2 chicken breasts, thinly sliced
3 cloves garlic, minced
6 strips bacon, cooked, chopped
5 oz spinach
2 teaspoons salt
2 teaspoons pepper
2 cups heavy cream
1 ¼ cups rotini pasta, cooked
1 cup parmesan cheese
½ cup fresh parsley, chopped

Steps:

  • Heat oil in a large pot over high heat.
  • Cook the chicken until no pink is showing.
  • Add the garlic, bacon, spinach, salt, and pepper, cooking until spinach is wilted.
  • Pour in the cream and bring to a boil.
  • Add the pasta, cheese, and parsley, stirring until the pasta is coated evenly.
  • Enjoy!

1 pound short pasta, such as penne or gemelli
1 cup ricotta cheese
2 tablespoons chopped fresh parsley
Zest of 1 lemon
7 tablespoons butter
One 10-ounce container mushrooms, sliced
Kosher salt and freshly ground black pepper
One 8-ounce bag fresh spinach
2 cloves garlic, minced
1 cup dry white wine or low-sodium vegetable broth
1 cup half-and-half
1/2 cup heavy cream
Low-sodium vegetable broth, as needed, for thinning
1 cup grated Parmesan
3/4 cup panko breadcrumbs

Steps:

  • Bring a large pot of water to a boil. Cook the pasta in the boiling water, draining it about 2 minutes before the time on the package. It should still be a bit firm. Rinse it in cold water to stop the cooking process and set aside.
  • Mix the ricotta with the parsley and lemon zest in a small bowl and set aside.
  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon of the butter.
  • In a large deep skillet over medium-high heat, melt 2 tablespoons of butter. Add the mushrooms and season with salt and pepper. Cook until the mushrooms have given up their liquid, 5 to 6 minutes. Add the spinach and garlic and cook, stirring frequently, until the spinach has wilted. Remove the vegetables and set aside, leaving any liquid in the skillet.
  • Add 2 tablespoons of butter to the skillet. Pour in the wine and let it bubble up and reduce for 1 1/2 to 2 minutes. Add the half-and-half and cream, season with salt and pepper and cook, whisking, until it's all combined. If it gets too thick as it cooks, you can thin it with a little vegetable broth. When the sauce looks good, remove it from the heat and stir in 3/4 cup of the Parmesan.
  • Melt the remaining 2 tablespoons butter in a small pan. Remove from the heat and stir in the breadcrumbs and remaining 1/4 cup Parmesan.
  • In the buttered baking dish, stir together the pasta, vegetables and sauce. (Add a splash of broth if needed). Add spoonfuls of the ricotta mixture, pushing them a bit into the pasta. Sprinkle the breadcrumb mixture over the top of the pasta. Cover and bake for 20 minutes. Uncover and cook until the top is brown and the mixture is bubbling, about 20 minutes more.

1 onion, chopped
3 cups chopped cooked chicken
1 (14 ounce) can Italian-style diced tomatoes
1 (10 ounce) package spinach
1 (8 ounce) package cream cheese, softened
1 ½ cups shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Heat olive oil in a skillet over medium-high heat. Saute onion in hot oil until tender, 5 to 7 minutes.
  • Mix penne pasta, onion, chicken, diced tomatoes, spinach, and cream cheese together in a baking dish until the cream cheese melts and coats everything. Sprinkle mozzarella cheese over the pasta mixture. Cover baking dish with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and continue baking until heated through and beginning to brown along the edges, about 15 minutes more.

1 teaspoon sugar
1/2 teaspoon garlic granules
1/4 teaspoon nutmeg
1 teaspoon onion salt
1/4 teaspoon cayenne pepper
2 tablespoons dried parsley
12 ounces rotini pasta, cooked according to package directions
2 tablespoons olive oil
1 -1 1/2 lb boneless skinless chicken breast, julienned
1/3 cup chicken stock
1/4 cup red pepper, diced
1/4 cup unsalted butter
1/2 teaspoon garlic
shrimp (optional)
1 small tomatoes, chopped
parmesan cheese, to taste
pepper, to taste

Steps:

  • Combine first six ingredients (sugar, garlic, nutmeg, onion salt, cayenne pepper and parsley) in medium bowl. Add sliced chicken breasts and toss to coat. Refrigerate until ready to cook.
  • Begin cooking pasta according to the package directions.
  • In large saute pan, add olive oil and heat until almost smoking.
  • Add seasoned chicken to olive oil and cook over medium heat until no longer pink.
  • Add chicken stock and diced red pepper. Cook until peppers are crisply tender.
  • Add unsalted butter and garlic and toss gently to coat. (Add shrimp here, if using).
  • Add cooked pasta and toss with chicken. Top with chopped fresh tomatoes and parmesan cheese. Add pepper to taste.
