These are probably close to my best chicken wings yet; everyone that had them loves them!

Steps:
- Preheat smoker to 200 degrees F (95 degrees C) and add 1 cup wood chips to start the smoke rolling.
- Liberally coat chicken wings with about 2 tablespoons Cajun seasoning.
- Place wings directly on the grate in the smoker or in an aluminum pan with holes to allow airflow. Add more wood chips as needed to continue smoke. Smoke wings for 2 hours.
- Combine butter, garlic, and 2 tablespoons Cajun seasoning in a large saucepan over medium-low heat; cook and stir until butter is melted, about 1 minute. Stir hot sauce into butter mixture; simmer, stirring occasionally, until sauce has thickened, about 30 minutes.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Preheat grill to 375 degrees F (190 degrees C).
- Cook wings, 10 to 12 at a time, in the deep fryer until no wings are longer pink in the center and are lightly browned on the outside, 5 to 7 minutes. Remove wings from the oil with a slotted spoon, letting excess oil drain from the wings.
- Place cooked wings on a baking sheet and liberally coat each wing with hot sauce mixture.
- Place coated wings directly onto the grates of the preheated grill; cook until sauce has caramelized and wings are crisp, 2 to 3 minutes per side.

- Place the wings in greased large baking pans. Bake at 375° for 40-50 minutes or until juices run clear. , Meanwhile, in a Dutch oven, combine the cornstarch, soy sauce and water until smooth. SMOKY RUBBED CHICKEN WINGS WITH HONEY, BOURBON, AND MOLASSES SAUCE
I order chicken wings anytime I see them on a menu, and this recipe will make you realize just how incredible they can be. After a lot of trial and error, when I finally got the rub right I felt like I had unlocked a magic puzzle. There are a lot of ingredients in the rub, but they provide a perfect mix of sugar and spice, and the bourbon-spiked sauce coats the wings in yet another layer of bold flavor. If you prefer the grill to the oven, grill the wings over medium indirect heat (about 400 degrees F) for about 40 minutes, until they are almost done, before adding the sauce.

- To make the sauce: Bring all of the ingredients to a boil in a medium saucepan over medium-high heat, whisking often. Reduce the heat to medium-low and simmer, whisking occasionally to discourage scorching, until lightly thickened and reduced by about one-quarter, about 30 minutes. Remove from the heat and let cool. (The sauce can be covered and refrigerated for up to 2 weeks.)
- To make the rub: Whisk all of the ingredients together in a small bowl.
- Put the wingettes in a very large bowl and toss with the rub. Divide the wingettes among two 1-gallon self-sealing plastic bags, seal, and refrigerate for at least 4 hours or overnight.
- Position racks in the top third and center of the oven and preheat the oven to 400 degrees F. Line two 18-by-13-inch half-sheet pans with aluminum foil for easy cleanup.
- Spread the wingettes out on the baking sheets, spacing them well apart. Roast the wingettes, turning the wings over and switching the positions of the baking sheets from top to bottom and front to back halfway through cooking, until the wings are crisp and cooked through, about 40 minutes. During the last 5 minutes, brush the wings with some of the sauce. Remove the wings from the oven.
- Position a broiler about 8 inches from the source of heat and preheat the broiler on high. In batches, broil the wings to caramelize the sauce in spots, about 3 minutes. Serve hot, with any leftover sauce passed on the side.

- For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
- Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.

- Preheat the oven to 120C/250F and place a rack on a large baking tray.
- Cut each wing at the joint so you have a mini wing and a drumette. Dry the wings with paper towels, then place in a large bowl and add the baking powder, salt and pepper. Toss to combine. Note - it's important to dry the wings first so they only get a light coating. Discard any remaining coating once tossed together.
- Place in a single layer on the rack, skin side up. It's fine for them to be touching. Place on the lower shelf of the oven for 30 minutes.
- After 30 minutes, turn the oven up to 220c (425f), rotate the tray and place on a higher shelf (higher middle) in the oven for 45-50 minutes until the wings are golden and crispy. Take out of the oven to cool slightly.
- Place all of the sauce ingredients into a saucepan, stir and bring to the boil. Allow to bubble for 5-10 minutes until the sauce reduces and thickens slightly (it will thicken more as it cools). Turn off the heat.
- Place the wings in a large bowl and very carefully pour over the sticky sauce (be careful, it will VERY hot). Toss to combine, then serve topped with chopped spring onions.

Remove the chicken from the oven and baste with the remaining sauce. Place back under the broiler and cook for 2-3 minutes or until the chicken is tender and no longer pink. Remove from the oven and baste with any extra sauce before putting it on a serving plate. Serve the chicken wings with blue cheese dressing. Enjoy.
