2 tablespoons unsalted butter
2 cups chopped leeks, white and light green parts (2 leeks)
1 cup chopped yellow onion
4 cups chicken stock, preferably homemade
5 cups freshly shelled peas or 2 (10-ounce) packages frozen peas
2/3 cup chopped fresh mint leaves, loosely packed
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup creme fraiche
1/2 cup freshly chopped chives
Garlic croutons, for serving

Steps:

  • Heat the butter in a large saucepan, add the leeks and onion, and cook over medium-low heat for 5 to 10 minutes, until the onion is tender. Add the chicken stock, increase the heat to high, and bring to a boil. Add the peas and cook for 3 to 5 minutes, until the peas are tender. (Frozen peas will take only 3 minutes.) Off the heat, add the mint, salt, and pepper.
  • *Puree the soup in batches: place 1 cup of soup in a blender, place the lid on top, and puree on low speed. With the blender still running, open the venthole in the lid and slowly add more soup until the blender is three-quarters full. Pour the soup into a large bowl and repeat until all the soup is pureed. Whisk in the creme fraiche and chives and taste for seasoning. Serve hot with garlic croutons.

Earlier, I had posted Recipe #285307 after watching an episode of Ina Garten's show on the FoodNetwork. Now, I have finally tried the Fresh Pea Soup from that airing and found that I love it, as well. I prepared this with frozen peas, and while the original recipe did call for mint, I didn't have any on hand and omitted it. Pea soup may make some people's heads spin, but this is so good. Pairing with the flavorful Roasted Red Pepper Sandwich would be an incredible meal.

2 cups cubed chicken breast (about 12 ounces)
1 teaspoon coarse salt, divided, plus more to taste
1/2 teaspoon freshly ground black pepper, divided, plus more to taste
1 tablespoon unsalted butter
2 tablespoons olive oil, divided
2 medium carrots, peeled and diced
2 stalks celery, diced
1 medium yellow onion, chopped
1 large bell pepper (any color), diced
1 teaspoon chopped fresh rosemary
2 large cloves garlic, minced
2 cups dried green split peas, rinsed under cold water
8 cups low-sodium chicken broth
2 tablespoons minced chives

Steps:

  • Season the chicken all over with 1/2 teaspoon salt and 1/4 teaspoon pepper. In a large Dutch oven, melt the butter with 1 tablespoon of the olive oil over medium-high heat. Add the chicken and brown on all sides, about 5 minutes. Using a slotted spoon, transfer the chicken to a plate.
  • Add the remaining oil to the Dutch oven and reduce the heat to medium. Add the carrots, celery, onion, and bell pepper. Cook until the onions begin to soften, about 5 minutes.
  • Stir in the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper, along with the rosemary, garlic, split peas, and broth. Bring the mixture to a boil. Reduce the heat to medium-low, cover the pot, and simmer until the peas are tender, about 20 minutes.
  • Transfer about half of the soup to a food processor or blender, and pulse until smooth. Return the pureed soup to the pot, stir in the chicken (along with all of its juices from the plate), and cook for 5 more minutes to make sure the chicken is heated and cooked all the way through. Season to taste with additional salt and pepper.
  • Divide the soup among bowls, garnish with chives, and serve hot.

2 3-pound chickens, cut up
2 onions, peeled and quartered
2 celery stalks, cut into 2-inch pieces
2 carrots, cut into 2-inch pieces
1 leek, washed and cut up
2 bay leaves
Parsley sprigs
Several sprigs fresh herbs, such as thyme or rosemary
10 peppercorns
4 quarts water

Steps:

  • Put all ingredients in a large stockpot. Bring slowly to a boil, skimming foam often. Reduce heat and simmer for 4 to 5 hours, skimming occasionally. Keep flame very low, and do not allow stock to boil.
  • Strain stock through a fine mesh strainer lined with cheesecloth. Discard solids. Refrigerate overnight and remove fat.
  • For a more concentrated flavor, reduce as needed.

SPRING PEA SOUP

Want a tasty, textured pea soup that tastes like springtime? You have to start in the freezer section of the supermarket to get the best results. I like frozen peas to build the base of the soup and then enrich it, last minute, with some fresh peas. Lots of people add bacon or Parmesan to garnish, and that's all fine to me, but I largely prefer the crunch of fresh peas or pea tops (a true sign of spring) and a dollop of sour cream. Use whatever peas are at the supermarket, sugar snap or snow peas.

