantro

Steps:

  • Drain chickpeas into a colander, saving liquid. Add chicken stock to chickpea liquid to make 2 cups, set aside.
  • Heat 1 teaspoons olive oil in a large deep frying pan over high heat, then add ground beef, crumbling into pieces as you put it into the pan, and use your favorite seasoning for ground beef. Stir and break up the meat while you start to brown it, about 3 minutes. When meat is broken up, add chickpeas. Keeping heat high, saute meat and chickpeas together until meat is well browned and chickpeas are quite brown, about 10 minutes. (If the mixture starts to stick turn down the heat a tiny bit.).
  • Add ground cumin, ground chipotle chile powder, and minced garlic and cook a minute more. Add reserved cooking liquid (with added stock if needed to make 2 cups). Scrape the bottom of the pan with turner to loosen any browned bits, season with salt and pepper, then reduce heat and simmer until most of the liquid has evaporated, about 5-10 minutes.
  • Turn off heat, stir in chopped cilantro and 1 T olive oil. Taste to see if it needs more salt or pepper, then serve hot.

VEGAN CHICKPEAS WITH KALE AND CILANTRO-LIME

Vegan Chickpeas with Kale and Cilantro-Lime image

Don't let the curry mislead you into believing that it will overwhelm the plate! All the ingredients add a touch of the Near East, blended with a southwestern flair. Double this recipe for a main course. As posted, it is an appetizer for 4.

Provided by Marskall01

Categories     Appetizers and Snacks     Beans and Peas

Time 25m

Yield 4

Number Of Ingredients 10

2 cups chopped kale
1 (15 ounce) can chickpeas (garbanzo beans), drained and rinsed
½ cup frozen fava beans, thawed
1 tablespoon olive oil
½ onion, chopped
1 small jalapeno pepper, minced
¼ cup minced cilantro
¼ teaspoon curry powder
1 small lime, halved
¼ teaspoon coarse salt

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add kale, cover, and steam until tender, about 3 minutes. Rinse kale under cold water and drain.
  • Mix chickpeas and fava beans together in a bowl.
  • Heat olive oil in a skillet over medium heat; cook and stir onion and jalapeno pepper until softened, about 5 minutes. Add chickpeas mixture, kale, cilantro, and curry powder to onion mixture; cook and stir until heated through, 2 to 3 minutes.
  • Squeeze 1 lime half over chickpeas mixture. Spoon mixture onto 4 serving plates. Cut remaining lime half into 4 wedges and squeeze over each serving; season with salt.

CURRIED CHICKPEAS WITH CILANTRO

Curried Chickpeas With Cilantro image

I love this recipe. It is my own creation, informed by dal and curry recipes I've made in the past. It's pretty easy, and great if you are craving Indian food. You can use canned or cooked chickpeas and adjust the spices to your preferences. The cooking time doesn't include the time required to soak and cook dry chickpeas. I don't like to use salt in dishes, but you may choose to add salt to enhance the flavor.

Provided by MissLinguist

Categories     Curries

Time 15m

Yield 4 serving(s)

Number Of Ingredients 13

2 tablespoons olive oil (may substitute coconut oil, or any vegetable oil)
1 medium onion, chopped
1 garlic clove, chopped
1/8 teaspoon ground cayenne pepper
1/4 teaspoon ground cardamom
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1/2 teaspoon curry powder
1/2 teaspoon ground turmeric
1 1/2 teaspoons brown mustard seeds
1/2 cup fresh cilantro, chopped
4 tablespoons water
4 cups chickpeas, cooked (2-15.5 oz. cans)

Steps:

  • If you are using dry chickpeas, soak and cook them, according to the package directions. (This requires overnight soaking, followed by boiling for about 1 hour.) If you are using canned chickpeas, drain and rinse them.
  • In a 2 quart saucepan, saute onion, garlic, pepper, cardamom, cumin, corriander, curry powder, tumeric, and mustard seeds in oil. (If the spices start to stick and burn on the bottom of the pan, add a little water.).
  • When the onions are soft, add the cilantro. Adding water as necessary, stir constantly to cook the cilantro, about 1-2 minutes.
  • Add chickpeas. Stir and cook until heated through, about 1-2 minutes.
  • Serve over brown rice.
