BAKED SESAME CHICKEN

Open, sesame! This is a family favorite. For a variation, you can also use bone-in chicken pieces, but be sure to increase the cooking time in this case. Tip: To toast sesame seeds, place in a baking dish in a heated oven for about 5 to 10 minutes, watching carefully not to burn.

2 tablespoons soy sauce
¼ cup toasted sesame seeds
2 tablespoons all-purpose flour
¼ teaspoon salt
1 pinch ground black pepper
4 skinless, boneless chicken breast halves
2 tablespoons butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place soy sauce in a 9x13 inch baking dish. On a piece of wax paper, mix together the sesame seeds, flour, salt and pepper. Dip the chicken pieces in the soy sauce to coat, then dredge in the sesame seed mixture. Arrange in baking dish in a single layer, then drizzle with melted butter.
  • Bake at 400 degrees F (200 degrees C) for approximately 40 minutes, or until chicken is cooked through and tender and juices run clear. Baste with drippings once during cooking time. Garnish with extra sesame seeds if desired, and serve.

This recipe really satisfies my craving for Chinese food. I serve it over rice with a side of steamed vegetables. The sauce makes just enough to glaze the chicken. I usually double or even triple the sauce recipe to have enough to pour over our rice and veggies. It is a nice low-fat alternative to the restaurant-style Sesame Chicken.

6 boneless skinless chicken breast halves, pat dry with paper towels
1/2 cup honey
1/2 cup low sodium soy sauce
1 cup water
2 tablespoons cornstarch
1/2-1 teaspoon ground ginger (fresh is better)
1/2-1 teaspoon red pepper flakes (optional)
1 tablespoon toasted sesame seeds

Steps:

  • Cut chicken breast into 1 inch strips or bite size pieces.
  • Heat a large non-stick skillet that has been sprayed with Pam, over medium-high heat.
  • Cook chicken for about 6 minutes or until no longer pink.
  • Mix together honey, soy sauce, water, corn starch, ginger and red pepper flakes.
  • Whisk until no corn starch lumps appear.
  • Pour sauce mixture into skillet with chicken.
  • Cook until sauce thickens slightly.
  • You can add more water if sauce is too thick.
  • Sprinkle with sesame seeds.
  • Cover and simmer for 10 minutes or until chicken starts to soak up the sauce.
  • Note: Since originally posting this recipe, I have tried some of the suggestions others have made. I do like it with a bit of sesame oil (be careful not to get too much, just a few drops at the end of cooking is good enough for me, but you might like more), fresh ginger is also good if you have it on hand. I have tried it with garlic and it is good that way also. I have also found that it is good with shrimp and pork. Basically what I am trying to say is, the original recipe is just a simple, quick and healthy meal I came up with when I was craving Chinese food. I thought it turned out really great and wanted to share it. I'm happy that so many of you have enjoyed it. For those of you that didn't care for it, I hope you can find one that suits your fancy some where else.

1 lb boneless skinless chicken breast
1/2 cup peanut oil
1 tablespoon peanut oil
1 tablespoon white sesame seeds
1 egg white
1/2 teaspoon salt
2 teaspoons cornflour
2 teaspoons dark soy sauce
2 teaspoons chinese cider vinegar
2 teaspoons chili bean sauce
2 teaspoons sesame oil
2 teaspoons sugar
1 tablespoon dry sherry
1 teaspoon whole szechuan peppercorns, roasted
1 1/2 tablespoons finely chopped spring onions

Steps:

  • Cut the chicken breasts into strips around 7.5cm/3 inch long and mix with all the marinade ingredients in a small bowl, refrigerate for about 20 minutes
  • Heat a wok or frying pan over a high heat and then add the 1/2 cup peanut oil, when it is very hot, remove the wok from the heat and immediately add the chicken pieces, stirring vigorously to prevent them sticking.
  • After about 2 minutes, when the chicken pieces turn white, quickly drain them in a stainless-steel colander set in a bowl. Discard the oil.
  • Wipe the wok clean, heat it until it is very hot, then add the tablespoon of oil. Immediately add the sesame seeds and stir-fry for 30 seconds or until they are slightly brown
  • Add all the sauce ingredients and bring to the boil.
  • Return the cooked chicken to the pan and stir-fry the mixture for another 2 minutes, coating the pieces thoroughly with the sauce and sesame seeds.

