4 boneless skinless chicken breast halves (6 ounces each)
1 tablespoon canola oil
1 cup apple juice
1 teaspoon lemon juice
1/4 to 1/2 teaspoon dried rosemary, crushed
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon cornstarch
1/2 cup heavy whipping cream
1 tablespoon minced fresh parsley
Hot cooked rice

Steps:

  • In a large skillet, brown the chicken in oil over medium heat for 4 minutes on each side. Combine the apple juice, lemon juice, rosemary, salt and pepper; pour over chicken. Reduce heat; cover and simmer for 10 minutes or until a thermometer reads 170°. Remove chicken and keep warm. , Combine cornstarch and cream until smooth; gradually stir into cooking liquid in skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Add parsley. Return chicken to skillet and heat through. Serve with rice.

6 (about 1.5 pounds, total) boneless skinless chicken thighs
¼ cup all purpose flour
½ teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon Italian Seasoning
1 teaspoon dried parsley
Salt and fresh ground pepper, (to taste)
1 ½ tablespoons vegetable oil
¾ cup low sodium chicken broth
4 ounces cream cheese, (cubed, room temperature)
Chopped fresh parsley, (for garnish)
cooked and diced bacon, (for garnish)

Steps:

  • Pat dry the chicken.
  • In a small mixing bowl combine flour, garlic powder, onion powder, italian seasoning, parsley, salt, and pepper.
  • Coat chicken with the flour mixture.
  • Heat oil in a large, 12-inch skillet set over medium heat.
  • Add chicken to the hot oil and cook for 5 minutes; flip over and continue to cook for 6 to 7 minutes, or until cooked through.
  • Remove chicken from skillet.
  • Set skillet back over medium heat and stir in the chicken broth; mix and stir, scraping up all the browned bits from the bottom of the pan.
  • Add the cream cheese; cook and whisk for 2 to 3 minutes, or until cream cheese is melted and sauce is thickened.
  • Return chicken to the skillet; turn to coat and continue to cook for 2 minutes, or until heated through.
  • Garnish with parsley and bacon.
  • Serve.

Rustic Chicken with Apples and Bacon image

A deliciously different chicken dish that is easy enough for weeknights, but also special enough for company. You can use any chicken with this one. If you prefer boneless chicken and you want to speed up the dish, simply cut them in small pieces, brown first, then simmer in the sauce to finish cooking.

6 chicken thighs (bone-in/skin on)
2 Tbsp. vegetable oil (or canola or other neutral oil)
2 slices bacon (diced (applewood smoked is nice!))
1/2 cup onion (diced, about 1/2 medium onion)
1/4 cup white wine
3/4 cup apple juice (or cider)
3/4 cup chicken stock
2 cups apples (thinly sliced, about 2 un-peeled apples, cored, quartered and sliced)
1/2 tsp. fresh thyme leaves (or 1/4 tsp. dried thyme or Herbes de Provence)
1/4 cup whipping cream
1/2 tsp. dijon mustard
1 Tbsp. cornstarch (mixed with 1 Tbsp. wateror mix with reserved pan drippings for a bit of extra flavour)
Salt and freshly ground pepper

Steps:

  • Preheat oven to 375° F. and line a baking sheet with foil (for easy cleanup!). Set aside.
  • In a large skillet, heat vegetable oil over medium-high heat. Dry chicken thighs well and sprinkle skin with salt and pepper. Once oil is hot, place thighs, skin side down in to the oil and allow to cook until golden brown. Flip and cook on the other side for a few minutes. Remove chicken to the prepared baking sheet and place in to the pre-heated oven for about 20 minutes. (*Watch skin as chicken cooks in the oven and cover loosely with a piece of foil if it starts to brown too much).
  • Meanwhile, remove the oil and drippings from the pan and discard. Cook the bacon in the same skillet over medium-high heat until starting to brown. Add the onions and cook until the bacon is crisp and the onions are lightly browned. Add the white wine and allow to cook until the alcohol smell burns off (1-2 minutes). Add the apple juice, chicken stock, apples and thyme. Bring to a boil, then immediately reduce heat to medium-low and allow to simmer until apples soften. Add the cream and dijon to the sauce and stir to combine. Add a bit of the cornstarch/water mixture a bit at a time until sauce thickens to your liking. Taste and add salt and pepper, to taste.
  • Remove chicken from oven and check for doneness (if you have a thermometer, should be about 165° F.). Otherwise, cut in to one and check. Juices should run clear and the meat should not be pink near the bone. If necessary, return to the oven for longer while you keep your sauce warm over low heat. Place chicken on a large serving plate. Spoon sauce around chicken and serve. This chicken is nice with mashed potatoes or rice.