2 tablespoons extra-virgin olive oil
6 scallions, minced
Kosher salt and freshly ground black pepper
Two 10-ounce packages frozen peas, thawed
2 cups chicken stock
1/2 cup sour cream
2 teaspoons honey
1 cup sugar snap or snow peas, cut crosswise into 1/2-inch slices
Leaves picked from 6 to 8 stems fresh basil

Steps:

  • In a large, heavy-bottomed pot, heat the oil over medium heat. Add the scallions and a generous pinch of salt and pepper. Cook until the scallions are tender, 2 to 3 minutes, then add the peas, stock and 1 cup of water. Bring to boil, then simmer over medium heat and cook for about 5 minutes to allow the peas to soften further.
  • Using a jar blender, carefully puree the soup until smooth (see Cook's Note). Pour the soup back into the pot, then add the sour cream and honey, and gently warm for 1 to 2 minutes. Taste for seasoning. Garnish the bottom of each serving bowl with the fresh pea slices and basil leaves. Ladle the soup on top and serve.

4 bone-in, skin-on chicken thighs
Coarse salt and ground pepper
1 large yellow onion, halved and thinly sliced
3 teaspoons minced garlic
3/4 teaspoon ground cumin
3/4 teaspoon ground coriander
1/4 teaspoon ground cinnamon
2 medium carrots, cut into 1/4-inch-thick slices
6 cups low-sodium chicken broth
1 can (15 ounces) chickpeas, rinsed and drained
Zest and juice of 1 lemon
2 tablespoons finely chopped fresh cilantro leaves

Steps:

  • In a large Dutch oven or heavy pot, heat oil over medium-high. Season chicken with salt and pepper and cook, skin side down, until skin is browned and crisp, about 6 minutes. Flip chicken and cook until browned, 6 minutes. Transfer chicken to a plate.
  • Pour off all but 1 tablespoon fat from pot. Add onion and cook, stirring occasionally, until soft, about 4 minutes. Add 2 teaspoons garlic and spices; cook, stirring, until fragrant, about 1 minute. Stir in carrots and return chicken to pot. Stir in broth.
  • Bring to a boil. Reduce to a medium simmer, partially cover, and cook until chicken is falling off the bone, 50 minutes.
  • Remove chicken from soup. When cool enough to handle, tear chicken into large pieces, discarding skin and bones. Return meat to pot. Add chickpeas and season with salt, pepper, and lemon juice. In a small bowl, stir together 1 teaspoon garlic, lemon zest, and cilantro; sprinkle over soup before serving.

7 cups water
1 large onion, halved
3 stalks celery

Steps:

  • Place the chicken in a large pot over high heat. Add water to cover and bring to a boil, then reduce heat to medium low and simmer for 1 hour.
  • Remove chicken from pot. Leave water in pot. Cool chicken. Remove skin and bones from meat. Return bones and skin to pot. Add onions, carrots, celery, bay leaf, ginger, and salt. Continue simmering for 3 to 4 hours.
  • Strain and cool the stock, uncovered.
  • Use the meat for soups, salads, sandwiches, or other dishes where cooked chicken is needed. After stock has been defatted, use or freeze immediately. I freeze the stock in one-cup amounts and use instead of water for cooking rice or vegetables or making gravy.

This is a great alternative to standard chicken noodle soup. It is vitamin and protein-packed thanks to the chick peas and spinach, and is a wonderful way to use up leftover rotisserie chicken. If you do not have chick peas handy, you can substitute other white beans such as cannelini beans or great northern beans. You can also use kale or other available greens instead of the spinach, and make it more Mediterranean style by adding a can of diced tomatoes with garlic, basil and oregano. You can brighten it up with some fresh basil and/or sherry vinegar added at the end if you like. This recipe makes quite a bit but it freezes very well, so I make a big batch and immediately freeze 1/2 of it for later. It can all be done in one pot!

Steps:

  • First, remove the leftover chicken from the carcass, discard the skin, and shred into small pieces. Set aside. Heat oil in a large stockpot or dutch oven. Then, remove the sausage from their casing and brown in the oil in large pot, crumbling it into small pieces. While that is browning, chop the onion, celery, carrots, and garlic and add to the sausage to sweat. Add the crushed red pepper, basil, marjoram, and oregano and cook until sausage is done and vegetables are softened. Add the chicken pieces and saute. Deglaze the pan with the wine, scraping any browned bit off the bottom of the pot. Add all of the chicken stock, reserving 1/2 cup, and the bay leaf, and simmer uncovered for 10 minutes. Take 1 can of the chick peas (garbanzo beans) and puree in the blender with the reserved chicken stock.
