CREAMY ITALIAN CHICKEN PASTA



Creamy Italian Chicken Pasta image

This Italian Chicken Pasta is a pasta lovers dream! With a rich and creamy red sauce nestling penne pasta and tender pan seared chicken breast, it is easy to see why this is a family favorite!

Number Of Ingredients 12

1 lb chicken breast
2 tbsp olive oil
1/2 tsp garlic powder
2 tsp Italian seasoning
1 tsp salt
1/2 tsp pepper
5 garlic cloves (minced)
28 oz crushed tomatoes
1 cups cream
1 cup Romano cheese (grated)
4 oz fresh spinach
16 oz penne pasta

Steps:

  • In a large skillet, on med-high heat, heat 1 tbsp olive oil until hot. Season chicken with half of the Italian Seasoning, salt, and pepper. Cook 1-2 minutes on each side to sear, then cover, reduce heat to low and continue cooking until cooked through. Remove chicken from the pan and keep chicken warm.
  • Add the remaining 1 tbsp olive oil to the skillet over medium high heat, garlic, and remaining Italian seasoning. Flash cook the garlic, about 1 minute, and then add crushed tomatoes.
  • Add heavy cream and bring to a simmer. Add shredded Parmesan cheese then immediately reduce to low heat and stir continuously, until the cheese melts and the sauce is smooth and stir in the spinach giving it 2-3 minutes to wilt. Remove from heat and toss pasta with the sauce.
  • Slice chicken into 1/2 inch strips and top pasta with chicken, OR cut the chicken into cubes and stir into the pasta. Garnish with additional parmesan and/or fresh basil. Enjoy!

½ teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon Italian seasoning
½ teaspoon white pepper
½ teaspoon salt (or to taste)
1 pound chicken breasts (boneless and skinless, cut into long strips)
4 tablespoon butter (unsalted, divided)
2 cups heavy cream
12 ounce spaghetti (or linguini)
1 tablespoon fresh parsley (chopped)

Steps:

  • Season Chicken: In a small bowl combine together the garlic powder, onion powder, Italian seasoning, white pepper, and salt.
  • Cook Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions. Drain and set aside.
  • Cook Chicken: Melt 2 tbsp of the butter in a large skillet over medium heat. Add the chicken pieces, season with half the spice mixture and cook until brown, about 3 minutes. Flip the chicken over, season with remaining spices and cook for another 2 to 3 minutes, until it starts to brown.
  • Simmer: Add the remaining 2 tbsp of butter, the 2 cups of heavy cream, scrape the bottom of the pan a bit then and bring to a boil. Lower the heat to low and simmer until the sauce thickens a bit, 7 to 8 minutes.
  • Finish and Serve: Serve over cooked pasta, garnished with parsley.

4 cups water
2 cups uncooked jasmine rice
20 ounces thick-cut bacon, chopped
8 skinless, boneless chicken breast halves
½ teaspoon garlic powder, or to taste
½ teaspoon onion powder, or to taste
½ teaspoon ground nutmeg, or to taste
salt and ground black pepper to taste
½ cup butter
3 cups heavy whipping cream
½ (10.75 ounce) can condensed cream of mushroom soup
½ (10.75 ounce) can condensed cream of chicken soup

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, 20 to 25 minutes.
  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, about 10 minutes. Drain bacon on paper towels; reserve bacon drippings.
  • Season chicken breasts with garlic powder, onion powder, nutmeg, salt, and black pepper.
  • Melt butter in a large skillet over medium-high heat. Working in batches, cook chicken breasts in hot butter, turning once, until no longer pink in the center and the juices run clear, 10 to 12 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a cutting board and cut chicken breasts into small pieces. Reserve pan drippings.
  • Bring heavy cream, cream of mushroom soup, and cream of chicken soup to a simmer in a large saucepan. Stir bacon, reserved bacon drippings, and reserved chicken drippings into cream mixture.
  • Spread rice in a thick layer in the bottom of a 9x13-inch casserole dish. Spread chicken over rice and pour soup mixture over chicken. Cover dish with aluminum foil.
  • Bake casserole in the preheated oven until heated through and bubbling, 10 to 15 minutes.

4 cups egg noodles, uncooked

Steps:

  • Heat oil in large skillet on medium-high heat. Add chicken and onions; cook and stir 5 to 7 min. or until chicken is done.
  • Add broth, mushrooms, Worcestershire sauce and noodles; stir. Bring to boil; cover. Simmer on medium-low heat 10 to 12 min. or until noodles are tender and only a small amount of liquid remains. Stir in peppers; cook, uncovered, 2 min., stirring occasionally. Remove from heat.
  • Stir in sour cream.