8 bone-in chicken thighs (2 to 2 1/2 pounds)
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
2 teaspoons fresh thyme leaves
1 bunch leeks (white and green parts), halved lengthwise and sliced
1/4 cup dry white wine
1 cup low-sodium chicken broth
1/2 cup apple cider
2 tablespoons unsalted butter, at room temperature
2 tablespoons all-purpose flour
2 apples, such as Golden Delicious, chopped

Steps:

  • Preheat the oven to 425 degree F. Sprinkle the chicken generously with salt and pepper. Heat the oil in a large, deep ovenproof skillet over medium-high heat. Place the chicken in the skillet skin-side down and cook, flipping once, until golden on both sides. Transfer to a plate.
  • Reduce the heat to medium, add the thyme and leeks to the skillet and cook, stirring occasionally, until softened, about 4 minutes. Pour in the wine and use a wooden spoon to scrape up any browned bits from the bottom. Cook until the skillet is nearly dry. Stir in the broth, apple cider and a pinch each of salt and pepper and bring to a boil.
  • Use a fork to mash the butter and flour together in a small bowl until smooth. Whisk the butter-flour mixture into the skillet until dissolved. Stir in the apples and remove from the heat. Nestle the chicken skin-side up in the skillet along with any collected juices from the plate. Bake until the chicken is cooked through, about 25 minutes.

8 medium bone-in, skin-on chicken thighs (2 1/4 pounds)
Kosher salt and freshly ground black pepper
Good olive oil
2 cups halved and thinly sliced yellow onions (2 onions)
2 tablespoons dry white wine
8 ounces creme fraiche
1 tablespoon good Dijon mustard
1 teaspoon whole-grain mustard
1 tablespoon chopped fresh parsley

Steps:

  • Place the chicken thighs on a cutting board, skin side up, and pat them dry with paper towels. Sprinkle the chicken with 1 1/2 teaspoons salt and 3/4 teaspoon pepper. Turn them over and sprinkle them with one more teaspoon of salt.
  • Heat 1 tablespoon olive oil in a large (11 to 12-inch) cast-iron skillet over medium heat. When the oil is hot, place the chicken in the pan in one layer, skin side down. Cook over medium heat for 15 minutes without moving, until the skin is golden brown. (If the skin gets too dark, turn the heat to medium low.) Turn the chicken pieces with tongs, add the onions to the pan, including under the chicken, and cook over medium heat for 15 minutes, stirring the onions occasionally, until the thighs are cooked to 155 to 160 degrees and the onions are browned. Transfer the chicken (not the onions) to a plate and allow to rest uncovered while you make the sauce. If the onions aren't browned, cook them for another minute.
  • Add the wine, creme fraiche, Dijon mustard, whole-grain mustard, and 1 teaspoon salt to the skillet and stir over medium heat for one minute. Return the chicken, skin side up, and the juices to the skillet, sprinkle with parsley, and serve hot.

1 medium onion, sliced

½ cup chicken stock

2 medium apples, sliced
¼ cup heavy cream
1 tablespoon cornstarch

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Season both sides of the chicken thighs with salt and pepper.
  • Heat oil in a deep oven-proof skillet or Dutch oven over medium-high heat. Add chicken thighs to the hot oil and cook until browned on both sides, about 4 minutes per side. Transfer chicken to a plate and keep warm.
  • Add sliced onions to the skillet and saute until they just start to brown, about 3 minutes. Pour in apple cider and chicken stock, scraping the bottom of the pan to loosen any browned bits. Stir in thyme and salt. Simmer until the onions are soft, 4 to 5 minutes. Turn off the heat.
  • Add chicken back to the skillet and spoon some sauce over the top. Arrange sliced apples around the chicken. Cover the skillet with a lid or aluminum foil.

1 large onion, sliced

  • Preheat the oven to 400 degrees F (200 degrees C). Spray the top and bottom parts of a broiler pan with cooking spray.

4 boneless skinless chicken breasts
1 apple, cored and sliced
1/4 cup butter, real butter gives more flavor
1/2 cup heavy cream or 1/2 cup sour cream
1/2 cup white wine or 1/2 cup apple juice
1 teaspoon thyme

Steps:

  • Pan fry chicken in half of the butter just until no longer pink in the middle, turning once to ensure both sides are browned.
  • Remove chicken from pan and keep in a warm place or cover with foil.
  • Core and slice apples as desired. I like to use my apple slicer- looks like a wagon wheel with handles- and then slice each lengthwise to make them thinner. To peel or not to peel- hehehehe- up to you. Likewise, red or green- the choice is yours. I like peel on and red for color!
  • Add the rest of the butter, apples and thyme and fry until apples are as crisp or tender as you like.
  • Pour apples over chicken and keep warm.
  • Deglaze the pan with wine, cider or juice scraping all the yummy bits off the bottom.
  • Add the cream- could use reduced fat sour cream or reduced fat or nonfat yogurt to reduce fat/calories. Yogurt will and a nice 'tang' to the sauce.
  • Cook until slightly thickened.
  • Return the chicken and apple mixture to the pan to make sure apples and chicken are nice and warm.
  • When you are satisfied with the temperature of the dish, serve and enjoy!
  • Experiment with your favorite herbs and seasonings- I have not tried this but I think a pinch of cinnamon might be really yummy here or maybe some nutmeg -- hmm --.