1/3 cup toasted sesame seeds and All- purpose flour
Salt and cayenne to taste
3 pound chicken, cut into serving pieces
1 tablespoon unsalted butter
2 tablespoons vegetable oil
3 tablespoons flour
1 1/2 cups chicken stock, heated
1/2 cup heavy cream or milk
1 tablespoon dijon mustard, or to taste
fresh bread crumbs to taste

Steps:

  • Preheat the oven to 350 F. In a shallow dish combine the sesame seeds, flour, salt and cayenne to taste. Dredge the chicken in the mixture, gently patting the coating onto it. In a large skillet, heat the butter and oil over moderate heat until hot. Add the chicken and cook it for 4 minutes on each side, or until golden brown. Transfer chicken to a platter. Add the flour to the skillet and cook it for 2 minutes. Add the chicken stock and cream and bring the mixture to a boil, stirring. Simmer the mixture until lightly thickened and season with the mustard and salt and pepper to taste. Arrange the chicken in a buttered baking dish, spoon the sauce over it and sprinkle with the bread crumbs. Bake, covered, with foil, for 30 minutes. Uncover and bake for 10 to 15 minutes more.

6 boneless, skinless chicken breast halves, cut into thin strips

Steps:

  • Coat a stove-top grill pan or griddle with cooking spray and set over medium-high heat to preheat.
  • In a shallow dish, whisk together soy sauce, honey, molasses, ginger, garlic, liquid smoke seasoning, and black pepper. Add chicken strips and turn to coat. Place chicken on hot grill and cook 5 to 7 minutes, until cooked through, turning once during cooking. Remove chicken from grill pan and roll in toasted sesame seeds.

3 tablespoons sesame seeds, toasted
1-1/2 teaspoons rubbed sage
1 teaspoon dried thyme
1/2 teaspoon paprika
6 boneless skinless chicken breast halves or 12 boneless skinless chicken thighs
1/2 cup milk
Oil for deep-fat frying
2 cup chicken broth
Salt and pepper to taste

1 tbsp vegetable oil
1 ½ tbsp sriracha chilli sauce (see tip below)
2 tsp grated ginger
2 tbsp clear honey
2 tbsp rice vinegar
240g pack Tenderstem broccoli
1 tbsp sesame seeds , toasted

Steps:

  • Slice each chicken breast lengthways into 2 thin pieces. Rub with the oil and season on both sides. Heat a grill pan and cook the pieces for 2-3 mins each side.
  • While the chicken is cooking, mix the chilli sauce, ginger, honey and vinegar with a little seasoning in a small bowl. Brush over the chicken as it cooks - wait until it is grilled on one side first before brushing, or it will burn.

¼ teaspoon baking soda

1 cup chicken broth

Simply delicious. Even my picky kids approved! I used black sesame seeds and it works out well. I think the white sesame seeds would offer a better color contrast in the dish. Frankly, I don't think the water chestnuts would be missed. Take care not to over cook, the veggies will be mushy and the chicken tough. Chicken tenders are a childhood favorite of mine. They have always been my weakness, but why not try switching it up? During my travels to Italy, I picked up this great variation at Culinary Institute of Bologna (CIBO). A variety of seeds are added to the breading, so it packs a punch of great flavor. You can even make it gluten free if you want. All you need to do is replace the flour and panko with their gluten-free counterparts. Superbowl, snack, salad, lunch or dinner--these tenders make the cut.

1 1/2 teaspoons garlic powder
1 1/2 teaspoons paprika
1 1/2 teaspoons kosher salt
1 teaspoon black pepper
1 cup all-purpose flour
2 large eggs
2 cups panko breadcrumbs
1/4 cup pumpkin seeds, chopped
2 tablespoons poppy seeds
2 tablespoons sesame seeds
2 pounds organic chicken breasts, cut into 1- to 1 1/2-inch strips
2 cups sunflower oil or safflower oil, for frying

Steps:

  • Line a large baking sheet with parchment paper. Line a separate large baking sheet with paper towels and a wire rack.
  • Combine the garlic powder, paprika, salt and black pepper in a small bowl. Mix the flour with 2 teaspoons of the seasoned salt in a large shallow bowl and set aside. Whisk the egg in a large shallow bowl and set aside. Combine the panko, pumpkin seeds, poppy seeds and sesame seeds in a large shallow bowl and set aside.
  • Sprinkle both sides of the chicken with the remaining 1 1/2 teaspoons seasoned salt.
  • Heat the oil in a large skillet over medium-high heat (it should be about 1 inch deep) until it registers 375 degrees F on a deep-fry thermometer.
  • While the oil is heating up, bread the chicken in small batches. First, place the chicken in the flour mixture, coating each tender evenly and dusting off any excess flour. Then place the chicken in the egg wash, making sure each tender is covered. Place the tenders in the panko mixture, rolling the chicken so each tender has a nice coating. Be sure not to overcrowd the bowls with chicken, as you want each tender properly coated. Place the breaded chicken on the parchment-lined baking sheet.
  • Cook the chicken until golden brown and an internal temperature of 165 degrees F, 4 to 6 minutes on each side. If the chicken is browning too fast, lower the heat. Place the cooked chicken on the wire rack and serve hot.
