HOW TO COOK MOUTH WATERING CHICKEN USING A NUWAVE OVEN

Steps:
- Place your chicken on the wire rack of the NuWave oven. Lightly brush the top side with olive oil. Sprinkle on your favorite spices. We used salt, pepper, garlic powder, onion powder and cayenne pepper.
- Replace the dome. Select COOK TIME, punch in 12 minutes and hit start.
- After your 12 minutes are up, turn your chicken over and repeat the seasoning and cooking process to the other side.
- After cooking for 12 minutes on each side, your chicken should be cooked through, juicy and ready to serve. However, if you wish to add barbecue sauce like I did, go ahead and brush that on after the original cook time.
- Brush on your favorite BBQ sauce and cook for an additional 3 minutes. Flip the chicken and coat the other side in sauce and cook for 3 minutes more. This is not an absolute necessity, but I like the way the NuWave bakes the sauce onto the chicken and gives it a crispy coating.

- Brush 2 tortillas with oil.
- Place tortillas, oil side down, on baking sheet.
- Sprinkle each with 1/4 of cheese, half of chicken, half of cilantro, and 1/4 of cheese, leaving 3/4-inch border.
- Top each with 1 tortilla, pressing to adhere; brush top with oil.
- Bake quesadillas until filling is heated through and edges begin to crisp, about 2~3 minutes.
- Using large metal spatula, turn each over and bake until bottom is crisp, about 1~2 minutes.
- Transfer quesadillas to plates. Cut into wedges and serve.

CHICKEN TORTILLA NUWAVE OVEN
My husband loves Mexican food. We recently purchased a new wave oven for convenient and fast dinners, since we work long hours. New wave ovens cooks from frozen to done within minutes, so am always trying to find creative recipes where I do not have to thaw out my meat first. This can be topped with sour cream or peppers. Also, my husband said it may be good with all the extra toppings stuffed into a burrito.

Steps:
- Spray new wave oven (pie pan) with Pam; toast strips of tortilla 3 minutes on 4-inch rack, 1 tortilla shell at a time, take out, break them in half and set strips aside.
- Cook chicken breasts using 4-inch rack, 8 minutes on each side depending on thickness of meat.
- Mix chicken, Rotel, picante and green onions in skillet, bring to a boil,cover and let simmer 10 minutes or until onions are tender.
- Pour tomato mixture into pie pan.
- Gently stir in tortilla strips.
- Top with cheese, heat until cheese is melted or desired golden toasted 4 minutes.

- Beat the egg and then combine it with 1 cup water in a small, shallow bowl.
- Stir.
- Combine the flour, salt, Accent, pepper, onion powder and garlic powder in a one gallon size zip lock bag.
- Pound each of the breast filets with a mallet until about 1/4-inch thick.
- Trim each breast filet into bite sized pieces.
- Coat each piece with the flour mixture by shaking in the zip lock bag.
- Remove and dredge each nugget in the egg mixture, coating well.
- Then return each nugget to the flour/seasoning mixture.
- Shake to coat. Put nuggets, bag and all, in the freezer for at least an hour.
- Cover and refrigerate remaining egg mixture.
- After freezing, repeat the "coating" process.
- Air fry the chicken Nuggets on Nu Wave Oven on 4" rack on HI for about 2 ~3 minutes per side (total 5 ~ 6 minutes) or until light brown and crispy.
- Serve with your favorite dipping sauce.

BAKED CHICKEN AND STUFFING - NUWAVE/FLAVORWAVE OVENS
This is a tried an true family recipe. You never have left overs when you make this one! It is warm and conforting, with out all the work. One of my top recipes, easy! People will think you spent all day making this. Make a great presenation. You can add 2 slices of cheese to each breast. However, I lighten it up with one slice. Still has good flavor.

- In a baking pan: place chicken & add slice of cheese to each breast.
- In seperate bowl combine chicken soup and 1/4 water. Place soup mixture on top of chicken and cheese.
- Then crunch up stuffing into small bits, add to chicken.
- The last step is to add the butter over the top (drizzle). This way the stuffing gets moist and crunchy. (cover with foil for the first 15-20 minutes. Remove the last 10 - 15 minutes so top will cook.
- Bake on HI for 30-35 minutes.

- Tear bread into pieces and in a food processor pulse until finely ground.
- In a large bowl stir together 2 cups bread crumbs, Parmesan, sage, and salt and pepper to taste.
- Melt butter and stir in mustard and salt and pepper to taste.

NUWAVE DELUXE AIR FRIED CHICKEN

- 1. Place 4 thawed pieces of chicken in a Ziploc bag. Add one tablespoon of Ranch dressing mix(or other seasoning as desired) to bag and shake in order to coat chicken. Add 1/2 cup of low-fat buttermilk to Ziploc. Remove excess air and close bag. Let refrigerate overnight. (This step can be skipped if time is an issue. Skip to step 2.
- 2. When chicken is marinated, set up the dipping bowls.
- 1st Bowl-1 egg and one egg white (Whisked well).
- 2nd Bowl- 1/2 Cup Bread Crumbs mixed with 2 tablespoons of dry Ranch Dressing mix (or other seasoning) and 1/2 teaspoon of garlic salt.
- Spray the 4" rack (3" if using Elite) generously with cooking spray. This prevents the coating from sticking to rack.
- 3. Let milk drip off pieces and beginning one at a time, roll them in the egg mix. Once covered, move piece to breading bowl.
- 4. Put one piece at a time in breading bowl and shake around until well-covered.
- 5. Place chicken on 4" rack (3" if using Elite) with the main skin sides down. Spray chicken generously with butter cooking spray. This will allow the chicken to crisp up and keep crumbs from flying around in the oven.
- 6. Set for 15 minutes at Power Level High (350 degrees for Elite) and start. When done, flip pieces over and set for another 15 minutes at Power Level High. If you desire crispier chicken, set the Elite for 375 degrees.
- *It is important to remove the dome as soon as the timer beeps. This will keep the chicken from getting soggy from all of the steam.
NANCY'S CHICKEN TORTILLA SOUP
I developed this recipe after trying many varieties of Tortilla Soups in numerous Mexican restaurants around town (Austin, TX). I just couldn't find what I was looking for, so I made this up myself. It is my most requested dish from family and friends. I always make a batch when someone is under the weather and it has replaced chicken noodle as our ultimate comfort soup. Hope you enjoy!

- Place chicken pieces is large heavy bottom stock pot and add enough water to cover chicken. Add poultry seasoning, chicken boullion cube, salt, and pepper. Bring to boil and cook until chicken is tender and falls off the bone.
- Remove chicken and let cool. Skim fat from chicken broth that rises to top of pot and discard (optional).
- Return broth to a low simmer and add chopped veggies, can diced of tomatoes and green chiles, chili powder, cumin and sugar.
- Remove cooled chicken from the bone, coarsely chop or shred, and add to broth. Add more salt and pepper to taste and let simmer for about 1 hour.
- Add cilantro and stir to mix.
- To serve: Place a hand full of crumbled tortilla chips in bottom of individual serving bowl, ladle soup over tortillas, top with shredded cheese and avocado slices. Garnish with tortilla chips placed around the bowl and fresh cilantro sprig. Enjoy the comforting flavors of this delicious soup!

- In a large bowl, combine the chicken, chiles, broth, soups and onion; set aside. Layer half of the tortillas in a greased 13x9-in. baking dish, cutting to fit pan if desired. Top with half of the chicken mixture and half of the cheese. Repeat layers. , Bake, uncovered, at 350° for 30 minutes or until heated through. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°. If desired, serve with sour cream and green onions.
