Steps:
- Marinate the chicken in all the ingredients from chilli powder to Worcestershire sauce and 3 tbsp of oil for 4 hrs (or over night in fridge). , Heat a nonstick pan with oil and saute the chopped onions for a 1 minute and then add the chopped green, yellow and red capsicum and saute for a few minutes. , Add salt and white pepper as required. Now add the marinated chicken and cook till done. Serve.

CHICKEN STIR-FRY WITH MIXED PEPPERS
I used green peppers only for this stir-fry. Try to use a mix of hot and sweet peppers, and feel free to use red, yellow or orange ones if you want to introduce some color. The chicken is "velveted" before stir-frying; a good name for this technique as the texture of the chicken remains velvety and moist after stir-frying.

- In a large bowl stir together the egg white, cornstarch, 1 1/2 teaspoons of the rice wine or sherry, salt to taste and 1 1/2 teaspoons water. When you can no longer see any cornstarch add the chicken and stir together until coated. Cover the bowl and place in the refrigerator for 30 minutes.
- Combine the remaining rice wine or sherry, the hoisin sauce, soy sauce, and sugar in a small bowl and set it near your wok.
- Fill a medium-size saucepan with water and bring to a boil. Add 1 tablespoon of the oil and turn the heat down so that the water is at a bare simmer. Carefully add the chicken to the water, stirring so that the pieces don't clump. Cook until the chicken turns opaque on the surface but is not cooked through, about 1 minute. Drain in a colander set over a bowl.
- Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Add the remaining oil by pouring it down the sides of the pan and swirling the pan, then add the garlic, ginger and chile and stir-fry for no more than 10 seconds. Add the peppers and stir-fry for 1 minute. Add the chicken, cashews and hoisin sauce mixture and salt to taste. Stir-fry for 1 to 2 minutes, until the chicken is cooked through, and serve with grains or noodles.

- In a large skillet, stir-fry peppers and onion in 2 tablespoons oil over medium-high heat until crisp-tender, 5-7 minutes. Add garlic; cook 1 minute longer. Remove and keep warm. In the same skillet, stir-fry chicken and Cajun seasoning in remaining oil until no longer pink, 7-9 minutes., In a small bowl, combine the brown sugar, cornstarch, water, lemon juice, mustard, soy sauce and Worcestershire sauce; pour over chicken. - Place chicken in resealable plastic bag. Add dressing; seal bag. Turn bag over several times to evenly coat chicken with dressing. Refrigerate at least 30 min. or up to 1 hour to marinate.
- Cook bacon in large skillet on medium heat until crisp. Drain fat from skillet; set bacon aside. Remove chicken from marinade; discard marinade. Steps:
- 1. Rinse, dry and chop broccoli florets them place in bowl and set aside.
- 2. Rinse, dry and chop bell peppers (I usually rinse after I've chopped them, to get out extra unwanted seeds.) Then place in separate bowl.
- 3. Then, chop of your onion (if you avoid cutting the core your eyes will not water!) Set onions aside in separate bowl or leave on cutting board, however you prefer.
- 4. Next, cut your chicken into cubes and place on plate or in bowl; spoon two-three tablespoons of pineapple juice over chicken to marinate, gives great flavor!
- 5. Put broccoli florets, pineapple chunks and onions in cooking pan or Wok( I used the Wok.) Mix and flip occasionally; cooking until onions (or most onions) are tender and bendy and fork goes through broccoli.
- 6. Then, add in bell peppers and cook until tender, mixing and flipping occasionally. Spoon in two-three more tablespoons of pineapple juice over what is in Wok.
- 7. Once ready add your chicken chunks, stir frying with the other ingredients. Throw in some soy sauce and cook for two minutes, then add sesame oil and cook for an additional ten minutes.
- 8. Chicken will start to brown so make sure to flip and mix occasionally to brown other pieces of the chicken. If desired, add a little more pineapple juice and mix. Once all chicken is browned cut at least three to four pieces of chicken to check if meat is white. When pieces are white you're good to go!
- 9. Serve over hot white or brown rice!
