EASY CHICKEN STROMBOLI
You can add any cooked vegetable (mushrooms, red pepper, green pepper, spinach) to this to add more flavor. The cooking and prep time includes the time you need to let the dough rise. Enjoy!

Steps:
- Let dough rise in warm place until doubled in size.
- Roll dough out on a floured surface. Shape into a 12"x14" Rectangle. Place diced chicken, cheddar cheese, mozzarella cheese, chopped onion, 1/4 cup Parmesan Cheese and sprinkle with Garlic Salt, leaving 1/2" without the filling so you can pinch and seal it closed. Roll up jelly roll style (start with long side) and fold ends and pinch to seal. Place onto a greased baking sheet seam side down. Cover and let rise 45 minutes.
- Beat egg and add water to make an egg wash. Brush egg wash onto dough and sprinkle with remaining Parmesan Cheese and sprinkle with Garlic Salt. Bake at 350 for 30 minutes or until it is golden brown.

Steps:
- Preheat oven to 400 degrees.
- Unroll dough onto greased baking sheet.
- Set aside.
- Mix soup, mixed vegetables and chicken or turkey.
- Spread soup mixture down center of dough.
- To with cheese.
- Fold long sides of dough over filling and pinch and seal.
- Pinch short sides to seal.
- Bake 20 minutes or until golden brown.
- Slice and serve.

ROASTED VEGETABLE STROMBOLI
This I just have to pass on. Sometimes you find a recipe in a magazine that is just great, and this was one. It was in a Family Circle or Womens Day 4 or 5 years ago and have searched for the original article with no luck. Well, I changed a few ingredients to my liking, added a different cheese and used fresh herbs but basically the same concept. It was so good. I am always looking for a hearty vegetarian dish that even "meat" eaters will love. If you like ... a little marinara on the side but I find it so good you don't even need that. And for the meat eaters ... you can always add some capicola ham or pepperoni or even just salami if you want. A great dinner. Make a nice salad and you got pizza night with a twist.

- Vegetables -- Mix all vegetables with the olive oil, salt and pepper, dried oregano, red pepper flakes and roast in a 375F oven. Roast for 20 minutes. Just until the vegetables begin to brown and they are tender. Remove and let cool. Then mix in the fresh basil and parsley.
- Pizza dough -- roll out into 2 large rectangles about 18x12. I just roll mine on the counter with a little corn meal or flour on the counter so it doesn't stick.
- Make the sandwiches -- Spread the vegetables over the two pizza crusts. Make sure to leave a 1" border around all sides. Top with the Parmesan and mozzarella and roll up. You are just making a log.
- Baking -- I like to bake mine on a cookie sheet lined with parchment paper so it doesn't stick. Make sure you slice 4 slices in the top of the stromboli before cooking and to brush with olive oil to make a golden brown crust. Bake at 400F for 30 minutes until golden brown and a light crunchy crust.
- Let the stromboli rest a few minutes (5 minutes) before slicing. I cut each stromboli into 4 pieces. If you want, serve with some marinara on the side. Just enjoy!
- Make a nice soup or salad and this is a great hearty dinner.
CHICKEN PARMESAN STROMBOLI

- Prepare chicken tenders according to package directions. Preheat oven to 400°. Unroll pizza dough onto a parchment-lined baking sheet. Layer with mozzarella, chicken tenders and Parmesan to within 1/2 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seam to seal and tuck ends under. Combine olive oil, garlic powder, oregano and pepper; brush over top., Bake until crust is dark golden brown, 18-22 minutes. Let stand 5 minutes before slicing. Serve with marinara sauce for dipping.

- Preheat oven to 400 degrees and line a baking sheet with parchment paper. Place a large skillet over medium heat and melt the butter. Add the onion, celery salt and pepper and cook for about 4 minutes until the veggies begin to soften. Add garlic and cook an additional 30 seconds.
- Sprinkle flour over the veggies and stir to dissolve the flour. Allow the mixture to cook for about 30 seconds before adding the chicken broth. Stir to dissolve the flour in the chicken broth and bring the mixture to a bubble. Cook the filling on medium heat for about 3 minutes stirring constantly until nicely thickened.
- Remove from heat and stir in cream or milk. Add the frozen vegetables and stir to incorporate. Once the veggies have been mixed in, fold in the chicken and taste for seasoning. At this point, the filling mixture should be at least room temperature if not slightly cool. If the mixture is still even slightly warm, place it in the refrigerator to cool while you roll out the pastry. It is imperative that the filling be cool before filling the pastry!
- On a lightly-floured surface, roll the puff pastry into a rectangle about 14" wide by 10" deep. With the wide end toward you, spread the filling evenly over the dough, leaving a 1" border along the sides and a 2" border on top and bottom. Sprinkle the filling with shredded cheese, brush the edges with egg wash and roll the dough into a cylinder. Transfer the roll to the prepared baking dish with the seam on the bottom.
