1-Minute Keto Muffins Recipe image

The perfect quick keto bread is this 1-minute keto muffin in a mug. Grain free little snacks that can be made both sweet OR savoury depending on which flavours you decide to add.

Number Of Ingredients 4

1 eggs - medium
2 tsp coconut flour (or more depending on brand used)
pinch baking powder
pinch salt

Steps:

  • Grease a ramekin dish (or very large coffee mug) with coconut oil or butter.
  • Mix all the ingredients together with a fork to ensure it is lump free.
  • Cook the 1-minute keto muffin in the microwave on HIGH for 45 seconds - 1 minute. Alternatively, they can be baked in an oven, at 200C/400F for 12 minutes.
  • Cut in half and serve. (toasting or frying is optional)

A delightful low carb, grain and sugar free chai spiced muffin that's perfect with your mug of chai or coffee. Trim Healthy Mama friendly, too.

1 egg
2 Tbs almond meal
2 Tbs ground flax meal
1/2 tsp baking powder
pinch or two of sea salt
1/2-3/4 tsp chai spice blend (try my Homemade Chai Spice Blend
1 Tbs shredded coconut (unsweetened - I like this brand
1 Tbs coconut oil
splash of vanilla (learn how to make your own here
1 Tbs water
Stevia to taste, such as 2-4 "doonks" of THM Pure Stevia Extract or 1-2 tsp Pyure Organic Stevia
1 Tbs light cream cheese (1/3 less fat...Neufchatel)
1/2 tsp butter
1/2 tsp virgin coconut oil
You can use all butter or all coconut oil, just make it 1 tsp of whatever you use
splash of vanilla
Stevia to taste, I usually use a "doonk" of THM Pure Stevia Extract or 1/2 tsp of Pyure Organic Stevia

Steps:

  • In a mug (or bowl), whisk the egg well with a fork.
  • Add remaining ingredients and mix well. If your coconut oil is hard, that's ok...just mush it with the fork while you're mixing.
  • Microwave for one minute. Depending on your microwave, you may need to cook for an additional 30 seconds.[b] I have found that using coconut in these Muffin in a Mug recipes typically requires a bit longer cooking time[/b]. I cook for one minute and check then add more time if needed.
  • If you'd rather not use a microwave, you can bake in a ramekin or other oven safe dish at 350 for 10-15 minutes. Or, use a waffle iron!
  • Top your Coconut Chai Muffin in a Mug with my super easy cream cheese "frosting"
  • Add all ingredients to a bowl then, using a spoon, mash and mix together until smooth and creamy.
  • It is of course easier if the cream cheese, butter and coconut oil are at room temperature but not necessary. You just need to work at it a little harder and a little longer, but it will soften and mix together.

Number Of Ingredients 16

4 ounces cream cheese, softened
3 tablespoons sugar
2 tablespoons all-purpose flour
1 large egg, room temperature
1 cup semisweet chocolate chips, divided
3/4 cup sweetened shredded coconut
1/2 cup chopped pecans, toasted
BATTER:
1-1/2 cups all-purpose flour
1 cup packed brown sugar
1/4 cup baking cocoa
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1 cup brewed coffee, room temperature
1/3 cup canola oil
2 tablespoons cider vinegar

Steps:

  • Preheat oven to 350°. In a small bowl, beat cream cheese, sugar and flour until smooth. Beat in egg. Stir in 2/3 cup chocolate chips. In another bowl, toss coconut with pecans and remaining 1/3 cup chips., In a large bowl, whisk together the first 5 batter ingredients. In another bowl, whisk together coffee, oil and vinegar; add to dry ingredients, stirring just until moistened. , Fill paper-lined muffin cups half full with the batter. Place scant 1 tablespoon cream cheese mixture in the center of each. Top with about 1 tablespoon coconut mixture. , Bake until a toothpick inserted in the center comes out clean, 20-25 minutes. Cool 5 minutes before removing from pans to wire racks to cool. Serve warm.

A fun Recipe for the family or just those that wan't a quick Muffin Hit :) This one uses White Chocolate and Raspberries mmm.. You could replace the chocolate and raspberries with Apple and Cinnamon. Or better still use your imagination. I have put a video to the recipe on my youtube channel StephenOwensTV for those that need a visual guide. But this really is the easiest Recipe to follow :)

6 -8 raspberries
1 tablespoon milk
1 tablespoon vegetable oil

Steps:

  • It really is this simple.
  • Mix thoroughly all the ingredients in a Mug and microwave for 2 minutes.
  • And Viola you have a Delicious "Muffin in a Mug" in a few minutes.
  • Make this with the Kids and let their imaginations run wild.
  • Be careful to balance the dry and wet ingredients to the same volume as above.
